1 bone-in beef rib roast (4 to 6 pounds)
1 tablespoon olive oil
1 to 2 teaspoons coarsely ground pepper
HORSERADISH SAUCE:
1 cup sour cream
3 to 4 tablespoons prepared horseradish
1 teaspoon coarsely ground pepper
1/8 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 450°. Brush roast with oil; rub with pepper. Place roast, fat side up, on a rack in a shallow roasting pan. Bake, uncovered, 15 minutes. , Reduce heat to 325°. Bake 2-3/4 hours or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting with pan drippings every 30 minutes. , Let stand 10-15 minutes before slicing. Meanwhile, in a small bowl, combine the sauce ingredients. Serve with beef.

This is the ideal compliment for so many foods in addition to prime rib: roast beef, ham, pork loin, onion rings, and chicken strips. I add extra horseradish for my taste, as I love the flavor.

A friend and I had this at a fancy restaurant many many yrs ago...and she recreated it in her own kitchen...and pasted it on to me. It is sooo yummy!!! I know it sounds weird...but please try it...and of course, you can half or even quarter the recipe if you just don't know if you'll like it. :)

1 loaf French bread
2 tablespoons butter
1 (12 ounce) package monterey jack pepper cheese
2 lbs prime rib roast
1 (8 ounce) container French onion dip
1 medium onion
1 medium green pepper
1 (4 ounce) can mushrooms
2 tablespoons soy sauce
1 teaspoon Worcestershire sauce
1 tablespoon black pepper
1 (16 ounce) jug store bought au jus sauce
soy sauce
Worcestershire sauce
black pepper
cayenne pepper
onion soup mix

Steps:

  • In a large saucepan, mix together the Au Jus sauce, using all ingredients to taste. (I keep onion soup mix in an old spice jar to use as a seasoning) I start with 8 oz. of water, 2 teaspoons pepper, 1 tsp Worcestershire, 8 oz. Au Jus, 2 tsp soy sauce, 2 tbsp of onion soup mix and a dash of cayenne. Simmer.
  • In a skillet, melt butter then combine chopped green peppers, onions and mushrooms with black pepper. Add soy sauce and Worcestershire. Sauté on medium heat until veggies are tender crisp.
  • Slice the leftover prime rib so that it is at a 1/2 inch (or less) thickness, then set in the simmering Au Jus.
  • Cut French bread diagonally, toast pieces in toaster.
  • Spread french onion dip on both pieces (top and bottom).
  • Layer on prime rib from Au Jus.
  • Put sauteed mushroom, onion, green peppers on top of meat.
  • Cover with pepper jack cheese.
  • Broil sandwich open-faced for 2-3 minutes or until cheese is slightly golden.
  • Serve with small bowl of Au Jus for dipping.

  • In a small saucepan (not an iron pan!), whisk the egg yolks until they are smooth and have lightened a bit in colour.
  • Add the sugar, dry mustard and vinegar and whisk together until smooth and well combined.
  • Bring the mixture to a boil over medium heat, whisking constantly.
  • Lower the heat and simmer, whisking constantly, until the sauce thickens slightly.
  • Remove the pan from the heat.
  • Serve the mustard sauce either hot or cold. Store it in an airtight container in the refrigerator.

2 racks back ribs, membrane removed
1/2 cup Pork Rub, recipe follows
Olive oil
1/4 cup apple cider vinegar
2 tablespoons honey
1 red jalapeno, seeded and minced
1 tablespoon chopped fresh oregano leaves
Kosher salt
4 tablespoons brown sugar
4 tablespoons onion powder
4 tablespoons garlic powder
4 tablespoons dried thyme
4 tablespoons dried oregano
2 tablespoons mild paprika
2 tablespoons hot paprika
4 teaspoons cayenne
4 teaspoons ground coriander
2 teaspoons black pepper
2 teaspoons white pepper
2 tablespoons kosher salt

Steps:

  • Sprinkle the ribs all over with the rub and rub in well with your hands. Cover and refrigerate for 1 hour, up to overnight.
  • Make sure the racks of the grill are set so they are 6-inches above the fire. Preheat the grill to high. When the grill is hot, turn off 1 side, or push the coals to 1 side. Place the ribs, fattier side down, on the cooler side of the grill and close the cover. Cook until browned, about 20 minutes. Turn the ribs over and continue to cook until the bones wiggle easily when twisted, about 1 1/2 hours, turning every 20 minutes or so.
  • Remove from the grill and let rest for 10 minutes before slicing.
  • Make the Spicy Dipping Sauce: In a small bowl, combine the vinegar, honey, jalapeno, oregano, and salt and whisk well. Pour into a decorative bowl.
  • Slice the ribs into desired size and serve with the Spicy Dipping Sauce.
  • Mix all ingredients together and stir well.
