Deluxe Tossed and Layered Salad image

This comes from my sister Terry, and was published in the church cookbook for the Molalla Christian Church, here in Oregon. Prep time includes chilling.

1 head green lettuce
2 large tomatoes, chopped
2 avocados, chopped
1 cup grated cheddar cheese
1 cup grated mozzarella cheese
1/2 cup freshly grated parmesan cheese
1 cup crouton

Steps:

  • In a large serving bowl, toss together half of all the ingredients except for the Parmesan and croutons; sprinkle half of the Parmesan over the top.
  • Layer the remaining ingredients over: lettuce, tomato, avocado, cheddar, Mozzarella, remaining Parmesan, then sprinkle the croutons over the top.
  • Refrigerate for 30 minutes, then serve with your favorite dressing (Bersteins is a good brand).

Stuck on what to make for a potluck? This creamy, layered salad with peas, bacon, hard-boiled eggs and sharp cheddar cheese won't disappoint.

Number Of Ingredients 15

2 heads iceberg lettuce, chopped
4 tomatoes, cut into wedges
8 oz baby spinach
8 Perfect Hard Boiled Eggs, recipe follows, chopped
Salt and freshly ground black pepper
1 lb(s) bacon, cooked and chopped
1 bunch green onions, thinly sliced
8 oz sharp cheddar cheese, grated
1 bag frozen peas (10 oz.), partially thawed
½ cup mayonnaise
½ cup sour cream
1 ½ tsp sugar
2 Tbsp fresh dill, chopped
2 Tbsp fresh parsley, chopped
8 eggs

Steps:

  • In a clear glass bowl, layer the salad ingredients in the order they appear above, concentrating the ingredients around the perimeter of the bowl and filling in any gaps in the center with lettuce as needed. Start with a good layer of iceberg on the bottom, followed by the tomato wedges, spinach and Perfect Hard Boiled Eggs. Sprinkle the egg layer generously with salt and pepper. Layer on the bacon, green onions and cheddar, and end with the peas.
  • Combine the mayonnaise, sour cream and sugar in a small bowl and mix well.
  • Pour the dressing over the top of the peas and spread evenly, bringing the dressing all the way out to the edges of the bowl. Sprinkle with the dill and parsley. Cover and refrigerate until serving.
  • Place the eggs in a saucepan, cover with water and bring to a boil. Turn off the heat and allow the eggs to sit in the water for 20 minutes. Drain off the water and add ice to the pan on top of the eggs. Set aside to chill.

Steps:

2 oz Boar's Head Ovengold
Turkey Breast
1/2 oz Boar's Head Lacey Swiss Cheese
1/2 oz Boar's Head Yellow American Cheese
1 oz Avocado, Sliced
1 oz Celery, Julienne
1 oz Cucumber, Halved Lengthwise
1 oz Green Bell Peppers, Julienne
1-1/2 oz Romaine Lettuce
1-1/2 oz Spring Mix Lettuce
1-1/2 oz Tomato, Diced
1 Hard Boiled Egg
2 oz Boar's Head Deluxe Ham
1 oz Carrots, Julienne

Steps:

  • Slice cucumber and toss with lettuce, celery and carrots. Place leaf lettuce on plate or container as an under liner. Add the greens.
  • Place the remaining ingredients in neat rows across the greens. Slice the meat and cheese in strips and place on top of the salad. Serve with your choice of fat-free salad dressing.

1 small red onion, sliced, separated into rings
1 pkg. (10 oz.) frozen peas, thawed, drained
1 pkg. (8 oz.) OSCAR MAYER Smoked Ham, chopped
3/4 cup KRAFT Real Mayo Mayonnaise
1/4 cup KRAFT Grated Parmesan Cheese
1 Tbsp. sugar
1 cup KRAFT 2% Milk Shredded Cheddar Cheese
2 small tomatoes, chopped

Steps:

  • Layer lettuce, onions, peas and ham in large straight-sided clear glass bowl.
  • Mix mayo, Parmesan and sugar; spread over salad to seal. Refrigerate several hours or up to 24 hours.
  • Top with cheddar and tomatoes just before serving; toss gently.

6 cups cooked boneless skinless chicken or 6 cups cooked turkey, cut into 1 x 1 1/2 inches and 1/4 inch thick
salt
fresh ground white pepper
1 -2 tablespoon excellent light olive oil
2 -3 tablespoons fresh lemon juice
1/2 cup chopped fresh parsley
1 teaspoon finely cut tarragon leaves or 1/4 teaspoon fragrant dried tarragon
1 cup diced tender celery rib
1/2 cup minced scallions or 1/2 cup mild onion
1 cup chopped walnuts (optional)
3/4 cup mayonnaise, preferably homemade (or more)
1 head romaine lettuce, washed and dried

Steps:

  • In large mixing bowl, toss chicken or turkey with salt, pepper, and enough oil to coat the meat very lightly.
  • Then toss with the lemon juice, and finally with the herbs, celery, onions, and optional walnuts.
  • Add torn lettuce.
  • Taste and correct seasoning.
  • Let steep 10 minutes, tossing several times.
  • Drain any accumulated liquid out of the salad, correct seasoning again; fold in just enough mayonnaise to" bind" the ingredients.

1 lb fresh spinach, torn
1 head lettuce, torn
6 large hard-cooked eggs, sliced
1 lb bacon, cooked and crumbled
1 (8 ounce) can water chestnuts, drained and sliced
1 (10 ounce) package frozen English peas, thawed
1 cup mayonnaise or 1 cup salad dressing
1/2 cup commercial sour cream
1/4 ounce package buttermilk-mayonnaise dressing mix
chopped parsley

Steps:

  • Layer first 6 ingredients in order listed in a large salad bowl.
  • Combine salad dressing, sour cream, and dressing mix; mix well and over top of the vegetables, sealing to edge of the bowl.
  • Garnish with chopped parsley.
  • Cover tightly and refridgerate for several hours or overnight.
  • Toss gently before serving.
