Poached Eggs, Tasso Ham, Griddle Tomato and Cajun Hollandaise with English Muffins image

Provided by Bobby Flay

Time 40m

Yield 4 servings

Number Of Ingredients 24

3 cups water
1 tablespoon white wine vinegar
4 eggs
Kosher salt and freshly ground black pepper
Canola oil, to coat
8 ounces tasso ham, sliced into 1/4-inch thick slices
4 plum or heirloom tomatoes, sliced in half crosswise
4 English muffins, split and toasted
Cajun hollandaise, to top, recipe follows
Cajun Hollandaise
2 tablespoons Spanish paprika
2 teaspoons New Mexican chile powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried oregano
1/4 teaspoon chile de arbol
1/8 teaspoon cayenne powder
3 large egg yolks, lightly beaten
1 tablespoon fresh lemon juice
3/4 cup (1 1/2 sticks) unsalted butter, clarified and melted
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Dash Worcestershire sauce

Steps:

  • Heat the water and vinegar until simmering in a large high-sided frying pan. Break each egg into a cup and gently add to the water. Poach the eggs for 4 to 5 minutes, or until the yolk is nearly or almost set. Remove the eggs from the pan with a slotted spoon to drain the liquid and place on a plate. Season the top with salt and pepper.
  • For the tasso ham and tomatoes: Heat the oil in a cast iron griddle or in a large cast iron pan until it begins to shimmer. Cook the ham for about 1 minute per side or until lightly golden brown. Remove to a plate lined with paper towels. Cook the tomatoes for about 20 seconds per side until lightly golden brown and just warmed through.
  • Serve the poached eggs with toasted English muffins, ham and tomatoes and Cajun hollandaise.
  • Hollandaise:
  • Stir together the paprika, chile powder, garlic powder, onion powder, thyme, oregano, chile de arbol, and cayenne pepper in a small bowl.
  • Place the egg yolks and lemon juice in a medium stainless steel bowl, set over a pot of simmering water not touching the bottom of the bowl. Whisk the yolks until pale yellow and fluffy. Slowly add the clarified melted butter, a few tablespoons at a time and whisk until thickened. Season the sauce with 2 teaspoons of the spice mixture, salt, and pepper, and a dash Worcestershire sauce. Keep warm until ready to use.

Scrambled Eggs over Asparagus image

Provided by Claire Robinson

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 7

1 1/2 pounds fresh asparagus, trimmed and cleaned
2 tablespoons olive oil
1 teaspoon sea salt, plus more for seasoning
Freshly ground black pepper
6 eggs
3 tablespoons milk
2 tablespoons butter

Steps:

  • Preheat your oven to 425 degrees F.
  • Clean and trim the asparagus by breaking off 1 asparagus end at its natural breaking point and lining up the tip end next to the remaining stalks. Trim them to the broken asparagus' length. Compost the woody ends. Lay the asparagus out on a rimmed sheet pan. Drizzle with the olive oil and season with salt and pepper.
  • Place them in the preheated oven and cook for 15 minutes or until tips are browned and starting to crisp.
  • In a small cup, crack each egg. Add each egg to a mixing bowl, stir in the milk, and season with salt and pepper.
  • Beat the egg mixture with a whisk, in a figure 8 pattern until the ingredients are completely blended together. In a nonstick saute pan, melt the butter over medium-low heat. Once butter has melted, add the eggs and cook over low heat, stirring gently with a silicone spatula. Keep the eggs moving, continuing to cook until they are cooked but soft, about 15 to 20 minutes.
  • Warm the serving platter or serving plates in a preheated low temperature oven, or microwave the plate for 6 to 10 seconds. Scatter roasted asparagus on the heated plate, and spoon the scrambled eggs over the asparagus. Eat immediately and enjoy!

POACHED EGGS IN CHORIZO-TOMATO STEW WITH GARLIC CROUTONS

Poached Eggs in Chorizo-Tomato Stew with Garlic Croutons image

This recipe can be adapted to serve 6 to 8 by simply bumping up the bread, eggs and broth used. Add on 1 slice of bread and 1 egg preserving and 1 cup of broth per 2 additional servings.

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 17

2 tablespoons extra-virgin olive oil, 2 turns of the pan plus some for drizzling
3/4 pound chorizo sausage, in packaged meats case near kielbasa, thinly sliced
3 cloves garlic, 2 chopped and 1 crushed
1 large yellow onion, chopped
2 ribs celery, chopped
1 large carrot, peeled and chopped
6 medium size red potatoes, halved and thinly sliced
4 sprigs fresh thyme
Salt and pepper
1 (28-ounce) can fire roasted diced tomatoes (recommended: Muir Glen)
2 cups chicken broth
4 thick slices crusty farm house, country style bread
1/2 cup flat- leaf parsley leaves, a few large handfuls, picked
1 lemon, zest
1 orange, zest
2 tablespoons white wine vinegar, eyeball it
4 eggs, 1 per serving

Steps:

  • Preheat a medium soup pot over medium-high heat with 2 turns of the pan of olive oil, about 2 tablespoons. Add the chorizo and cook, stirring frequently, 3 minutes. Add the 2 cloves chopped garlic, onion, celery, carrot, potatoes, thyme, salt and pepper, cook for 3 to 4 minutes. Add the tomatoes and chicken broth and bring up to a bubble, turn the heat down to medium low and simmer for 10 minutes, or until slightly thickened.
  • Fill a medium skillet with warm water. Bring water to a gentle simmer over medium low heat. As the water is coming up to a simmer proceed with making the garlic croutons and the zesty parsley sprinkle.
  • Toast the bread in the broiler or in a toaster oven. Once the bread is toasted, rub with the cracked garlic and then drizzle extra-virgin olive oil over it and reserve.
  • Pile the parsley leaves, lemon zest and orange zest on a cutting board. Run your knife through the pile until the parsley is finely chopped and the zests are completely incorporated into the parsley, reserve.
  • Once the water is at a bubble for poaching the eggs, pour the vinegar into the simmering water. Crack an egg into a small bowl. Gently pour the egg into the simmering water. Repeat with the remaining 3 eggs. Cook eggs for about 2 minutes for runny yolks, or about 4 for solid yolks. Do not allow the water to boil. Carefully remove the eggs with a slotted spoon to a towel-lined plate to drain.
  • To serve, pull thyme stems from chorizo-tomato stew, then arrange the garlic croutons in the bottom of 4 shallow soup bowls, ladle some of the stew on top of the garlic croutons, set eggs in place and sprinkle dish with zesty parsley sprinkle and serve.

  • Add the basil, garlic, red wine vinegar, 1/4 cup of the olive oil to a blender or food processor. Season with salt, pepper, and red pepper flakes and blend until well combined. With the motor running, add the remaining 1/4 cup of the oil to the blender and blend until smooth. Taste and adjust seasoning if needed. Transfer to a jar with a sealed lid and store in the fridge (up to 3-4 days) until ready to serve.
  • Add a tablespoon of olive oil to a large skillet over medium heat. Add the minced garlic, stirring constantly for about 30 seconds, then add the tomatoes to the pan. Season with salt and pepper, and toss well to coat with the oil and garlic. Cook 5-6 minutes, until tomatoes start to blister on all sides, then remove the tomatoes from the pan and let cool.
  • Lightly toast the bread. Then divide the arugula between each piece. Drizzle with a little bit of olive oil. Next, break the burrata up and divide on top of the arugula. Top the burrata layer with the roasted tomatoes. Season everything with a little salt and pepper.
  • Next fill a small saucepan with about 2/3 cup full of water and bring to a boil over high heat. Once boiling, turn the heat down and let the water relax into a brisk simmer. Add 1/4 teaspoon of salt, and 1/2 teaspoon of white vinegar to the saucepan.
