JUICY MEDITERRANEAN-STYLE SALMON BURGERS



Juicy Mediterranean-Style Salmon Burgers image

Never have a dry salmon burger again! Thanks to a few simple tips, you can make super JUICY, flavor-packed salmon burgers every single time!My salmon burgers recipe takes on a bit of a Mediterranean twist--fresh herbs, spices and a splash of lemon juice. Serve it with arugula, tomatoes and homemade Tzatziki sauce!

Number Of Ingredients 16

1 1/2 lb skinless salmon fillet, (cut into chunks)
2 tsp Dijon mustard
2-3 tbsp minced green onions
1 cup chopped fresh parsley
1 tsp ground coriander
1 tsp ground sumac
½ tsp sweet paprika
1/2 tsp black pepper
Kosher Salt
Italian breadcrumbs for coating, (about 1/3 cup or so)
1/4 cup extra virgin olive oil
1 lemon
Tzatziki Sauce, (find the recipe here)
6 oz baby arugula (more to your liking)
1 red onion, (sliced)
Bread of of your choice, (optional, I often use whole wheat buns or Italian ciabatta rolls)

Steps:

  • Place about 1/4 of the salmon in the bowl of a large food processor. Add mustard. Run processor until the mixture is pasty. Transfer to a bowl.
  • Place the rest of the salmon in the food processor, and pulse just a couple times until coarsely chopped into ¼-inch pieces (do not over process this second batch of salmon, it should not get too fine or pasty, it should still have some texture.) Transfer to the same bowl.
  • Now add the minced green onions, parsley, and spices (coriander, sumac, paprika, black pepper). Season with kosher salt. Mix well until the mixture is combined. Cover and chill in the fridge for about 1/2 hour.
  • While the salmon chills, prepare the toppings. Make the Greek Tzatziki Sauce according to this recipe. Prepare the arugula, sliced tomatoes, and the remaining toppings and buns to serve.
  • When ready, take salmon mixture out of the fridge. Divide into 4 equal parts. Form into 1-inch think patties.
  • Place bread crumbs on a plate. Place each patty in the breadcrumbs plate and press to coat on one side, turn over and press on the other side to coat. Place the breaded salmon patties on a sheet pan lined with parchment paper.
  • Cook salmon patties. Heat about 3 tbsp extra virgin olive oil over medium-high heat until shimmering but not smoking. Lower each of the patties carefully and cook, for 2 to 4 minutes, turning over once, until lightly browned on both sides and medium-rare within), (adjust heat as necessary during cooking to keep things sizzling and cooking well but without scorching the bread crumbs.) (minimum internal temp should be 115 to 120°F on an instant-read thermometer for medium-rare.)
  • Set cooked salmon burgers onto paper towel to drain any excess oil; sprinkle lightly with Kosher salt if you like. Add a squeeze of fresh lemon juice on top.
  • Assemble in prepared buns. Spread the buns with a bit of tzatziki sauce. Add the salmon, then layer on the arugula, tomato and onion slices...enjoy!

1 large egg**⁣
15 ounces canned salmon (⁣ drained (wild caught, if possible), canned tuna will work as well)
1/4 cup mayonnaise ⁣ (or Greek yogurt)
1 tablespoon dijon mustard⁣
1/2 cup whole wheat breadcrumbs⁣ (other types of breadcrumbs, including gluten free, work fine too)
1/2 teaspoon lemon zest⁣
1/8 teaspoon garlic powder⁣
salt and pepper⁣ (to taste)
1-2 tablespoons avocado or olive oil (for cooking the patties)
1/3 cup plain Greek yogurt or mayonnaise ⁣
3 tablespoons mayonnaise or additional Greek yogurt
1 clove garlic (finely minced)
1 tablespoon chopped fresh dill (plus more to taste as desired)
1/2 teaspoon honey
salt and pepper (to taste)
1-2 teaspoons sriracha sauce or hot sauce (plus more to taste as desired (optional))

Steps:

  • In the bottom of a large mixing bowl, lightly beat the egg. Add all other ingredients into the bowl and mix until thoroughly combined and mixture can be formed into patties. Form into 8 patties. For best results, let patties sit in fridge for 20 minutes (not necessary, but makes them a bit firmer.)
  • Heat avocado oil in a large skillet over medium heat. Add salmon patties and cook for 5-7 minutes per side and until golden brown. Serve and enjoy!
  • To make the optional creamy dill sriracha sauce, simply stir all ingredients together in a small bowl and enjoy with salmon patties.

¾ cup Italian-seasoned panko (Japanese bread crumbs)
½ cup minced fresh parsley
2 eggs, beaten
2 green onions, chopped
2 teaspoons seafood seasoning (such as Old Bay®)
1 ½ teaspoons ground black pepper
1 ½ teaspoons garlic powder
3 tablespoons Worcestershire sauce
3 tablespoons grated Parmesan cheese
2 tablespoons Dijon mustard
2 tablespoons creamy salad dressing (such as Miracle Whip®)
1 tablespoon olive oil, or as needed, divided

Steps:

  • Mix salmon, panko, parsley, eggs, green onions, seafood seasoning, black pepper, garlic powder, Worcestershire sauce, Parmesan cheese, Dijon mustard, and creamy salad dressing together in a large bowl; divide and shape into eight patties.
  • Heat enough olive oil in a large skillet to cover the cooking surface over medium heat. Fry salmon patties in batches until browned, 5 to 7 minutes per side. Repeat with more olive oil, as needed.

Another version of my salmon patties recipe. This is a hit with adults more than kids, only because the Dijon, while not overpowering, is a strong, acquired taste. Easy, healthy, quick and impressive for guests who will undoubtedly ask for the recipe...or an invitation back for dinner!

1 1/3 salmon, fresh, de-boned, skinless
4 -6 shallots, chopped
1/4 cup chives, chopped
2 tablespoons Dijon mustard
paprika
salt
pepper
olive oil (for frying)

Steps:

  • Dice the salmon either by hand or in a food processor. DON'T make it into a paste!
  • Add all the other ingredients, saving the oil for cooking. Mix gently.
  • Refrigerate a few hours, so they hold their form.
  • Divide into 4 patties, not too thick so they cook properly.
  • Using a little olive oil, cook over medium to high heat, about 3 minutes each side.
  • Serve with a nice pasta salad and enjoy!
  • VARIATIONS:.
  • We sometimes make this more in the form of burgers, and simply put it on a bun, topped with a thin slice of red onion, lettuce, tomato and a little mix of Dijon mustard and low fat mayo.

Three 7.5-ounce cans boneless salmon, drained
2 tablespoons mayonnaise
1 teaspoon lemon zest, plus wedges for serving
1 large egg, lightly beaten
1 small jar roasted red peppers, finely chopped
1/2 cup plain breadcrumbs
1/3 cup Food Network Kitchen™ Inspired French Style Dijon Balsamic Vinaigrette
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
5 ounces mixed baby greens

Steps:

  • Preheat the oven to 400 degrees F.
  • Mix together the salmon, mayonnaise, lemon zest, egg, roasted red peppers, 3 tablespoons of the breadcrumbs, 1 tablespoon of the French Style Dijon Balsamic Vinaigrette, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Gently form into eight 3/4-inch-thick patties and freeze until just firm, about 10 minutes.
  • Put the remaining breadcrumbs in a shallow bowl. Press the salmon cakes in the breadcrumbs to coat both sides. Heat the oil in a large ovenproof nonstick skillet over medium-high heat. Add the salmon cakes and cook until golden brown, 3 to 4 minutes per side. Transfer the skillet to the oven and bake until the cakes are heated through, 6 to 8 minutes.
  • Toss the greens with the remaining vinaigrette in a medium bowl. Season with salt and pepper.
  • Divide the salmon cakes among 4 plates (2 per plate). Add a mound of salad to each plate and a lemon wedge.

The BEST canned salmon patties! This old fashioned salmon patties recipe is lightened-up with Greek yogurt and has a touch of Southern spice.

1 large egg
1 (15-ounce) can salmon (drained (wild-caught if possible))
1/2 cup Italian seasoned dry whole wheat bread crumbs
1/4 cup nonfat plain Greek yogurt (or sour cream)
1 1/2 teaspoons Dijon mustard
1 teaspoon white vinegar or lemon juice
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper
2 tablespoons finely chopped fresh parsley (plus additional for serving)
1-2 tablespoons extra-virgin olive oil (for cooking the patties)
Greek yogurt
Lemon wedges

Steps:

  • In the bottom of a large mixing bowl, lightly beat the egg. Add the drained salmon to the bowl. Add the bread crumbs, Greek yogurt, Dijon, white vinegar, onion powder, garlic powder, and cayenne.
  • With a fork, lightly mix to combine, breaking apart the salmon further. Gently stir in the parsley.
  • Scoop the mixture by 1/3 cupfuls and shape into 6 patties that are about a 1/2 inch thick. Arrange on a plate.
  • In a large cast-iron or similar sturdy-bottomed skillet, heat 1 tablespoon of the oil over medium. Swirl to coat.
  • Brown the patties on both sides, until the outsides are very deep golden brown and the patties are cooked through, about 5 to 6 minutes total. When flipping the patties, be very gentle and use a long, flexible spatula, such as a fish spatula. Serve topped with Greek yogurt, a squeeze of lemon, and a sprinkle of fresh parsley. Enjoy!
