- Heat the oil in a large pot or Dutch oven over medium-high heat. Season the chicken with ½ teaspoon each salt and pepper. Brown in batches, 4 to 6 minutes per side. Transfer to a plate; reserve the pot.
- Add the celery, carrots, onions, thyme, and garlic to the chicken drippings in the pot and cook, stirring, until the vegetables begin to soften, 5 to 7 minutes. Add the chicken, bay leaves, and 10 cups water. Bring to a simmer and cook until the chicken is cooked through, 25 to 30 minutes. Discard the bay leaves and transfer the chicken to a plate; let cool. Shred the chicken with 2 forks and return it to the pot (discarding the skin and bones).
- Whisk together ½ cup of the flour, 2 cups of the cooking liquid, and ¼ teaspoon each salt and pepper in a small bowl. Slowly whisk the flour mixture back into the pot and simmer until slightly thickened, 8 to 10 minutes.
- Make the dumplings: Whisk together the remaining 2 cups of flour, the baking powder, baking soda, and ¼ teaspoon each salt and pepper in a medium bowl. Whisk in the butter, buttermilk , and parsley. Reduce heat to low and drop the mixture into the broth in 8 large spoonfuls. Simmer, covered, until the dumplings are firm, 12 to 15 minutes. Serve the chicken and dumplings sprinkled with parsley.

- In a large stock pot over medium heat, melt the two tablespoons of butter and add the carrots, celery, onion, parsley and all the seasonings, salt through pepper. Cook until the vegetables are starting to soften, about 5 - 8 minutes.
- Add the cream of onion soup, chicken stock and shredded rotisserie chicken. Stir well. Bring to a low boil and reduce heat to a gentle simmer.
- To make the dumplings, whisk together the flour, baking powder and salt. Whisk together the milk and melted butter. Pour the milk mixture into the flour mixture and stir together with a spatula until a smooth ball of dough forms.
- Using a 1.5 tablespoon capacity cookie scoop, drop the dumpling batter balls into the simmering stew one at a time until all the dough has been used. The dough should make 15 dumplings.
- Cover the pot and allow to cook (without uncovering) on a low simmer for 25 minutes.
- Serve immediately.

- Melt butter in a stock pot over medium-high heat. Add celery, carrot, onion, garlic, bay leaves, thyme, salt, pepper, and poultry seasoning; cook and stir until flavors combine, about 5 minutes. Push vegetable mixture to the sides and add chicken; cook until browned, 3 to 5 minutes per side.
- Pour enough water over the chicken to cover by 3 inches; bring to a boil. Stir, scraping the browned bits off of the bottom of the pot. Reduce heat; simmer until chicken is tender, about 1 hour. Transfer chicken and carrots to a serving plate with a large slotted spoon; let cool.
- Ladle 1/4 cup cooking liquid into a bowl; cool slightly, about 5 minutes. Mix in 2 tablespoons flour. Stir back into the pot.
- Place 2 cups flour in a large bowl; cut in shortening with 2 knives until mixture forms pea-sized bits. Mix in chilled chicken broth until dough is combined.
- Turn dough out onto a floured work surface. Knead 5 to 6 times; pat down to 1-inch thickness. Sprinkle lightly with flour; roll out to about 1/8-inch thickness. Cut dough into squares with a sharp knife.
- Drop squares, in batches, into simmering cooking liquid, moving squares to the side with each addition. Partially cover pot; simmer until dumplings are firm, about 12 minutes. Separate any dumplings that stick together. Remove from heat; keep covered.
- Bone chicken; cut into bite-sized pieces and return to the pot. Chop carrot; return to the pot. Cool chicken and dumplings, about 30 minutes, before serving.

- Sauté the carrots, celery, and onions in 2 tablespoons of the butter in a large pot over medium high heat until softened a bit and beginning to brown (about 3 minutes).
- Add 1/4 cup flour, stir to coat.
- Add chicken broth (4 cups) and bring to a boil.
- Turn the heat down to simmer and add 1/2 cup milk and the chicken. Season with salt and pepper.
- Meanwhile, to make the dumplings, mix together the remaining 1 cup of flour, 1 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon fresh thyme leaves. Stir in the remaining 2 tablespoons of butter, melted, until flour mixture is crumbly looking. Add the remaining 1/2 cup of milk and stir until JUST combined. - Heat oil in Dutch oven (or a nice big pt that you have a lid for) on medium high heat, add cubed chicken and garlic. Stir; cooking until chicken is white.
- Add broth, bouillon, salt, pepper, bay leaf, and fresh vegetables to create a stew. Bring to a boil.
- Reduce heat on stew; simmer on low, covered, 30 minutes, or until chicken and vegetables are tender.
- While stew simmers, open biscuits and set out on a plate (to rise) or make your own biscuits.
- In separate container, mix flour and milk. After 30 minutes of simmering, remove bay leaf from broth, then whisk flour and milk into broth on stove. Stir well.

- Bring chicken stock to a boil. Add chicken and turn to simmer. Cook 20 to 25 minutes, then remove chicken. Cut into bite size pieces and set aside.
- Add butter to still simmering broth, then turn off heat and let butter melt.
- Beat 4 egg yolks until fluffy. Slowly add 1 c of the broth with butter to eggs. Add a tablespoon at a time and whisk for the first 3-4 additions to prevent eggs from scrambling.
- Add pepper and flour 1 c at a time. Mix with a fork until it forms a slightly sticky dough. Depending on humidity, you need anywhere between 2-3 cups of flour.
- Roll out dough on lightly floured surface to 1/4" thick. Cut into strips.
- Bring broth back to a boil and add salt. Drop in noodles a few at a time. Cook until all dumplings rise to the surface, then simmer 3 minutes more.
- Add cut up chicken, stir and let broth reduce to desired consistency.

- Bring broth and water to a boil in large pot. Add onion, celery, carrots, salt and pepper. (Remember you have a lot of broth to flavor).
- Add chicken. Cover and simmer over medium heat for about 1 1/2 hours.
- Remove chicken to slightly cool.
- Turn heat on high.
- During this time rip each biscuit into 3 pieces, add to pot coating each piece with broth.
- Cover, cook for about 7 minutes.
- Remove lid, gently flip or stir dumplings to cook other side.
- Cover for 7-10 minutes until dumplings seem sturdy.
- Taste gravy, salt and pepper to taste.
- Remove skin from chicken, and rip from bone into chunks.
- Add chicken back to pot, simmer on low for about 5-10 minutes.
- The dumplings will look like a large amount, but they will shrink as they cook.
- Also, they will float and cover the entire pot, so don't worry!

SLOW COOKER CHICKEN AND DUMPLINGS

- Remove the chicken thighs from the packaging and pat them dry with a paper towel.
- Sprinkle the chicken thighs with salt, pepper, and garlic powder. Pat the spices into the chicken thighs.
- Place the chicken thighs into the slow cooker.
- Tie the fresh rosemary and fresh thyme into an herb bundle with bakers twine and add it to the slow cooker.
- Add the onion, garlic, broth, bay leaves, cloves, carrots, and mushrooms to the slow cooker.
- Cook on high for 3 hours, stirring occasionally.
- Prepare the dumpling batter. Begin prepping the dumpling batter at about 2 ½ hours through the cook time.
- Add the flour, salt and baking powder to a large mixing bowl and whisk to combine.
- Crack two eggs into the bowl, whisk the eggs, and then mix the eggs with the flour mixture.
- Finally, add the water to the bowl and mix. The batter should be sticky. Set aside.
- After 3 hours, remove the chicken thighs from the slow cooker, shred, and set aside.
- Also remove 2 cups of the cooking broth from the slow cooker and add ½ cup of flour to the hot broth. Whisk the two ingredients together. It will thicken quickly.
- Add the thick flour and broth mixture back into the slow cooker and whisk. This will thicken the soup.
- Next, Add the shredded chicken back into the slow cooker along with 1 teaspoon of salt, english peas, and heavy cream.
- Using a teaspoon scoop, begin scooping the dumpling batter with the teaspoon scoop. Add a heaping scoop of the dumpling batter into the slow cooker. Repeat until all the batter has been added to the slow cooker.
- Cover the slow cooker and cook the dumplings with the other ingredients for an additional 1 hour or until the dumplings begin to float to the top of the slow cooker.
- Uncover the slow cooker and make sure the soup is thick and creamy.
- Remove the herb bundle from the slow cooker, stir, and serve.
