SOFT-COOKED DIPPING EGGS image

Why is it that in movies the characters are always eating soft-cooked eggs from an egg cup and dipping their toast into the yolk? Well, I don't know either, but they sure look good, don't they? Here is a recipe for the perfect soft-cooked egg. Photo source: choice.com.au

4 large eggs
4 slice bread
4 tsp butter
salt and pepper to taste

Steps:

  • 1. Place the eggs in a single layer in a deep saucepan with enough water to cover eggs at at least an inch.
  • 2. Bring water to a boil over high heat. Immediately remove pan from heat to stop boiling. Cover the saucepan and let eggs stand in water for 2 to 4 minutes until cooked as desired.
  • 3. Drain the water and immediately run cold water over the eggs to cool them a bit. Place each egg into an egg cup.
  • 4. Toast the bread and spread with butter. Cut toast into 1-inch strips.
  • 5. Crack the tops off eggs with a knife. Salt and pepper eggs as desired. Serve toast strips with eggs for dipping into soft yolks.

SCOTCH EGGS WITH MUSTARD SAUCE



Scotch Eggs with Mustard Sauce image

8 large eggs
2 tablespoons distilled white vinegar
1 pound bulk pork sausage
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh tarragon
Grapeseed or vegetable oil, for frying (about 4 cups)
1 cup all-purpose flour
Kosher salt and freshly ground pepper
1/4 cup milk
1 cup panko breadcrumbs
1/2 cup low-fat mayonnaise
3 tablespoons stone-ground mustard
Juice of 1 lemon

Steps:

  • Place 6 eggs in a medium saucepan and cover with cold water. Add the vinegar and bring to a boil, then remove from the heat, cover and set aside 4 minutes. Meanwhile, fill a bowl with ice water. Using a slotted spoon, remove the eggs and immediately plunge into the ice water to stop the cooking; let sit 2 minutes. Gently peel the eggs and set aside.
  • Combine the sausage, herbs and one of the remaining eggs in a stand mixer fitted with the paddle attachment. Mix on medium speed until combined, about 3 minutes. With moistened hands, mold the sausage mixture around the cooked eggs to completely cover.
  • Preheat the oven to 350 degrees F. Heat about 3 inches of grapeseed oil in a small high-sided saucepan over medium-high heat until a deep-fry thermometer reads 325 degrees F (or until a pinch of panko sizzles in the oil). Season the flour with 1/2 teaspoon each salt and pepper in a shallow dish. Beat the remaining egg with the milk in another shallow dish. Put the panko in a third shallow dish.
  • Roll the sausage-covered eggs in the seasoned flour, shaking off the excess. Transfer to the egg-milk mixture and turn to completely coat. Let the excess egg drip off, then roll in the panko.
  • Fry the eggs until golden brown, about 3 minutes. Remove to a baking sheet, transfer to the oven and bake until the sausage is cooked through, 10 to 12 minutes. Mix the mayonnaise, mustard and lemon juice in a small bowl. Serve with the Scotch eggs.

Steps:

  • Bring a pan of water to a simmer. Add 2 eggs, simmer for 2 mins if room temp, 3 mins if fridge-cold, then turn off heat. Cover the pan and leave for 2 mins more.
  • Meanwhile, toast 4 slices wholemeal bread and spread thinly with butter, then Marmite. To serve, cut into soldiers and dip into the egg, then a few mixed seeds.
