After getting this pea salad several times from my local grocer's deli, I decided to recreate it and asked what the ingredients were. The Deli was kind enough to share the recipe with me.

Number Of Ingredients 8

Ingredients

16 oz pkg. frozen peas
1 c water chestnuts, drained and cut into smaller pieces
1/2 c green onions, chopped (more can be added to your taste)
1 c cubed american cheese
3/4 c hellman's mayonnaise
1/4 c sour cream
3 slice crisp bacon, crumbled (optional)
salt and pepper to taste

Steps:

1. Combine the peas, water chestnuts, cheese, and green onions together in large bowl. Mix the mayonnaise and sour cream well (can add a little more sour cream; use your own judgment). Mix this mixture with the peas, water chestnuts, cheese and green onions. Add salt and pepper. Either sprinkle the crumbled bacon on top or mix in with the salad.
2. This is best if chilled several hours before serving. ENJOY!

1 (12 ounce) can chunk light tuna in water, drained
1 (15 ounce) can peas, drained
¼ cup reduced-fat mayonnaise, or as needed
1 teaspoon garlic powder
1 teaspoon ground black pepper

Steps:

Place the tuna into a bowl with the peas, and lightly stir to break up the tuna and combine with the peas. Add the mayonnaise, garlic powder, and pepper, and stir to mix well.

1 (16 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can garbanzo beans or chickpeas, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) package frozen corn, thawed
1/2 cup fresh cilantro, chopped
1/2 cup green pepper, chopped
1 small jalapeno pepper, seeded and finely chopped
1/2 cup balsamic vinegar
1/4 cup olive oil
1 teaspoon chili powder
1/2 teaspoon granulated sugar

Steps:

In a large bowl, combine the first 10 ingredients.
In a jar with a tight-fitting lid, combine the vinegar, oil, chili powder and sugar; shake well.
Pour over bean mixture; toss to coat.
Cover and refrigerate overnight.
Serve with slotted spoon.
