6 cloves crushed garlic
2 cups seasoned dry bread crumbs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a small saucepan melt butter/margarine with garlic. Dip chicken pieces in butter/garlic sauce, letting extra drip off, then coat completely with bread crumbs.
  • Place coated chicken in a lightly greased 9x13 inch baking dish. Combine any leftover butter/garlic sauce with bread crumbs and spoon mixture over chicken pieces. Bake in the preheated oven for 45 minutes to 1 hour.

You can use any butter or margarine you like. Also, fresh or minced garlic in a jar works well. Adjust the amount of garlic to your taste.

8 tablespoons (1 stick) unsalted butter, divided
1 1/2 pounds medium shrimp, peeled and deveined
Kosher salt and freshly ground black pepper, to taste
5 cloves garlic, minced
1/4 cup chicken stock
Juice of 1 lemon, or more, to taste
2 tablespoons chopped fresh parsley leaves

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium high heat. Add shrimp, salt and pepper, to taste. Cook, stirring occasionally, until pink, about 2-3 minutes; set aside. Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1 minute. Stir in chicken stock and lemon juice. Bring to a boil; reduce heat and simmer until reduced by half, about 1-2 minutes. Stir in remaining 6 tablespoons butter, 1 tablespoon at a time, until melted and smooth. Stir in shrimp and gently toss to combine. Serve immediately, garnished with parsley leaves, if desired.

1 1/4 lbs. boneless skinless chicken breasts, (cut into 1 1/4-inch pieces)
2 Tbsp all-purpose flour
1 1/2 tsp Italian seasoning
Salt and freshly ground black pepper
1 Tbsp olive oil
3 Tbsp unsalted butter, (divided)
1 1/2 Tbsp minced fresh garlic ((4 cloves))
2 Tbsp finely chopped fresh parsley*

Steps:

  • Preheat a 12-inch non-stick skillet over medium-high heat.
  • Dab chicken on all sides dry with paper towels.
  • Sprinkle flour, Italian seasoning, and desired amount of salt and pepper (I use about 3/4 tsp salt and 1/2 tsp pepper) over chicken. Toss well to evenly coat (all flour should stick to chicken and not be left behind on cutting board, keep tossing if needed).
  • Add 1 Tbsp olive oil and 1 Tbsp butter to skillet, butter should melt quickly. Tilt pan to evenly coat.
  • Add chicken in an even layer, work to leave some space between pieces so they'll brown rather than steam.
  • Let cook until nicely golden brown on bottom, about 3 minutes then flip to opposite side and cook 2 minutes longer, or until nearly cooked through.
  • Add remaining 2 Tbsp butter in small pieces, along with garlic and parsley. Cook 1 minute longer (chicken should be 165 in center and no longer be pink).
  • Serve right away.

divided 2 tsp butter
1 pound yukon gold potatoes, cut to a thickness of 1/2 inches
3 minced garlic cloves
1 tsp chopped thyme
1 tsp chopped rosemary
1 tsp chopped oregano
1 1/4 pound sirloin steaks, cubed to 1 inch
a pinch of salt and pepper

Steps:

  • Heat the olive oil and butter in a large cast iron skillet over medium high heat, then add the potatoes, garlic, thyme, rosemary, and oregano.
  • Cook for 3 minutes, then toss and cook for another 3 minutes, or until fork tender.
  • Remove from the pan and place on a plate.
  • Preheat the skillet over high heat.
  • Add the steak bits and 1 tablespoon butter.
  • Allow the steaks to sear for a minute before continuing to stir them until golden brown.

700 g (1½lb) Brussels sprouts
1 tbsp olive oil
2 tbsp butter
3 garlic cloves (crushed)
1 tsp chilli flakes / red pepper flakes
salt and pepper
2 tsp lemon juice

Steps:

  • Using a sharp knife, halve the brussels sprouts.
  • Snap off any outer leaves that might be browning and discard. Finely chop/mince the garlic and set aside.
  • Heat a large skillet or pan over medium high heat.
  • Add a tablespoon of olive oil then add the halved brussels sprouts. Season with salt and pepper.
  • Allow to sauté, tossing regularly, allowing the sprouts to caramelize.
  • Once crisp tender, stir in the butter, garlic and chilli flakes (I use up to a half teaspoon for a nice spicy bite).
  • Cook for another 4-5 minutes until the sprouts are cooked through (they're done when the tip of a sharp knife can easily be inserted).
  • Taste and adjust seasoning with salt and pepper and a squeeze of lemon juice then serve.
