Corn Custard, recipe follows
1 to 2 leeks, green part only reserving the white for other uses, blanched and cut in-half lengthwise
2 carrots, peeled and sliced into 1/4-inch rounds
3 zucchini, sliced into 1/4-inch rounds
3 tomatoes, sliced into 1/4-inch rounds
1 eggplant, sliced into 1/4-inch rounds
3 yellow squash, sliced into 1/4-inch rounds
Roasted red peppers
Spinach leaves
4 cups raw corn, cut from the cob
8 eggs
4 cups cream
2 tablespoons butter
2 teaspoons sugar
1 teaspoons fresh thyme
1 tablespoon salt
1/2 teaspoon pepper

Steps:

  • Preheat the oven to 375 degrees F. Prepare 1 batch of corn custard and set aside. Dry roast all the vegetable rounds until wrinkly, but not too brown. Let cool. Meanwhile, spray 8 souffle dishes with pan coating. Line the edges of the dishes with the leeks horizontally. Arrange 3 to 4 carrot rounds on the bottom of each dish making a "flower." Follow layers in this order: zucchini, tomatoes, eggplant, yellow squash, and red peppers. Place the rounds in concentric circles fully covering the previous layer.
  • Ladle the corn custard over the entire timbale. Once the custard is up to the lip, cover with spinach leaves. Press the leaves lightly into the custard to coat.
  • Cover with foil and bake until the custards reach a temperature of 150 degrees F.
  • Put corn in a bowl. In a separate bowl, beat the eggs with the cream, just enough to blend and add to the corn. Add the remaining ingredients and blend. Pour over timbales and bake.

Number Of Ingredients 11

1 lb. ditalini pasta or other small pasta of your choice
2 zucchini, diced small
½ lb. chopped asparagus
a good sized handful of peas
6 or 8 cherry tomatoes quartered
¾ cup grated pecorino romano, ( or Parmigiano Reggiano) plus extra for breadcrumb mix and garnish
2 garlic cloves, grated
1 heaping tablespoon butter
1 cup good breadcrumbs
fresh basil and parsley
olive oil

Steps:

  • In a skillet drizzle 2 tablespoons of the olive oil, add 1 grated garlic clove and over medium heat, saute till golden then pour in the breadcrumbs stirring until lightly toasted, 3 to 5 minutes. remove from heat, let it cool then add ¼ cup each of parsley and around 2 tablespoons of grated cheese, then drizzle 2 more tablespoons of oil, toss and mix.
  • Brush a round bowl with olive oil, mine was 9 inches.
  • Press breadcrumb mixture along the sides and bottom of the bowl evenly. Set aside. ( you might have some mix leftover)
  • In a large skillet on high heat add a couple of tablespoons of olive oil and then toss in the zucchini until you see it crisp up a bit, then toss in the rest of the veggies, asparagus, peas and tomatoes along with the other grated garlic clove. Keep stirring and watching it only takes a few minutes, then set aside.
  • Boil your pasta according to package directions, don't overcook it then let it drain.
  • When drained, toss it into a different bowl and add the heaping tablespoon of butter and the ¾ cup of grated pecorino, stirring fast till it melts and gets "sticky".
  • Fold in all of the veggie mixture, some chopped parsley and basil, check taste for salt and pepper.
  • Spoon the finished pasta mixture into the breadcrumb lined bowl, evenly distribute it along the sides and bottom, pressing down lightly so it's nice and tightly packed in.
  • Let it rest for 15 minutes.
  • Un-mold it onto a nice platter and decorate with basil, parsley and a little more grated cheese.
  • Enjoy!

2QTS. tomato passata
2LBS. durum wheat annelletti pasta
2LBS. ground veal
1LB. primo sale cheese
12.5OZ. shelled peas
LB. ground pork
7OZ. cow's milk mozzarella
C. tomato paste
C. grated cheese
C. bread crumbs
Carrot
Onion
Celery
White wine
Vegetable broth
Bay leaves
Rosemary
Extravirgin olive oil
Pepper
Salt

Steps:

  • Finely mince 1 stalk of celery, 2 carrots, and 1/2 an onion and sauté them in a pan with plenty of oil for 8-10 minutes. Add the ground meats, 2 bay leaves, 1 sprig of rosemary, and 1/2 cup of white wine. Mix well, then add the tomato passata and tomato paste.
  • Add salt and pepper and cook, covered, on medium heat for 40-50 minutes, until the sauce thickens slightly. Remove the herbs at the end. Sauté 1/2 minced onion in a bit of oil, then add the peas and 2 ladlefuls of vegetable broth, and simmer for about 20 minutes.
  • Cook the annelletti pasta in salted boiling water for 5 minutes.
  • Strain and add the peas and ragù. Grease a 14-inch timbale mold with oil and sprinkle with breadcrumbs and plenty of grated cheese. Fill with 1/3 of the pasta, add a layer of the other cubed cheeses, and continue alternating the pasta and cheese until the ingredients are used up. Sprinkle with bread crumbs and bake at 300°F for about 25 minutes. Remove the timbale from the oven and wait 10 minutes before turning it over onto a serving plate. Garnish with basil leaves to taste.

1 lb ground beef
1 (10 ounce) package frozen mixed vegetables
4 cups tomato juice or 2 (16 ounce) cans diced tomatoes
4 cups water
2 tablespoons beef bouillon
1 teaspoon basil
1 teaspoon marjoram
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic
1/2 cup parmesan cheese (optional)

Steps:

  • In a large soup pot, brown ground beef. Drain.
  • Stir in remaining ingredients excepting pasta and cheese. Bring to a boil. Reduce heat and simmer 30 minutes.
  • Add Ditalini and simmer another 10 minutes.
  • Serve with Parmesan cheese if desired.

1 cup uncooked ditalini
2 tablespoons vegetable oil
1/3 cup white wine vinegar
2 tablespoons sugar
1 garlic clove, crushed
1 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 medium top quality vine-ripened tomatoes, cut in 1/2-inch cubes
1 small red onion, cut in 1/2-inch pieces
2 celery ribs, diced
1 cup frozen green pea, defrosted, drained
1/2 cup raisins
1/4 cup roasted sunflower seeds
1/2 cup mayonnaise

Steps:

  • Cook pasta in boiling salted water until tender. Drain in a colander then immerse in cold water until pasta is cool. Drain thoroughly and place in a bowl with the vegetable oil. Toss until pasta is coated evenly with the oil. Cover and refrigerate while preparing the vegetables.
  • Place tomatoes, red onion, and celery in a bowl with a tight-fitting lid. Whisk together vinegar, sugar, garlic, dry mustard, salt, and pepper. Pour over vegetables, cover bowl, and let marinate for several hours in the refrigerator.
  • Drain the marinated vegetables, reserving the liquid. Combine vegetables, cooked pasta, peas, raisins, and sunflower seeds in a large bowl.
  • Whisk the mayonnaise into the reserved marinade and pour over salad. Toss gently to mix. Cover and chill until ready to serve.
