Steps:
- Using a food processor, grind cookies to a fine powder. With a mixer, blend cookie powder, cream cheese and vanilla extract until thoroughly mixed (there should be no white traces of cream cheese).
- Roll into small balls and place on wax-lined cookie sheet. Refrigerate for 45 minutes.
- Line two cookie sheets with wax paper. In double-boiler, melt milk chocolate. Dip balls and coat thoroughly. With slotted spoon, lift balls out of chocolate and let excess chocolate drip off. Place on wax-paper-lined cookie sheet.
- In separate double boiler, melt white chocolate. Using a fork, drizzle white chocolate over balls. Let cool.
- Store in airtight container, in refrigerator.
- Note: When I am exceedingly lazy (most often the case these days), I forego the chocolate 'dip' and merely roll my truffles into various mixtures - chopped nuts, chocolate sprinkles, vari-coloured candy sprinkles, cocoa powder, chocolate shavings, coloured sugars -- still pretty -- less work.

- Combine peanut butter, cocoa powder, honey, coconut oil, butter, and vanilla bean paste in a saucepan over low heat; cook, stirring constantly, until melted and smooth, 3 to 5 minutes. Remove saucepan from heat and transfer peanut butter mixture to a bowl.
- Refrigerate mixture, stirring every 5 minutes, until truffle mixture is firm yet sticky and soft enough to shape, about 15 minutes.
- Pour coconut flakes into a bowl. Drop truffle mixture, about 1 teaspoon per truffle, into coconut and roll to coat. Refrigerate until firm, about 15 minutes.

- Add chocolate chips, coconut milk, vanilla extract, and ground cinnamon to a bowl.
- Put in microwave and heat up for 30 seconds. Remove and stir. Microwave another 30 seconds, stir until smooth and chips are melted.
- Cover and place in refrigerator for 2-3 hours.
- Using a cookie scoop or a tablespoon, scoop out small balls and try to form into smooth balls. Place on parchment paper lined baking sheet.
- Add hazelnuts to a pan, heat over medium high heat and toast for 2-3 minutes minutes.
- Add hazelnuts to a food processor and blend until finely chopped. Remove and place in a small bowl.
- Roll individual truffles in cocoa powder, coconut flakes, or hazelnuts.
- Serve!

- Add oats, dates, banana, almonds, and coconut flakes to food processor and blend until a sticky and mold-able dough forms. If dough is too dry or crumbly, add more banana.
- Roll dough into balls with an almond on the inside, and refrigerate for 1-2 hours.
- Melt vegan chocolate chips in the microwave or in a double-boiler. Roll balls in chocolate using two forks and top with coconut flakes and almonds. Refrigerate until chocolate hardens. #Spoontip: For chocolate coating that won't melt on your fingers, temper the chocolate by heating it to 125°F in a double boiler, then cooling to 85°F by adding more chocolate chips and stirring.

- Grind the hazelnuts in a blender or food processor. Add the rest of the ingredients and process until you have a homogeneous mixture. If the mixture feels too soft, put it in the fridge for 10-15 minutes.
- Shape balls out of the mixture and roll them into desiccated coconut.
- Keep the truffles in the fridge. They'll need a few hours to harden up.

- Place the dates in a medium bowl and pour hot water over them. Let sit about 5 minutes until softened, then drain. Remove pits and stems.
- Place dates in the bowl of a food processor, along with cocoa powder, coconut oil, and vanilla extract. Secure lid and process until a completely smooth paste. Continue processing until mixture forms a ball. Scrape out of food processor with a spatula into a medium bowl.
- Scoop out rounded teaspoons of the truffle mixture and place balls, without rolling, on a parchment-lined plate. Repeat until all mixture has been divided. Keep a small bowl of warm water near your workstation. Dip your fingers in the water to help remove the mixture from the teaspoon.
- Place truffle balls in the freezer for about 5-10 minutes to firm up. Remove from the freezer then roll all pieces between your palms to create even spheres.
