DISCO FRIES (GRAVY MOZZARELLA CHEESE FRIES)

These Disco Fries are smothered with a homemade brown gravy and topped with melty, gooey mozzarella cheese. They are an indulgent late night snack that will have you licking every finger.

1 32 oz Bag Frozen French Fries ((I like traditional cut or steak cut))
8 Oz. Shredded Mozzarella (or cheddar) Cheese ((I actually used half of each))
3 Tbsp Flour
3 Tbsp. Butter
2 Cups Beef Broth or Stock ((you can also use vegetable or chicken))
1/4 Tsp Salt
1/4 Tsp Garlic Powder
1/4 Tsp Onion Powder
1/4 Tsp Mustard Powder (or Dijon)

Steps:

  • Bake your french fries according to the package directions. Make sure you lay your fries out evenly on your baking sheet so they crispy up nicely.If using homemade fries, bake them at 425°F or until your fries turn golden brown.
  • To make your gravy, add butter to a small sauce pan and melt over medium heat. When fully melted, add in your flour and whisk it together. Allow the flour to bubble up for a minute or so and then add in your broth. Whisk until all lumps are dissolved! Bring to a boil then turn down heat and allow to simmer until it thickens into a gravy. This should take about 5 minutes or so.
  • Once you have achieved your desired gravy consistency, mix in your garlic and onion powder, salt and mustard (you can add pepper if you like too) and remove from heat.
  • When fries are ready, remove from the oven and sprinkle your cheese(s) evenly over top. Place back in the oven until cheese is fully melted. Remove and pour as much gravy over top as you wish! Top with green onions and serve hot!

One 28-ounce bag frozen French fries
4 tablespoons unsalted butter
One 3-ounce package sliced country ham, cut into 1/2-inch dice
1/4 cup all-purpose flour
2 cups chicken stock
1 tablespoon coarse-ground Dijon mustard
1 tablespoon lemon juice
1/2 teaspoon freshly cracked black pepper
2 green onions, sliced
One 12-ounce container evaporated milk
One 8-ounce block white Cheddar cheese, shredded
1 cup shredded mozzarella cheese
2 tablespoons cornstarch

Steps:

  • For the fries: Prepare the French fries according to the package instructions.
  • For the country ham gravy: Place a large saute pan over medium-high heat. Add the butter and ham. Cook, stirring frequently until the ham is crispy and the butter just starts to brown, 6 to 8 minutes. Use a slotted spoon to remove the ham to a paper towel-lined plate.
  • Add the flour to the pan and whisk to form a smooth paste. Continue to whisk while pouring in the stock. Bring to a simmer and cook until thick enough to coat the back of a spoon, about 5 minutes. Whisk in the mustard, lemon juice and black pepper. Set aside in a warm area, until ready to serve.
  • For the white cheese sauce: Pour the milk into a small saucepot over medium heat and bring to a simmer. Add the Cheddar, mozzarella and cornstarch and whisk until the cheese melts and a thick sauce is formed, about 3 minutes. The sauce will thicken more as it cools.
  • Spread the fries onto a large serving platter. Generously pour the gravy and cheese sauce over the fries. Sprinkle with the crispy country ham bits and green onion. Serve with lots of napkins.

For the Gravy:
1/4 cup (2 ounces) unsalted butter
1/4 cup all-purpose flour
2 cloves garlic, minced
1 shallot, minced (about 1/4 cup)
2 teaspoons Worcestershire sauce
1 teaspoon dry sherry
1/4 teaspoon freshly ground black pepper
1/8 teaspoon kosher salt
For the Disco Fries:
1 (32-ounce) package frozen fries
8 ounces (2 cups) shredded mozzarella cheese

Steps:

  • Gather the ingredients. Preheat the oven to the temperature needed for the fries (typically 425 F), and place the rack in the center of the oven.
  • In a medium saucepan over medium heat, melt the butter. Add the flour, stirring constantly and cooking until golden brown, about 2 minutes.
  • While whisking, add the beef broth in a slow, steady stream to the roux , then add the minced shallots and garlic. Stirring regularly, cook the gravy for 15 to 20 minutes, or until it thickens to your desired consistency (it will thicken slightly as it rests).
  • Once the gravy is simmering, place the frozen fries in a single layer on a baking sheet and cook according to the package directions.
  • Add the Worcestershire sauce, sherry (if using), pepper, and salt when the gravy is nearly done. Stir well to incorporate. Remove the pan from the heat and let rest while the fries finish cooking.
  • Remove the fries from the oven and transfer them to a shallow oven-safe serving platter. Reduce the oven temperature to 350 F. Top the fries with the mozzarella cheese and bake for 5 minutes, or until the cheese is melted.
  • To serve, drizzle as much gravy as you like over the cheesy fries.

1 (28 ounce) package frozen steak-style French fries (waffle and shoe string cut also work great)
1 (15 ounce) jar Cheez Whiz (or your favorite packaged cheese sauce)
1 (10 ounce) jar prepared gravy (chicken or beef gravy)
salt, to taste
pepper, to taste

Steps:

  • Pre-heat oven to 450 degrees F.
  • Arrange steak fries in a single layer in a greased 15-in. x 10-in. baking sheet.
  • Salt and pepper as desired.
  • Bake for 15-20 minutes or until lightly browned. (Check the frozen fries' packaging for alternate baking directions).
  • About 5 minutes before the fries are finished baking, pour the gravy in a small pot and warm on the stove over medium heat, stirring frequently.
  • Empty the cheese sauce in a microwave-safe bowl and cover with a sheet of paper towel (to protect against splattering). Heat the sauce on high for 30 seconds, then stop and stir the sauce.
  • Repeat microwaving the cheese sauce on high for 30-second intervals for about 2 to 3 total minutes. (You want to heat it enough that it becomes easily pourable).
  • Take fries out of the oven and place on a large platter.
  • Pour gravy over the fries.
  • Then pour on the cheese sauce. Add as much cheese and gravy as you want -- some like their disco fries drier; others like them drowning.
