From an "Annie's Natural" newsletter. Savory, simple little morsels that provide a lovely change of pace from the typical sugar-coated fare! Adapted from a recipe by Cait Jonson.

Yield 1 cup almonds, 6 serving(s)

Number Of Ingredients 5

1 cup whole almond
2 -3 tablespoons olive oil
1 garlic clove, peeled and crushed
1 teaspoon dried rosemary
sea salt, to taste

Steps:

  • Heat olive oil in a heavy-bottomed saucepan over medium-high heat.
  • Add other ingredients and saute, stirring often, until almonds are fragrant and lightly toasted.
  • May be served warm, or will keep stored in airtight container, for several days.

15 ounces raw almonds, skin on
1 1/2 tablespoons olive oil
1/2 teaspoon freshly ground sea salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon J&D original bacon salt
1 dash Accent seasoning (optional)

Steps:

  • Preheat oven to 325.
  • Place nuts in a medium size mixing bowl and drizzle oil over them.
  • Add seasonings. Flip a dozen or so times to coat well, then spread on a cookie sheet with rimmed edge.
  • Place in oven for approximately 20 - 30 minutes, stirring and turning over every 3-5 minutes for even browning and to prevent burning.
  • Remove from oven and and lay to rest on paper towels until cool. Be warned, nuts may seem warm to fingers, but still be too hot for the tongue! When cool, serve and enjoy. Store in a can, jar, or tightly sealed plastic bag.

Crisp Savory Almonds image

These make a great snack or appetizer. I love the mustard and cayenne! To blanch my almonds, I use Recipe #451094. The cooking time includes the 30 minutes of standing time in a "turned off" oven! Really only 25 minutes of actual cooking time.

2 egg whites
1 1/2 teaspoons Dijon mustard
1/8 teaspoon ground red pepper (cayenne)
1/8 teaspoon paprika
4 cups almonds, blanched, whole
2/3 cup parmesan cheese, grated
1/2 teaspoon salt

Steps:

  • Beat egg whites in a large bowl at high speed of an electric mixer until foamy. Add mustard, red pepper, and paprika; beat at low speed until well blended.
  • Stir in almonds; toss to coat evenly.
  • Combine Parmesan cheese and salt on a sheet of wax paper. Pour the almond mixture over the cheese mixture; toss gently to coat evenly. Spread almonds on a baking sheet lined with parchment paper.
  • Bake at 300 degrees for 25 minutes, stirring occasionally. Turn the oven off. Let the almonds stand in the oven for 30 minutes. Remove almonds from the oven, and let cool completely.
  • Store almonds in an airtight container.
