Dill Pickle Meat Loaf is THE meat loaf for pickle lovers. Covered in a thick glaze with chopped pickles, this meat loaf has such an amazing and unique flavor.

1 large egg
1/2 cup dill pickle juice
1/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
1 medium yellow or sweet onion, chopped
1 pound lean ground beef
1 cup bread crumbs
1/2 cup ketchup
1 tablespoon water
1 teaspoon Worcestershire sauce
2 teaspoons Dijon mustard
1/3 cup chopped dill pickle slices
6-8 dill pickle slices

Steps:

  • Preheat oven to 350 degrees and grease a baking dish.
  • Whisk together egg and pickle juice in a large bowl.
  • Add salt, pepper, Italian seasoning, red pepper flakes, onion, and ground beef. Mix together, gradually sprinkling in the bread crumbs as you mix it together.
  • Transfer mixture to prepared pan and shape into a loaf.
  • Place in oven for 40 minutes.
  • Meanwhile mix glaze. In a small bowl stir together all ingredients. After 40 minutes, pour glaze on top of meatloaf. Top with a row of pickle slices. Return to oven for 20 minutes.

1 egg
1 small onion, chopped
½ cup dill pickle juice
¾ teaspoon salt
¼ teaspoon ground black pepper
1 slice bread, torn into small pieces
1 pound lean ground beef
¼ cup chopped dill pickles
¼ cup ketchup
2 tablespoons water
1 tablespoon brown sugar
½ teaspoon Worcestershire sauce

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 8x8 inch baking dish.
  • Beat the egg in a mixing bowl. Whisk in the onion, pickle juice, salt, and pepper. Stir in the bread until soggy, then mix in the ground beef until evenly combined. Form into a loaf and place into the prepared pan. Stir together the chopped pickles, ketchup, water, sugar, and Worcestershire sauce; pour over the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Yet another of dad's recipes. This is a slightly different meatloaf, than what most people are familiar with. Excellent served with rice, potatoes or broad pasta & fresh peas.

1 lb ground beef or 1 lb ground veal
1/2 lb ground pork
1 onion, medium, chopped
1/2 cup soft breadcrumbs
1/2 cup pickle juice
1 large egg
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/2 cup dill pickle, chopped
1/2 cup chili sauce or 1/2 cup ketchup
1/4 cup water
2 tablespoons brown sugar
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°F.
  • Lightly mix meats with onions, bread crumbs, pickles, egg, salt and pepper until well blended.
  • Shape into a loaf and place in shallow pan.
  • Combine pickle juice, chili sauce or ketchup, water, sugar and Worcestershire sauce.
  • Pour over meatloaf and place in 350°F oven basting twice with sauce in pan for 40 minutes.
  • Continue baking without basting for additional 30 - 35 minutes, until meatloaf is really glazed.
  • Garnish with a pickle fan. Dad always served this with Brussels sprouts and tiny whole carrots.

1 1/2 lbs meatloaf, mixture (ground beef and ground pork)
1 medium onion, grated
1/2 cup soft breadcrumbs
1/2 cup bottled pickle juice
1 egg
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/2 cup finely chopped dill pickle
1/2 cup catsup
1/4 cup water
2 tablespoons sugar
1 teaspoon Worcestershire sauce

Steps:

  • mixed ground meat mixture lightly with onion, bread crumbs, dill pickle juice, egg, salt and pepper until well blended.
  • Shape into a loaf in a shallow baking pan.
  • Combine dill pickle, catsup, water, sugar and Worcestershire sauce; pour over loaf.
  • Bake in oven at 350 basting a couple of times with sauce in pan, 40 minutes.
  • Continue baking without basting 35 minutes or until glazed.

4 slices rye bread
2 eggs, beaten
1 cup milk
1 (4 ounce) can chopped mushrooms, drained
1 small onion, finely chopped
1 tablespoon prepared horseradish
1 teaspoon thyme leaves
1 teaspoon caraway seed
1 1/2 teaspoons celery salt
1 1/2 teaspoons Dijon mustard
1/4 teaspoon pepper
2 lbs lean ground beef
2 -3 medium dill pickles

Steps:

  • Tear the bread into bite-size pieces.
  • In a large bowl, combine bread, eggs, and milk: let stand 10 minutes or until bread becomes soggy.
  • Add the mushrooms, onion, horseradish, thyme, caraway seed, celery salt, mustard, pepper, and beef.
  • Mix with a wooden spoon or with your hands until well blended.
  • Pat 1/2 of the meat mixture into a 5X9 inch loaf pan.
  • Slice pickles lengthwise and arrange on the meat.
  • Add the remaining meat mixture and pat firmly into a smooth layer.
  • Bake in a 350 degree oven for 1 hour and 15 minutes.
  • Cool in the pan for 20 minutes, then invert on a platter; cover and chill.
