6 bone-in, skin-on chicken thighs (about 2 pounds)
kosher salt and black pepper
4 stalks celery, chopped
4 carrots, chopped
2 onions, chopped
2 tablespoons fresh thyme leaves or 2 teaspoons dried thyme
2 cloves garlic, chopped
2 bay leaves
2.5 cups all-purpose flour
1 tablespoon baking powder
0.5 teaspoon baking soda
6 tablespoons (¾ stick) unsalted butter, melted
0.75 cup buttermilk
2 tablespoons chopped fresh flat-leaf parsley leaves, plus more for serving

Steps:

  • Heat the oil in a large pot or Dutch oven over medium-high heat. Season the chicken with ½ teaspoon each salt and pepper. Brown in batches, 4 to 6 minutes per side. Transfer to a plate; reserve the pot.
  • Add the celery, carrots, onions, thyme, and garlic to the chicken drippings in the pot and cook, stirring, until the vegetables begin to soften, 5 to 7 minutes. Add the chicken, bay leaves, and 10 cups water. Bring to a simmer and cook until the chicken is cooked through, 25 to 30 minutes. Discard the bay leaves and transfer the chicken to a plate; let cool. Shred the chicken with 2 forks and return it to the pot (discarding the skin and bones).
  • Whisk together ½ cup of the flour, 2 cups of the cooking liquid, and ¼ teaspoon each salt and pepper in a small bowl. Slowly whisk the flour mixture back into the pot and simmer until slightly thickened, 8 to 10 minutes.
  • Make the dumplings: Whisk together the remaining 2 cups of flour, the baking powder, baking soda, and ¼ teaspoon each salt and pepper in a medium bowl. Whisk in the butter, buttermilk , and parsley. Reduce heat to low and drop the mixture into the broth in 8 large spoonfuls. Simmer, covered, until the dumplings are firm, 12 to 15 minutes. Serve the chicken and dumplings sprinkled with parsley.

1 rotisserie chicken (white and dark meat shredded and skin removed)
6 small carrots (peeled and diced)
3 ribs celery (diced (about 1 cup))
1 sweet onion (diced)
1/2 cup fresh parsley (finely chopped)
2 tbsp unsalted butter
1 tsp salt
1/2 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp black pepper
4 cups chicken stock
1 can cream of onion soup (you can also use cream of chicken or cream of celery)
2 cups all-purpose flour
4 tsp baking powder
1 tsp salt
3/4 cup milk
4 tbsp unsalted butter (melted)

Steps:

  • In a large stock pot over medium heat, melt the two tablespoons of butter and add the carrots, celery, onion, parsley and all the seasonings, salt through pepper. Cook until the vegetables are starting to soften, about 5 - 8 minutes.
  • Add the cream of onion soup, chicken stock and shredded rotisserie chicken. Stir well. Bring to a low boil and reduce heat to a gentle simmer.
  • To make the dumplings, whisk together the flour, baking powder and salt. Whisk together the milk and melted butter. Pour the milk mixture into the flour mixture and stir together with a spatula until a smooth ball of dough forms.
  • Using a 1.5 tablespoon capacity cookie scoop, drop the dumpling batter balls into the simmering stew one at a time until all the dough has been used. The dough should make 15 dumplings.
  • Cover the pot and allow to cook (without uncovering) on a low simmer for 25 minutes.
  • Serve immediately.

¼ cup butter
2 ribs celery, quartered
1 large carrot, quartered
1 small onion, chopped
1 teaspoon mashed garlic
2 large bay leaves
½ teaspoon dried thyme

Steps:

  • Melt butter in a stock pot over medium-high heat. Add celery, carrot, onion, garlic, bay leaves, thyme, salt, pepper, and poultry seasoning; cook and stir until flavors combine, about 5 minutes. Push vegetable mixture to the sides and add chicken; cook until browned, 3 to 5 minutes per side.
  • Pour enough water over the chicken to cover by 3 inches; bring to a boil. Stir, scraping the browned bits off of the bottom of the pot. Reduce heat; simmer until chicken is tender, about 1 hour. Transfer chicken and carrots to a serving plate with a large slotted spoon; let cool.

  • Bone chicken; cut into bite-sized pieces and return to the pot. Chop carrot; return to the pot. Cool chicken and dumplings, about 30 minutes, before serving.

4 tablespoons butter (divided)
2 carrots (diced small)
2 stalks celery plus their leaves (diced)
1 onion (diced)
1 1/4 cup all-purpose flour (divided)
4 cups low sodium chicken stock/broth
1 cup whole milk (divided)
1 teaspoon kosher salt
1 teaspoon baking powder
1 teaspoon chopped fresh thyme leaves (or 1/2 teaspoon dried, plus more for garnish)
2 cups cooked diced or shredded chicken
extra salt and pepper

Steps:

  • Sauté the carrots, celery, and onions in 2 tablespoons of the butter in a large pot over medium high heat until softened a bit and beginning to brown (about 3 minutes).
  • Add 1/4 cup flour, stir to coat.
  • Add chicken broth (4 cups) and bring to a boil.
  • Turn the heat down to simmer and add 1/2 cup milk and the chicken. Season with salt and pepper.
  • Meanwhile, to make the dumplings, mix together the remaining 1 cup of flour, 1 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon fresh thyme leaves. Stir in the remaining 2 tablespoons of butter, melted, until flour mixture is crumbly looking. Add the remaining 1/2 cup of milk and stir until JUST combined. Do NOT over mix, or your dumplings may be dense.
  • Add spoonfuls of the dumpling mixture to the simmering pot- I recommend using a small cookie scoop for this (a tablespoon can also be used).
  • Cover and simmer on low for 15 minutes, or until dumplings are fluffy, cooked, and float to the top. No peeking!
  • Serve garnished with extra fresh thyme and fresh ground pepper, if desired.

In 2004 we came up with this, and we've been making it (to rave reviews from guests) ever since! Straight forward and simple, the trickiest part is remembering to put the flour and milk in AND remove the Bay Leaf. We hope you enjoy this "comfort food" as much as we do!

1 1/2 lbs chicken, boneless skinless breasts, cut into one-inch cubes
2 garlic cloves
2 tablespoons oil
3 cups vegetable broth (or water)
2 teaspoons chicken bouillon
1 teaspoon salt
1/4 teaspoon pepper, freshly cracked
1 bay leaf
1/2 onion, chopped
4 stalks celery, sliced
5 carrots, sliced
optional chopped fresh broccoli
optional 3 Tablespoons, fresh snipped parsley
optional corn (fresh or frozen)
1/3 cup flour
1/2 cup milk
14 ounces Pillsbury Grands refrigerated buttermilk biscuits (8 biscuits)

Steps:

  • Heat oil in Dutch oven (or a nice big pt that you have a lid for) on medium high heat, add cubed chicken and garlic. Stir; cooking until chicken is white.
  • Add broth, bouillon, salt, pepper, bay leaf, and fresh vegetables to create a stew. Bring to a boil.
  • Reduce heat on stew; simmer on low, covered, 30 minutes, or until chicken and vegetables are tender.
  • While stew simmers, open biscuits and set out on a plate (to rise) or make your own biscuits.
  • In separate container, mix flour and milk. After 30 minutes of simmering, remove bay leaf from broth, then whisk flour and milk into broth on stove. Stir well.
  • Add biscuits to top of stew. Cover and continue cooking on low heat 15 minutes.
  • Let stand a few minutes before serving.

2 lb boneless, skinless chicken breasts
6 c low sodium chicken stock
4 egg yolks
2-3 c flour
1 t pepper
1/4 c butter
salt, to taste

Steps:

  • Bring chicken stock to a boil. Add chicken and turn to simmer. Cook 20 to 25 minutes, then remove chicken. Cut into bite size pieces and set aside.
  • Add butter to still simmering broth, then turn off heat and let butter melt.
  • Beat 4 egg yolks until fluffy. Slowly add 1 c of the broth with butter to eggs. Add a tablespoon at a time and whisk for the first 3-4 additions to prevent eggs from scrambling.
  • Add pepper and flour 1 c at a time. Mix with a fork until it forms a slightly sticky dough. Depending on humidity, you need anywhere between 2-3 cups of flour.
  • Roll out dough on lightly floured surface to 1/4" thick. Cut into strips.
  • Bring broth back to a boil and add salt. Drop in noodles a few at a time. Cook until all dumplings rise to the surface, then simmer 3 minutes more.
  • Add cut up chicken, stir and let broth reduce to desired consistency.

This recipe is a family favorite. The few people that know I use canned biscuits cannot believe it! I think they are better than homemade. This is the only leftovers that get eaten in my house until they are gone. Even the people I work with made me bring some in after seeing them when I brought them to lunch!!

3 -4 chicken breast halves
1 (32 ounce) can chicken broth or 1 (32 ounce) can stock
32 fluid ounces water
1 large onion (chopped)
1 stalk celery (chopped)
1 large carrot (sliced)

2 (10 ounce) cans Pillsbury Grands refrigerated buttermilk biscuits

Steps:

  • Bring broth and water to a boil in large pot. Add onion, celery, carrots, salt and pepper. (Remember you have a lot of broth to flavor).
  • Add chicken. Cover and simmer over medium heat for about 1 1/2 hours.
  • Remove chicken to slightly cool.
  • Turn heat on high.
  • During this time rip each biscuit into 3 pieces, add to pot coating each piece with broth.
  • Cover, cook for about 7 minutes.
  • Remove lid, gently flip or stir dumplings to cook other side.
  • Cover for 7-10 minutes until dumplings seem sturdy.
  • Taste gravy, salt and pepper to taste.
  • Remove skin from chicken, and rip from bone into chunks.
  • Add chicken back to pot, simmer on low for about 5-10 minutes.
  • The dumplings will look like a large amount, but they will shrink as they cook.
  • Also, they will float and cover the entire pot, so don't worry!
  • Enjoy, they are delicious!

2 lbs. bone-in chicken thighs (that was 4 large chicken thighs from Trader Joes)
1 teaspoon kosher salt
½ teaspoon ground pepper
1 teaspoon garlic powder
1 medium yellow onions (diced)
4 cloves garlic (peeled and minced)
6 cups warm chicken broth
10 sprigs fresh thyme
4 sprigs fresh rosemary
2 bay leaves
1 teaspoon whole cloves
4 cups carrots (cut into 2 inch chunks)
8 oz. button mushrooms
1 cup uncooked english peas
½ cup heavy cream
1 teaspoon table salt
½ cup all purpose flour
2 cups all-purpose flour
1 teaspoon salt
1/4 teaspoon baking powder
2 eggs
1/2 cup water

Steps:

  • Remove the chicken thighs from the packaging and pat them dry with a paper towel.
  • Sprinkle the chicken thighs with salt, pepper, and garlic powder. Pat the spices into the chicken thighs.
  • Place the chicken thighs into the slow cooker.
  • Tie the fresh rosemary and fresh thyme into an herb bundle with bakers twine and add it to the slow cooker.
  • Add the onion, garlic, broth, bay leaves, cloves, carrots, and mushrooms to the slow cooker.
  • Cook on high for 3 hours, stirring occasionally.
  • Prepare the dumpling batter. Begin prepping the dumpling batter at about 2 ½ hours through the cook time.
  • Add the flour, salt and baking powder to a large mixing bowl and whisk to combine.
  • Crack two eggs into the bowl, whisk the eggs, and then mix the eggs with the flour mixture.
  • Finally, add the water to the bowl and mix. The batter should be sticky. Set aside.
  • After 3 hours, remove the chicken thighs from the slow cooker, shred, and set aside.
  • Also remove 2 cups of the cooking broth from the slow cooker and add ½ cup of flour to the hot broth. Whisk the two ingredients together. It will thicken quickly.
  • Add the thick flour and broth mixture back into the slow cooker and whisk. This will thicken the soup.
  • Next, Add the shredded chicken back into the slow cooker along with 1 teaspoon of salt, english peas, and heavy cream.
  • Using a teaspoon scoop, begin scooping the dumpling batter with the teaspoon scoop. Add a heaping scoop of the dumpling batter into the slow cooker. Repeat until all the batter has been added to the slow cooker.
  • Cover the slow cooker and cook the dumplings with the other ingredients for an additional 1 hour or until the dumplings begin to float to the top of the slow cooker.
  • Uncover the slow cooker and make sure the soup is thick and creamy.
  • Remove the herb bundle from the slow cooker, stir, and serve.

Combine onion, garlic, whole carrot, and celery in the pot and saute until onions are soft and translucent. Pour water over sauteed vegetables and add browned chicken back into the dutch oven. Stir in poultry seasoning and Better than Bouillon. Put the top on and cook in the oven until the chicken is tender and falling off the bone, about 2 hours.
  • Take the pot out of the oven and remove the chicken and carrot. Once the chicken is cool enough to handle, remove the bones and dice up the chicken meat. Transfer chicken back into dutch oven and add frozen mixed vegetables and heavy cream. Cook on medium-low heat and bring to a simmer for about 10 minutes while you make dumpling dough.
  • In a medium bowl, whisk together Ketonia mix, baking powder, salt, and dried parsley. Add heavy cream and mix well. With a large spoon, roughly scoop 6 balls of dough and carefully place them in the simmering chicken stew. Place the lid back on the dutch oven and steam dumplings for 15 minutes.
