6 ounces semisweet chocolate, such as Ghiradelli, chopped into 1/2-inch pieces
2 tablespoons unsalted butter, at room temperature
1/3 cup dark chocolate covered espresso beans
1 cup flour
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon fine sea salt
3/4 cup sugar
2 eggs, at room temperature
1 teaspoon pure vanilla extract
1 cup semisweet chocolate chips, such as Nestle Toll House

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 300 degrees F. Line 2 baking sheets with parchment paper or silicone mats. Set aside.
  • In a small bowl, combine the bittersweet chocolate and butter. Place the bowl over a pan of barely simmering water and stir occasionally until the chocolate has melted and the mixture is smooth.
  • In the bowl of a food processor, finely chop the chocolate covered espresso beans. In a medium bowl, whisk together the chopped espresso beans, flour, cocoa powder, baking powder and salt.
  • In another medium bowl, whisk together the sugar, eggs, 2 tablespoons water and vanilla extract. Gradually add the dry ingredients and stir until thick and smooth. Fold in the melted chocolate. Stir in the chocolate chips. Using a cookie or ice cream scoop, scoop level 1/4 cupfuls of the batter onto the prepared baking sheets. Bake until slightly puffed and the tops begin to crack, 18 to 20 minutes. Allow the cookies to cool completely on the baking sheets and serve.

Sable in French means "sandy" - these are a classic French cookie, made out of crumbly chocolate shortbread. To keep them nice and sandy, be extra careful not to overmix the dough. The hint of salt brightens the flavor and underlines the chocolate. For a special holiday treat, sandwich two of these together with a small scoop of peppermint ice cream.

3 ounces bittersweet chocolate, frozen for 10 minutes
1 1/4 cups all-purpose flour
1/3 cup Dutch-process cocoa powder
1/4 teaspoon baking soda
1/4 teaspoon fine sea salt
5 1/4 ounces (11 tablespoons) unsalted butter, softened
1 cup sugar
1 large egg yolk

Steps:

  • Grate the chilled chocolate with a fine grater or rasp and set aside.
  • Whisk together the flour, cocoa powder, baking soda and sea salt.
  • Beat the butter and sugar in a medium bowl with an electric mixer until just combined. Mix in the yolk. Add the dry ingredients to the butter and beat lightly together until just combined but still crumbly. Fold in grated chocolate with a spatula. Bring the dough together by lightly squeezing in your hands; but don't knead or overwork, as the secret to these cookies is their delicate, sandy texture.
  • Divide the dough in half. Lay half the dough on a long sheet of waxed paper and shape into a log along the width of the waxed paper, leaving some space at each end. Pull the paper over the top of the log. Grip the edge of the top piece of paper, and use a straight, firm edge, like a ruler or the edge of a pan, to press gently against the edge of the dough where the papers come together to create a solid, firm round log. Repeat with remaining dough and refrigerate for at least 1 hour. (To keep logs round store inside an empty paper towel roll.)
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Slice logs into 1/2-inch thick rounds with a sharp, thin knife. Divide rounds onto the prepared sheets, leaving about 1 inch between them, and refrigerate for 15 minutes.
  • Bake until cookies smell fragrant with a full cocoa aroma and set on the outside, about 12 to 14 minutes. Remove from the oven and let cool on the pans, about 5 minutes.
  • Transfer cookies to a rack to cool completely. Serve.
  • Busy baker's tips: Dough can be made and frozen for up to 2 weeks. Store baked cookies in an airtight container for up to 5 days. Baked cookies can be wrapped in plastic wrap, then aluminum foil and frozen for up to 2 weeks.
  • Cook's note: For super uniform cookies, place each sliced disk of dough in a muffin tin and bake. The cookies will be chewier, less sandy this way.

½ cup margarine, softened
1 egg
1 teaspoon vanilla extract
1 ¾ cups all-purpose flour

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). In the microwave or over a double boiler, melt chocolate stirring frequently until smooth. Remove from heat.
  • In a medium bowl, cream together the sugar and margarine until smooth. beat in the egg, melted chocolate and vanilla until well blended. Combine the flour, baking soda and salt; stir into the chocolate mixture alternately with the milk. Drop batter by heaping teaspoonfuls onto cookie sheets, about 1 inch apart.
  • Bake 8 to 10 minutes until cookies are puffy and slightly cracked on top. Let cool on wire racks.
  • Top cookies with Chocolate Butter-Cream Frosting (see recipe) and garnish with pecans.

1 ⅓ cups all-purpose flour
¼ cup unsweetened cocoa powder

Steps:

  • Line two cookie sheets with Reynolds® Parchment Paper; set aside.
  • Stir together flour, cocoa powder, and salt in a medium bowl; set aside. In a large bowl beat butter using an electric mixer on medium to high speed for 30 seconds. Add powdered sugar and hazelnut extract. Beat until combined, scraping sides of bowl occasionally. Beat in egg until combined. Beat in as much of the flour mixture as you can with the mixer. Using a wooden spoon, stir in any remaining flour mixture and the chocolate chips.
  • Cover and chill about 1 hour or until dough is easy to handle.
  • Preheat oven to 350 degrees F. Shape dough into 1-inch balls. Place balls 2 inches apart onto prepared cookie sheets. Place a sheet of parchment paper over the dough balls. Using the bottom of a glass, flatten balls into circles, about 1 1/2 inches in diameter. Remove top sheet of parchment paper; set aside.

These provocatively named cookies came to The Times in a 1999 Sunday Magazine article about Mrs. London's Bake Shop, a husband and wife owned bakery in Saratoga Springs, N.Y., known for their sweets. While the name suggests these cookies might veer into the too sweet and too rich category, they do not. Shiny and crackly on top while tender and deeply chocolaty in the center, they're like an ideal brownie in cookie form. They're kind of perfect. (One note: The recipe calls for bittersweet chocolate, but feel free to use semisweet or a combination of the two. Also, a sprinkle of flaky sea salt before baking would not be a bad idea.)

  • Meanwhile, in the bowl of an electric mixer, combine eggs and sugar and whip until the mixture is light in color and increases substantially in volume, about 10 minutes. This recipe came from my sister who is the best baker in my family. These cookies are the best if you like soft, doughy, sweet cookies. I have never had them with the nuts, but if you choose to include them, use only half of the chocolate chips (6oz). Having a big sweet tooth, I never understood why people would ever use UN-sweetened chocolate squares, so I tried it with semi-sweet and man were they too sweet with the frosting! I have also seen my sister use cocoa in lieu of choc. squares, but am not sure of the exact measurement. Note: I usually use 1-2 tubs of the pre-made regular vanilla frosting (not whipped), but I couldn't remember the size of the container..hence the two cups....

1 (12 ounce) package semi-sweet chocolate chips
1 1/2 cups flour
1/2 cup unsweetened baking cocoa
1 teaspoon baking soda
1 teaspoon salt
2/3 cup sugar
2/3 cup firmly packed brown sugar
3/4 cup butter (room temp.)
3 large eggs
1 teaspoon vanilla

Steps:

  • Melt chocolate chips; set aside to cool.
  • Mix the flour, cocoa, baking soda,& salt- set aside.
  • In a large bowl, combine sugar, brown sugar& butter.
  • Beat with mixer at speed 2 for 2 minutes.
  • Add eggs, one at a time, beating after each addition.
  • Add vanilla and beat for another 30 seconds.
  • Add melted chocoalte and beat on speed 1 until mixed thoroughly.
  • Add flour mixture, slowly, and beat- starting on speed 1 and working up to speed 3.
  • Drop by tablespoon (heaping) onto ungreased cookie sheet.
  • Bake for 10-12 minutes at 325°.
  • Allow cookies to cool on baking sheet for 5 minutes then transfer to a cooling rack to cool completely.

3/4 cup plus 3 tablespoons chocolate chips
1/4 cup brewed coffee
1/2 cup unsalted butter or margarine
3/4 cup white sugar
3/4 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup matzo cake meal
1/8 teaspoon salt
1/2 teaspoon kosher for Passover baking powder
1/2 teaspoon cinnamon
3 tablespoons finely ground dark coffee beans, preferably espresso

Steps:

  • Preheat oven to 325 degrees and line 2 cookie sheets with parchment paper.
  • Melt 1/2 cup of chocolate chips with coffee in a double boiler, or in metal bowl in pot of hot water, stirring until smooth. Set aside to cool slightly.
  • Cream together butter or margarine and sugars, beating until light. Mix in eggs, one at a time, then add vanilla. Fold in chocolate mixture.
  • Mix matzo cake meal, salt, baking powder, cinnamon and 2 tablespoons of ground coffee beans in bowl and stir into batter with 1/4 cup of chips. Let sit for an hour, covered.
  • Drop cookie dough by tablespoons onto cookie sheets, about 2 inches apart. Press remaining chips on top of cookie dough and sprinkle on ground coffee.
  • Bake for 15 minutes.
