DILL PICKLE MEAT LOAF
Dill Pickle Meat Loaf is THE meat loaf for pickle lovers. Covered in a thick glaze with chopped pickles, this meat loaf has such an amazing and unique flavor.

Steps:
- Preheat oven to 350 degrees and grease a baking dish.
- Whisk together egg and pickle juice in a large bowl.
- Add salt, pepper, Italian seasoning, red pepper flakes, onion, and ground beef. Mix together, gradually sprinkling in the bread crumbs as you mix it together.
- Transfer mixture to prepared pan and shape into a loaf.
- Place in oven for 40 minutes.
- Meanwhile mix glaze. In a small bowl stir together all ingredients. After 40 minutes, pour glaze on top of meatloaf. Top with a row of pickle slices. Return to oven for 20 minutes.

I'm not sure where this recipe came from but it's one that my mom made all the time when I was growing up. It's now a regular at my house and it gets excellent reviews from everyone I've served it to...and the best part is the kids love it too!

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 8x8 inch baking dish.
- Beat the egg in a mixing bowl. Whisk in the onion, pickle juice, salt, and pepper. Stir in the bread until soggy, then mix in the ground beef until evenly combined. Form into a loaf and place into the prepared pan. Stir together the chopped pickles, ketchup, water, sugar, and Worcestershire sauce; pour over the meatloaf.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

GERRY'S MEATLOAF WITH DILL PICKLE SAUCE
Yet another of dad's recipes. This is a slightly different meatloaf, than what most people are familiar with. Excellent served with rice, potatoes or broad pasta & fresh peas.

Steps:
- Preheat oven to 350°F.
- Lightly mix meats with onions, bread crumbs, pickles, egg, salt and pepper until well blended.
- Shape into a loaf and place in shallow pan.
- Combine pickle juice, chili sauce or ketchup, water, sugar and Worcestershire sauce.
- Pour over meatloaf and place in 350°F oven basting twice with sauce in pan for 40 minutes.
- Continue baking without basting for additional 30 - 35 minutes, until meatloaf is really glazed.
- Garnish with a pickle fan. Dad always served this with Brussels sprouts and tiny whole carrots.
ERYK'S DILL PICKLE MEATLOAF
When my son Eryk was a little boy, he used to ask me to make this at least once a week. He is now 22 and he still says it's his favorite meat loaf. I usually serve with baked potatoes and a green salad.

- Combine dill pickle, catsup, water, sugar and Worcestershire sauce; pour over loaf.

- Tear the bread into bite-size pieces.
- In a large bowl, combine bread, eggs, and milk: let stand 10 minutes or until bread becomes soggy.
- Add the mushrooms, onion, horseradish, thyme, caraway seed, celery salt, mustard, pepper, and beef.
- Mix with a wooden spoon or with your hands until well blended.
- Pat 1/2 of the meat mixture into a 5X9 inch loaf pan.
- Slice pickles lengthwise and arrange on the meat.
- Add the remaining meat mixture and pat firmly into a smooth layer.
- Bake in a 350 degree oven for 1 hour and 15 minutes.
- Cool in the pan for 20 minutes, then invert on a platter; cover and chill.

- Preheat oven to 350°F.
- In large bowl, beat together eggs, breadcrumbs, milk, onions, oregano, basil, salt and pepper.
- Add ground beef and combine.
