The time-saving secret behind this beautiful treat is a crust made from refrigerated Pillsbury™ Sugar Cookie Dough, and the wow factor comes from the rainbow of fresh fruit. Serve up slices of this Easy Fruit Pizza in the summer for a fresh, juicy dessert, or bring a little color to the colder seasons.

1 roll (16.5 oz) refrigerated Pillsbury™ Sugar Cookie Dough
1 package (8 oz) cream cheese, softened
1/3 cup sugar
1/2 teaspoon vanilla
2 kiwifruit, peeled, halved lengthwise and sliced
1 cup halved or quartered fresh strawberries
1 cup fresh or frozen blueberries
1/2 cup apple jelly

Steps:

  • Heat oven to 350°F. Spray 12-inch pizza pan with cooking spray. Break up cookie dough in pan; press dough evenly in bottom of pan to within 1/2 inch of edge. Bake 16 to 20 minutes or until golden brown. Cool completely on cooling rack, about 30 minutes.
  • In small bowl, beat cream cheese, sugar and vanilla with electric mixer on medium speed until fluffy. Spread mixture over cooled crust.
  • Arrange fruit over cream cheese. Stir jelly until smooth; spoon or brush over fruit. Refrigerate until chilled, at least 1 hour. To serve, cut into wedges or squares. Cover and refrigerate any remaining pizza.

Use any combination of ripe summer fruit you can find for this fresh fruit "pizza." The crust is one big sugar cookie that can be baked a day ahead and kept well wrapped until you're ready to spread it with the cream-cheese topping (which you can also make a day ahead). The dough could double as your go-to sugar cookie recipe too--just form it into balls and bake at 350 degrees F for a soft, chewy treat.

3/4 cup granulated sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
1 teaspoon freshly grated lemon zest
1 teaspoon pure vanilla extract
1 large egg
1 3/4 cups all-purpose flour (see Cook's Note)
1 1/2 teaspoons baking powder
1/4 teaspoon fine salt
8 ounces cream cheese, at room temperature
4 tablespoons unsalted butter, at room temperature
1 tablespoon honey
1 teaspoon pure vanilla extract
2 cups confectioners' sugar, sifted, plus more for dusting
4 to 5 cups mixed fresh summer fruit, such as whole raspberries, blackberries and blueberries, quartered strawberries and sliced stone fruit

Steps:

  • For the sugar cookie crust: Preheat the oven to 350 degrees F.
  • Beat the granulated sugar and butter in a large bowl with an electric mixer on high speed until light and fluffy, 1 to 2 minutes. Add the lemon zest, vanilla and egg and beat until incorporated. Add the flour, baking powder and salt and mix on low speed until just combined. Scrape the dough into a large (12-inch) nonstick skillet and press into an even layer to cover the entire bottom of the skillet. (If the dough becomes too soft to work with, pop the skillet in the refrigerator to chill for 10 minutes before proceeding.) Prick the dough all over with a fork, leaving a 1-inch border.
  • Bake the crust until golden and the edges are set, 22 to 24 minutes. Let cool in the skillet on a wire rack, then loosen the edges of the crust with a butter knife and invert onto a platter or cutting board to unmold. Invert again so the crust is right-side up. (To make ahead, let cool, then wrap well in plastic wrap and keep at room temperature.)
  • For the topping: Clean out the mixer bowl and add the cream cheese and butter. Beat on medium speed until light and smooth, about 1 minute. Add the honey and vanilla and beat to combine. Add the confectioner's sugar and beat on low speed until just combined. Increase the speed to high and beat until fluffy, 1 to 2 minutes. Refrigerate the topping, covered, until ready to use (stir again until smooth).
  • To assemble the fruit pizza, spread the cream cheese topping on the crust in an even layer, leaving a border for the crust. Top with the fruit in a random pattern. Dust with more confectioner's sugar if using just before serving, then cut into slices.

1 cup water
2 cups all-purpose flour
1 1/2 tablespoons vegetable oil
3/4 cup cake flour
1 teaspoon salt
1/4 teaspoon active dry yeast (proofed in water)
1/2 cup flour
1/2 cup brown sugar
1/2 cup quick oats
1/2 cup firm butter or 1/2 cup margarine
1 teaspoon cinnamon
2 cups confectioners' sugar
3 tablespoons milk
1 tablespoon melted margarine or 1 tablespoon butter
1 teaspoon vanilla extract

Steps:

  • Combine all crust ingredients in a mixer and knead for 10 minutes. Place in a large bowl, cover the bowl with plastic wrap and allow to ferment as long as possible (12 to 24 hours).
  • Punch down dough now and then when you get a chance.
  • Preheat oven to 550 degrees F.
  • Roll the dough as thin as desired. Roll, flour, flip and repeat until you end up with a shape equal to 90% the size of your pan, as it will stretch when you transfer the dough. Place dough on pizza stone or in pan. Brush with vegetable oil and prick with fork. Pre-bake for 3 minutes.
  • Remove from the oven and spread with cherry, blueberry or apple pie filling. If you want whole pieces of fruit with a thick topping, you will need 1 whole large can, otherwise you will need to purée half the filling if you want a thinner topping. After you have spread on the filling, you put on the crumb topping. Mix well with a fork or pastry blender. Spoon over pie filling. Use as much as you want of the topping. Put the rest in a zip-type bag in the refrigerator to save. Return pizza to the oven and continue to bake for 10 to 15 minutes or until crust is light golden brown. Remove and drizzle with Vanilla Glaze.
  • Yields one 16-inch dessert pizza.

1 (8 ounce) package cream cheese, softened
1/2 teaspoon almond extract
1 cup sliced peach
2 cups fresh strawberries, quartered
1 cup blueberries

Steps:

  • Preheat oven to 350°F
  • Press cookie dough onto a 14" pizza pan.
  • Bake for 8 minutes or until lightly browned. Cool.
  • Mix cream cheese with curd until smooth; blend in almond extract. Spread cheese mixture on cooled crust.
  • Arrange fruit on cheese mixture. Soften jelly by stirring vigorously until smooth. Brush fruit with softened jelly.
  • Chill several hours and serve.
