1 cup all-purpose flour
1 cup yellow cornmeal
½ cup white sugar
1 teaspoon salt
3 teaspoons baking powder
(8 oz cream cheese
1 stick unsalted butter, melted ((1/2 cup))
(1) 15 ounce can creamed style corn ((do not drain))
(1) 15 ounce can corn ((drained))
1 egg
1 fresh jalapeños seeded and diced ((use two jalapeños if you want it spicier))
1 1/2 cup shredded cheddar cheese
6 slices of bacon ((cooked to a crisp and chopped))

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large mixing bowl combine soften cream cheese, butter, and egg. Beat with a mixer until combined.
  • In another mixing bowl combine the flour, sugar, cornmeal, salt, and baking soda. Whisk together until combined.
  • Combine these dry ingredients and wet ingredients in the large mixing bowl and beat until combined. The mixture will be thick.
  • Add to the mixing bowl, the creamed corn, the regular corn, 1 cup of the shredded cheese, and the diced jalapeños.
  • Stir by hand until well combined.
  • Place in a 9X13 baking pan (or a 2 quart baking pan) sprayed with a baking pan.
  • Bake for 40-45 minutes until the center is set.
  • Top the casserole with the remaining cheddar cheese and diced bacon
  • Bake for an additional 5 minutes to melt the cheese.
  • Let sit for 5 minutes. Serve and enjoy!

This is a simple, but yet delicious, creamy, baked corn casserole. It was given to my sister and I from a dear friend. We do not know where she got the recipe. We fix this dish quite often around our house.

1 (15 1/2 ounce) can white corn, drained
1 (8 ounce) package cream cheese
4 tablespoons chopped jalapenos from a jars, drained (or more depending taste)
1/4 teaspoon butter (Or more depending on your taste)
1/4 cup milk

Steps:

  • This is best when sitting overnight in the refridgerator.
  • Soften the Cream Cheese & Butter in the milk in the microwave for about 1 minute.
  • Add the corn and peppers and pour into a casserole sprayed with cooking spray.
  • When ready to bake - preheat oven to 350 deg.
  • Bake for approximately 30 - 45 minutes.

8 large jalapenos, cut lengthwise through the stem and seeds and ribs removed
1 (15 1/4 ounce) can corn, drained
1 garlic clove, minced
2 scallions, thinly sliced
1/4 cup finely chopped red onion
1 cup shredded sharp cheddar cheese, plus 1/4 cup for topping
1/4 cup sour cream
1 egg, beaten
1/2 cup panko breadcrumbs, plus 1/4 cup for topping
2 1/2 teaspoons chili powder, divided
2 tablespoons olive oil
1/2 cup sour cream, for topping
2 tablespoons chopped chives (to garnish)
kosher salt
ground black pepper
1/2 cup prepared guacamole
1/2 cup water
2 limes, juiced
1 cup roughly chopped cilantro
2 teaspoons honey
1/4 cup olive oil
kosher salt
ground black pepper

Steps:

  • Preheat oven 400 degrees F. Line a baking sheet with parchment paper; set aside.
  • In a large bowl, stir to combine corn, garlic, scallions, red onion, 1 cup shredded cheddar cheese, sour cream, egg, 1/2 cup panko bread crumbs, 2 teaspoons chili seasoning, 1/4 teaspoon salt and 1/8 teaspoon pepper.
  • To make the topping, in a small bowl, stir to combine 1/4 cup shredded cheddar cheese with 1/4 cup panko, 1/2 teaspoon chili powder and olive oil.
  • Spoon the corn mixture into the jalapeno halves and place on the prepared baking sheet. Top each jalapeno with the panko and cheese topping. Bake for 18-20 minutes until jalapeno is softened and topping is golden.
  • To make the green goddess sauce:.
  • Place all ingredients in a blender and process until smooth.
  • Top each jalapeno with a dollop of sour cream, a sprinkle of chives and serve with the green goddess dipping sauce on the side.

My mom has been making this YUMSTER dish for as long as I can remember, and it's always a hit with EVERYONE! A snap to prepare and delicious to boot! You just can't go wrong with this one! It's good any time of year, and can be made to suit anyone...even kids, as you can adjust the "heat" to taste. Three (15 oz) cans of well-drained whole kernel corn (uncooked) may be substituted for the frozen corn, but my family prefers the taste and texture of the frozen variety. Get ready for recipe requests!

1/2 cup butter or 1/2 cup margarine, melted
1 (32 ounce) bag frozen corn, cooked and well-drained

  • Using electric mixer, mix cream cheese and butter very well.
