I needed an extra dessert for an expected dinner guest who is diabetic. After looking at recipes for a couple of hours, I found this one and it sounded yummy. My dinner will be next month but thought I would try it today to make sure it was good. It was very yummy and I will definitely serve it at my dinner. It's from diabetic-recipes.com. Diabetic exchanges: 2 carbs (1 bread/starch, 1 fruit) 2 fat

1 1/2 lbs pears (Bartlett or D'anjou, 720g)
1 teaspoon grated lemon zest (5 ml)
2 teaspoons fresh lemon juice (10 ml)
2 tablespoons one-to-one sugar substitute (I used Splenda, 30 g)
1 sheet frozen puff pastry, thawed
2 tablespoons slivered almonds, toasted (30 g)
1/2 teaspoon sugar (2.5 ml)
1/2 teaspoon cinnamon (2.5 ml)

Steps:

  • Preheat oven to 425F (220C)Gas Mark 7.
  • Use nonstick cookie sheet, spray lightly or cover with parchment paper.
  • Peel, core and thinly slice pears.
  • Lightly coat a nonstick pan with butter flavored cooking spray. (I just used butter).
  • Add the pears and saute for 2 minutes.
  • Stir in the zest, juice and sugar substitute. Cook until the pears are just cooked through. Set aside.
  • On a floured surface, roll the puff pastry to make a 12 1/2 X 10 1/2 (31.25 x 26.25) inch rectangle.
  • Sprinkle almonds on the pastry.
  • Drain pears and place down middle third (long way) of the puff pastry to within 1/2 inch (1.25cm) of the top and bottom edge.
  • Spray the edges of the pastry and fold each 1/3 side over fruit. I brushed on butter.
  • Place seam side down on cookie sheet.
  • Make slashes every 2 inches (5 cm).
  • Mix sugar and cinnamon and sprinkle on top.
  • Coat with butter flavored cooking spray. If you use melted butter, put on before cinnamon/sugar.
  • Bake 25-30 minutes until puffed and brown.
  • Allow to cool to room temperature then cut into 8 pieces. Can serve with sugar free icecream or whipped cream.

1/4 cup raw sugar
2 teaspoons ground cinnamon
1 sheet puff pastry, thawed
1/2 stick butter, melted
2 (15 1/4-ounce) cans pear halves, keeping stem end attached, cut into 1/4-inch thick slices
1/2 cup shredded Cheddar

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, mix sugar and cinnamon together. Lay puff pastry sheet on a work surface brush with melted butter and sprinkle with half the cinnamon sugar. Cut into 6 even pieces. Fan the pear slices over the puff pastry, using 1/2 a pear for each puff pastry square. Sprinkle tops of pear tarts with remaining cinnamon sugar mixture. Bake until pastry is golden and cooked through, about 20 to 25 minutes.
  • Remove from tart from oven, sprinkle with cheese and bake until cheese melts, 5 minutes more.

4 tablespoons Splenda granular (you can add more to taste)
3 -4 pears
1 (16 ounce) package frozen puff pastry shells (NOT sheets)
1/4 teaspoon cardamom
1/2 tablespoon lemon juice
1 dash cinnamon

Steps:

  • bake puff pastry according to box.
  • peel and cut up pears into chunks.
  • in a medium saucepan add pears, lemon juice, and cardamon and sprinkle of cinnamon and cook on medium heat until it mashes easily with a potato masher. It usually takes about 10-12 minutes.
  • When the Puff pastry is done remove it from the oven and let cool about 5 minute Then remove the tops with a knife and spoon the pear compote into the shell, and place the top back on.
  • *I have done this with squares as well but it works more like a turnover. I personally think the shells are much easier to work with.
  • Everyone I've made this for loves it! You can play with the ingredients to taste because not everyone wants as much cardamon in it as I do.

4 small pears
4 cups water
2 cups sugar
1 cup honey
1 small lemon, halved
3 cinnamon sticks (3 inches)
6 to 8 whole cloves
1 vanilla bean
1 sheet frozen puff pastry, thawed
1 large egg, lightly beaten

Steps:

  • Core pears from bottom, leaving stems intact. Peel pears; cut 1/4 in. from the bottom of each to level if necessary., In a large saucepan, combine the water, sugar, honey, lemon halves, cinnamon and cloves. Split vanilla bean and scrape seeds; add bean and seeds to sugar mixture. Bring to a boil. Reduce heat; place pears on their sides in saucepan and poach, uncovered, until almost tender, basting occasionally with poaching liquid, 16-20 minutes., Remove pears with a slotted spoon; cool slightly. Strain and reserve 1-1/2 cups poaching liquid; set aside., Unfold puff pastry on a lightly floured surface. Cut into 1/2-in.-wide strips. Brush lightly with beaten egg. Starting at the bottom of a pear, wrap a pastry strip around pear, adding additional strips until pear is completely wrapped in pastry. Repeat with remaining pears and puff pastry., Transfer to a parchment-lined 15x10x1-in. baking pan. Bake on a lower oven rack at 400° until golden brown, 25-30 minutes., Meanwhile, bring reserved poaching liquid to a boil; cook until liquid is thick and syrupy, about 10 minutes. Place pears on dessert plates and drizzle with syrup. Serve warm.

For pastry bases
1/4 cup granulated sugar
1 sheet frozen puff pastry (about 1/2 pound), thawed
For pears and sauce
2 large firm-ripe Bartlett pears (about 1 pound)
2 tablespoons unsalted butter, cut into bits
1/2 cup granulated sugar
1 tablespoon fresh lemon juice
1/2 cup heavy cream
1 tablespoon Poire William
confectioners' sugar for sprinkling

Steps:

  • Make pastry bases:
  • Preheat oven to 375°F. and lightly butter a heavy baking sheet.
  • Sprinkle a work surface with granulated sugar and roll out puff pastry about 1/8 inch thick, turning once to coat both sides with sugar. Cut out 4 rectangles, each about 4 1/2 by 3 1/2 inches, and transfer to baking sheet, reserving scraps for another use. Prick pastry all over with a fork and put baking sheet in freezer until pastry is chilled well, about 15 minutes.
  • Lightly butter bottom of another heavy baking sheet and put directly on top of pastry rectangles to weight them while baking. Bake pastry (between 2 baking sheets) in middle of oven 25 to 35 minutes, or until golden brown, and transfer to a rack to cool. Pastry bases may be made 1 day ahead and kept in an airtight container.
  • Make pears and sauce:
  • Preheat oven to 375°F. (if pastry bases have been made ahead) and lightly butter a small baking dish just large enough to hold 4 pear halves in one layer.
  • Peel, halve, and core pears. Arrange pear halves in baking dish, cut sides up. Divide butter among pear cavities and sprinkle 1/4 cup granulated sugar over pears. Sprinkle lemon juice over pears and bake in middle of oven 15 minutes. Remove baking dish from oven and turn pears so that cut sides are down. Baste pears with cooking juices and return to oven. Bake pears until tender, about 15 minutes more. Transfer pears to a plate and keep warm.
  • Transfer cooking juices to a small heavy saucepan. Add remaining 1/4 cup granulated sugar and boil, swirling pan, until mixture turns a deep golden caramel. Slowly add cream (caramel will bubble up) and simmer sauce, whisking, until slightly thickened, about 5 minutes. Stir poire William into caramel sauce.
  • Sprinkle each pastry base with confectioners' sugar and top with a pear half. Serve baked pears with caramel sauce.
