8 bananas
3 tablespoons flour
1/3 cup cornflour (cornstarch)
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
1 egg white
1/2 cup caster sugar
oil (for deep frying)

Steps:

  • Peel bananas and cut in half.
  • Sift flour, cornflour, baking powder and salt into bowl.
  • Mix to smooth batter with the milk.
  • Beat egg white until soft peaks form, fold lightly into batter.
  • Drop banana pieces into batter, then deep fry in hot oil until golden brown.
  • Remove and drain on absorbent paper.
  • Toss in sugar.
  • (frying time is approx) Serve hot with ice cream or whipped cream.

Much better for you than deep fried fritters. They go well with any fruit--canned with light syrup are good, but I like just fresh fruit as well, especially strawberries.

1/2 cup cornmeal
1/2 cup flour
3 tablespoons light brown sugar
1 teaspoon baking powder
2 egg whites, lightly beaten
1/3 cup skim milk
1 tablespoon margarine, melted
2 tablespoons vegetable oil
1 cup canned blueberries in light syrup or 1 cup fresh blueberries

Steps:

  • Heat oven to 250°F degrees.
  • Mix together cornmeal, flour, sugar, and baking powder.
  • Combine egg whites, milk and margarine, mix well.
  • Pour milk mixture into the dry ingredients, stir until just smooth (do not over mix).
  • In a large non stick skillet heat the 2 tbsp oil, heat until quite hot but not smoking.
  • Drop in a 1/4 cup of batter for each fritter.
  • Cook approx 4-6 minutes on each side.
  • Keep warm in the oven covered with foil until you have cooked all the fritters.
  • Serve with Blueberries or other fruit.

½ cup light brown sugar
1 ½ teaspoons ground cinnamon
1 ½ cups cold butter, cut into tablespoon-sized pieces
1 ½ cups all-purpose flour, divided, or more as needed
2 teaspoons ground cinnamon
1 teaspoon baking powder
¼ teaspoon salt
1 cup buttermilk
2 eggs
2 tablespoons white sugar
1 quart vegetable oil, or as needed
toothpicks
¼ cup confectioners' sugar, or as needed

Steps:

  • Whisk brown sugar and 1 1/2 teaspoons cinnamon together in a shallow bowl. Dip each piece of butter into cinnamon-sugar mixture to coat completely. Place butter pieces in a single layer on a parchment paper-lined baking sheet. Freeze until hard, 8 hours to overnight.
  • Stir 1 cup flour, 2 teaspoons cinnamon, baking powder, and salt together in a bowl. Beat buttermilk, eggs, and white sugar together in another bowl; add flour mixture to buttermilk mixture and beat until smooth. Gradually stir remaining flour into buttermilk mixture until desired batter consistency is reached.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Poke a toothpick into the center of each frozen piece of butter. Dip butter into batter to coat completely.
  • Working in batches, carefully drop coated butter pieces into hot oil and cook, turning occasionally, until golden brown and puffed, about 2 minutes. Transfer fried butter to a paper-towel lined plate and dust with confectioners' sugar.

1 teaspoon baking powder
2 tablespoons confectioners' sugar
1/2 teaspoon salt
1/3 cup milk
2 eggs, separated
1 cup fresh blueberries

Steps:

  • Sift together flour, baking powder, sugar and salt together.
  • Make a well in the center of the dry ingredients and pour in milk.
  • Add lightly beaten egg yolks.
  • Blend together till batter is smooth (add a little more milk if needed to make the batter smooth).
  • Fold in fresh blueberries.
  • Fold in stiffly beaten egg whites.
  • Chill, covered, for 30 minutes.
  • Form into fritters by making balls with two spoons dipped into hot water, and deep-fry (375 F) until golden brown.
  • Serve with blueberry syrup.

Add the blueberries and fold in. You'll want lots of blueberries, so add until the dough is well spotted with fruit. You almost can't have too many blueberries!
  • *Tips: Have a cooling rack ready, set over a baking sheet. For deep frying, use a heavy, deep pot if you don't have a deep fryer. Have a lid handy, just in case. You'll need 2-3 inches of oil. If you have a thermometer, heat oil to 375° F. Without a thermometer, test oil heat by dropping a bit of batter in. It should float, sizzle immediately, and turn golden within a minute or so.
  • In a heavy, deep pot, heat oil to 375° F. Drop fritters by the spoonful in to hot oil. Cook until underside is deep golden brown. Flip over and cook the other side. Remove to a cooling rack set on top of a baking sheet. Continue until all fritters are cooked.
