Picking wild blackberries or dewberries is something we did every year for as long as I can remember. We usually make lots of jelly out of the berries, but we also made sure we have our fill of fresh berry pie while the season lasts. The recipe is for the filling only. I do not usually add any spices because we enjoy the full flavor of the berry. However, you can add a bit of cinnamon if you prefer. You can use your favorite pie crust recipe or use my pie crust recipe, which is tender and flaky & never fails me. Recipe #218593

3/4 cup sugar
1/4 teaspoon cinnamon (optional)
1/3 cup cornstarch
2 tablespoons butter
1 tablespoon fresh lemon juice
4 cups fresh blackberries or 4 cups dewberries
1 pastry for double-crust pie

Steps:

  • Heat oven to 425 degrees.
  • Prepare pastry.
  • In a large mixing bowl, add the blackberries and sugar & cinnamon; toss to coat. Next add the cornstarch & lightly mix. Place filling into pastry lined pie pan. Sprinkle lemon juice over filling & dot with butter.
  • Cover the filling with the top pie crust. Trim the excess crust off around the pie and seal. Cut slits in top of pie crust. Bake 50-60 minutes or until crust is golden brown & juice begins to bubble through the slits in crust. Cool completely before slicing.

This is a very easy and delicious berry pie. Since dewberries are related to the blackberry, feel free to substitute. Dewberries are plentiful "where I come from" and this is an old family recipe.

1 (9 inch) pastry for double-crust pie (your favorite recipe)
4 cups fresh dewberries
1 cup sugar
4 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
1 tablespoon butter

Steps:

  • Preheat oven to 450 degrees F.
  • Line 9" pie pan with half the pastry.
  • Combine berries, sugar, flour and lemon juice (being careful not to mash berries).
  • Spoon berry mixture into pie shell, and dot with butter.
  • Cover with top crust and slash in several places to allow steam to escape. (I usually brush top crust with a slightly beaten egg white).
  • Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and continue baking for 30 to 40 minutes, or until browned.

1 1/4 cups all-purpose flour, plus more for dusting
1 tablespoon granulated sugar
1/2 teaspoon kosher salt
4 tablespoons cold vegetable shortening
6 tablespoons cold unsalted butter, cut into small pieces
2 tablespoons apple cider vinegar
2 to 4 tablespoons ice water
3/4 cup rolled oats
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
6 tablespoons cold unsalted butter, cut into small pieces
6 cups mixed berries (blackberries, raspberries and blueberries)
1/3 cup granulated sugar
1/3 cup packed light brown sugar
3 tablespoons fresh lemon juice
2 tablespoons instant tapioca
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon kosher salt

Steps:

  • Make the crust: Pulse the flour, granulated sugar and salt in a food processor to combine. Add the shortening and pulse a few times until coarse crumbs form. Pulse in the butter until just combined with some pea-size pieces remaining. Pulse in the vinegar and 2 tablespoons ice water until the dough starts to come together but is still crumbly, adding up to 2 more tablespoons ice water if needed. Turn out the dough onto a piece of plastic wrap and pat into a disk. Wrap and refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the topping: Combine the oats, flour, brown sugar, salt, cinnamon and allspice in a medium bowl. Work in the butter with your fingers until clumps form. Refrigerate until ready to assemble the pie.
  • Make the filling: Combine the berries, granulated sugar, brown sugar, lemon juice, tapioca, cinnamon, cardamom and salt in a large bowl; toss well.
  • Place a baking sheet on the lowest oven rack and preheat to 425 degrees F. Roll out the dough into a 12-inch round on a lightly floured surface; ease into a 9-inch pie plate and crimp the edge. Refrigerate until firm, at least 20 minutes.
  • Pour the berry filling into the crust and sprinkle evenly with the crumb topping. Transfer the pie to the hot baking sheet and bake 20 minutes. Reduce the oven temperature to 375 degrees F and continue baking, rotating the pie halfway through, until the crust and topping are browned and the filling is bubbling, 35 to 40 more minutes. (Tent loosely with foil if the pie is browning too quickly.) Transfer to a rack and let cool completely.

1-1/2 cups fresh or frozen blackberries
1-1/2 cups fresh or frozen elderberries or raspberries

4 tablespoons quick-cooking tapioca
1 unbaked pastry shell (9 inches)
TOPPING:
3/4 cup all-purpose flour
1/2 cup sugar
1/3 cup butter

Steps:

  • In a large bowl, sprinkle berries with lemon juice. Combine sugar and tapioca. Add to berries; toss gently to coat. Let stand for 15 minutes. Spoon into pastry shell., For topping, combine flour and sugar in a small bowl. Cut in butter until crumbly. Sprinkle over filling. Bake at 400° for 45 minutes or until filling is bubbly and topping is browned. Cool on a wire rack.

Assorted berries baked in a pie shell with a crumble topping. My husband requested it so I combined the best berry pie recipes with the best berry crisp recipes, and got the best of both worlds! I used a frozen medley of blueberries, raspberries, and lingonberries that I got from Costco.

1 (9 inch) deep dish pie shells
4 cups berries (thawed if frozen)
1/2 cup sugar
1/4 cup water
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla
1 dash salt
1/2 teaspoon cinnamon
1/2 cup brown sugar
1/2 cup flour
1/2 cup oats
1/4 cup butter, melted

Steps:

  • Preheat oven to 375.
  • Mix topping ingredients together, stirring in the melted butter last, and set aside.
  • Cook all the filling ingredients EXCEPT the berries on medium, whisking frequently, until it is well blended and thick (5-7 minutes).
  • Remove filling from heat and stir in berries.
  • Pour filling into pie crust (don't poke the crust with a fork).
  • Crumble topping over filling, completely covering it (no berries showing through).
  • Place pie on a cookie sheet and bake on middle rack of oven for 45 minutes or until done.
  • Let cool for at least 10 minutes, and serve. Optionally, top with whipped cream or vanilla ice cream.

1 pastry for a 9-inch deep dish pie crust
½ cup semi-sweet chocolate chips
2 quarts fresh strawberries, hulled, divided
1 cup white sugar
2 tablespoons lemon juice
¾ cup ginger ale
3 ½ tablespoons cornstarch

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Press pie crust pastry into a 1/2-inch deep dish pie plate. Prick bottom and sides of pastry with fork.
  • Bake in the preheated oven until lightly brown, 10 to 12 minutes. Cool completely on a wire rack.
  • Melt chocolate chips in a saucepan over medium-low heat, stirring constantly, 1 to 3 minutes. Paint melted chocolate in the bottom and inside of cooled pie crust. Place chocolate-painted crust in freezer to harden the chocolate, about 30 minutes.
  • Place the prettiest strawberry, cut-side down, in the center of the chocolate crust. Arrange as many attractive strawberries as possible around the center strawberry, so they appear as circles around the center.
  • Mash the remaining strawberries in a bowl; transfer to a saucepan. Add sugar and lemon juice; bring to a boil, stirring frequently.
  • Whisk ginger ale and cornstarch together in a bowl until smooth; gradually stir into boiling strawberry mixture. Reduce heat to medium-low and simmer, stirring constantly, until thickened, 12 to 14 minutes. Remove from heat and cool for about 5 minutes.
  • Spoon strawberry sauce over strawberries in pie shell. Chill in refrigerator until pie is set, at least 8 hours.

1 tablespoon unflavored gelatin (1 envelope)
1/4 cup cold water
1 cup sour cream
2 egg yolks
2 tablespoons sugar
2 tablespoons milk
2 egg whites
1/4 teaspoon almond extract
1/4 cup sugar
1 cup fresh strawberries, cut in half
1/2 cup red currant jelly
1 tablespoon water

Steps:

  • Soften gelatin in water.
  • In saucepan, combine sour cream, egg yolks, sugar, milk and salt; mix well.
  • Cover and cook over medium heat, stirring constantly, 5 minutes.
  • Blend in gelatin.
  • Cool, stirring occasionally until thick but not set.
  • In small mixer bowl, beat egg whites with almond extract at high speed until soft mounds form.
  • Gradually add 1/4 cup sugar, beating until stiff, glossy peaks form.
  • Fold into chilled mixture gently but thoroughly.
  • Spoon into baked pastry shell.
  • Chill until set, about 2 hours.
  • Arrange strawberry halves on top of pie.
  • Heat jelly with water, stirring constantly until jelly melts; spoon over strawberries.
  • Chill until served.

4 cups elderberries
1 cup white sugar
3 tablespoons cornstarch
1 tablespoon lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix cornstarch in a little bit of water and add to berries and sugar. Cook, stirring constantly until desired thickness. Add more cornstarch if not thick enough. Add lemon juice.
  • Pour into bottom crust. Dot with butter. Put on top crust or make a lattice.
  • Bake at 375 degrees F (190 degrees C) until browned and berries are bubbling through holes in the crust, approximately 40 minutes.
  • Note: It is a good idea to put a pan or foil under the pie as it bakes since it might bubble over.

  • Fit and seal upper crust.

1 tablespoon sugar
2 teaspoons salt
1-3/4 cup cold shortening

Half-and-half cream

Steps:

  • In a large bowl, combine flour, sugar and salt; cut in shortening until mixture resembles coarse crumbs. In a bowl, combine water, egg and vinegar; stir into flour mixture just until moistened. Form into a roll. Cover and refrigerate for 1 hour. , On a floured surface, roll two-thirds of the dough into a 18x14-in. rectangle. Carefully place onto the bottom and up the sides of a 13x9-in. baking dish. Combine berries, sugar and flour; pour into crust. Use the remaining dough to make lattice strips; place over the filling.
