3/4 pound linguini
2 tablespoons olive oil
2 garlic cloves, minced
1 pound large shrimp, peeled and deveined
1/3 cup freshly squeezed lemon juice
1/2 cup white wine
1 bunch asparagus stalks, trimmed
Salt and freshly ground black pepper
1 cup freshly chopped flat-leaf parsley
1 container cherry tomatoes, halved

Steps:

  • Bring a large pot of water to a boil. Add the linguini and cook according to the directions on the box. Drain, reserving 1 cup of the cooking water.
  • Meanwhile, heat the olive oil in a large skillet over a medium-high flame. Add the garlic and saute for 1 minute. Add the shrimp and cook for 3 to 4 minutes, until the shrimp turn pink. Remove the shrimp from the pan and set aside. Add the lemon juice, white wine, and the reserved cup water to the skillet. Let simmer until the liquid is reduced by about half. Salt and saute the asparagus. Cut into 1-inch pieces. Return the shrimp to the pan and stir in the parsley. Add the drained linguini to the shrimp mixture, tossing to combine. Add asparagus and tomatoes. Season with salt and pepper, to taste.

1 tablespoon kosher salt plus 1 1/2 teaspoons
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes

Steps:

  • Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
  • Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
  • When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

2 tablespoons olive oil
6 tablespoons unsalted butter
2 lb large shrimp (peeled and deveined)
6 garlic cloves (minced)
1/4 cup fresh lemon juice
1/2 teaspoon salt (or to taste)
1/8 teaspoon black pepper
1 lb linguine pasta
1/4 cup fresh parsley (chopped)

Steps:

  • Begin by adding 1 pound of linguine pasta to a pot of salted boiling water. Cook al dente.
  • In the meantime, add 2 tablespoons of olive oil and 6 tablespoons of unsalted butter to a large pan. Bring the heat to medium-high.
  • Once you hear the butter sizzle, add 6 finely minced garlic cloves. Quickly stir for about 10-15 seconds.
  • Pick the heat up to high and add 2 pounds of large raw shrimp that have been peeled and deveined.
  • Mix the shrimp around for about 5-6 minutes or until they are fully cooked through. Season with 1/2 teaspoon salt and 1/8 teaspoon black pepper.
  • Then pour in 1/4 cup of fresh lemon juice. Stir for about 1 minute.
  • Drain your cooked pasta and add it to the pan. Turn the heat off and add 1/4 cup of freshly chopped parsley on top.

1 pound uncooked linguine
1 tablespoon butter

2 teaspoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

1 1/2 lbs fresh shrimp, in their shells (heads cut off)
4 -8 garlic cloves, peeled
8 ounces sun-dried tomatoes packed in oil, drained and sliced
2 cups hot chicken broth
1 (1 lb) box linguine
1 bunch fresh basil leaf, julienne-sliced
1 tablespoon olive oil
salt and pepper

Steps:

  • Remove shells from shrimp and place them in hot chicken broth.
  • Devein and clean shrimp.
  • Thinly slice garlic [in this dish, the more garlic, the better].
  • Cook pasta according to the directions on the box. Drain and set aside.
  • Note that it is important NOT to overcook the pasta!
  • In a large frying pan, heat the 1 T of olive oil on high heat. Saute the sliced garlic until it begins to brown slightly.
  • Add the shrimp and cook until they just begin to turn pink. Add salt and pepper to taste.
  • Add the sliced sun-dried tomatoes and cook over medium heat for a minute.
  • Add the linguine and stir until the whole mixture is thoroughly blended.
  • Strain chicken broth to remove shells and slowly add some to the noodles and shrimp to remove any browned stuff stuck to the bottom of the pan.
  • Remove the pan from the heat and let the dish stand for a few minutes to blend the flavors.
  • Sprinkle the sliced basil on top before serving.

Shrimp and Grits -- One of President Obama's Favorites image

In reading an interview Barack Obama gave several months ago, he said his favorite foods for dinner were thin-crust pizza from the Italian Fiesta Pizzeria in Chicago, chili (I've posted his own recipe here), and shrimp and grits. I found several recipes online and thought that this one, courtesy of AOL Food, looked especially good.

1 1/2 lbs medium shrimp, peeled, halved lengthwise, and deveined if you wish
1 lemon, juice of
hot pepper sauce, to taste
1 1/2 teaspoons salt (or more, to taste)
1 1/2 cups stone-ground grits (not instant or quick cooking)
6 slices bacon, thick slices, chopped
1 small onion, finely chopped
1/4 cup finely chopped green bell pepper
1 garlic clove, minced
1/2 cup thinly sliced scallion
2 tablespoons unbleached all-purpose flour
1 cup chicken stock
2 tablespoons unsalted butter
1 cup grated medium to sharp cheddar cheese
Tabasco sauce or other hot pepper sauce

Steps:

  • Combine the shrimp with the lemon juice and a few generous splashes of hot pepper sauce (or less, to taste). Let sit while you begin the grits and gravy.
  • Prepare the grits in a large heavy saucepan, first bringing 6 cups of water and 1 teaspoon of the salt to a boil. Whisk in the grits a few handfuls at a time. (They will bubble up initially.) When you have added all the grits, reduce the heat to a very low simmer and cook over low heat for 35-40 minutes, stirring occasionally at first and more frequently toward the end.
  • While the grits simmer, get the gravy underway. Fry the bacon in a medium skillet over medium heat until brown but still limp. Stir in the onion, green pepper and garlic, and continue cooking until the onion and pepper are limp, about 5 minutes. Add the scallions, sprinkle the flour over the mixture, stir, and continue sauteeing for 5 minutes longer. Stir in the stock and remaining salt, and cook for 5 minutes longer. Remove from the heat while you finish the grits.
  • When the grits are thick and creamy, stir in the butter, followed by the cheese. Add a splash of hot pepper sauce and additional salt if you like. Cover the grits while you finish the gravy.
  • Return the gravy to medium heat and stir in the shrimp. Cook until the shrimp are opaque throughout, about 5 minutes. Serve immediately, mounding the grits in large shallow bowls or on plates, and covering them with shrimp and gravy.
