MASHED POTATOES WITH GARLIC, BASIL AND CHIVES
I found this gem in a cookbook called Festive Recipes for the Holidays. Gave it some personal tweaks. Like more garlic. Can one have too much garlic? I don't think so! (Unless you're a vampire!)

Steps:
- Peel potatoes and chop into 2-inch pieces.
- Peel garlic cloves, and halve them if they are very large.
- Fill a large pot 3/4 full with water, salt lightly and bring to a boil.
- Add potatoes and garlic to the water and cook, until potatoes are fork-tender, about 20-25 minutes, then drain.
- Place potatoes in a bowl, and add butter.
- Mash potatoes and garlic, and add basil, chives, and enough milk to achieve a creamy but not runny texture.
- Season the potatoes with salt and pepper.
- Serve.

Steps:
- Place potatoes and garlic in small stock pot,cover with water.
- Add 1 tsp of the salt and bring to boil over high heat.
- Cook until tender,about 25 minutes.
- Drain in colander.
- Place basil in bowl of food processor,process until finely chopped,with motor still running.
- Gradually add olive oil.
- Set aside.
- Mash potatoes and garlic using ricer or food mill (gives potatoes a better texture,but if you don't have either,just mash them the usual way!).
- Transfer to large bowl and add cream,basil-oil mixture,the remaining 1 tsp of salt,and pepper.
- Mix well.
- Serve Suggested wines:Cabernet Sauvignion or Pinot Noir.
GARLIC, BASIL & OLIVE OIL MASH
Boil whole garlic cloves with your potatoes then mash together with lean skimmed milk, fresh basil and a hint of extra virgin olive oil

- Mash, peel and all, in a food mill. (The little bit of skin that goes through is not a problem.). Stir in the basil and buttermilk to a creamy consistency; season with salt and pepper.

ROASTED GARLIC MASHED POTATOES

- Preheat oven to 425 degrees F.
- Slice off the very top of the garlic head. Drizzle head with olive oil and wrap in foil. Place on a sheet tray and bake until tender and fragrant, roughly 35 minutes. Remove from the oven and let cool. Remove the cloves and mash with a wooden spoon.
- Place potatoes in a large stockpot and cover with cold water. Add salt and bring to a boil. Cook until fork tender and drain. Mash the potatoes until smooth.
- Meanwhile heat butter and cream until butter melts. Add the roasted garlic and potatoes and mash all together.
- Taste and season with salt and pepper. Serve immediately.
BASIL GARLIC MASHED POTATOES

- Scrub potatoes, but do not peel them. Cook in water to cover, with garlic, until tender, about 10 minutes. Mash potatoes, still unpeeled, in a food mill or with a mashing tool; pick out and discard large pieces of skin. Stir in the basil and buttermilk; season with salt and pepper, and serve. (Potatoes can be made in advance and refrigerated. Before serving, put potatoes in glass dish, cover with plastic wrap and reheat in microwave oven for 4 to 6 minutes on high setting. Stir once or twice while reheating. If potatoes become too dry, stir in a little buttermilk.)

GARLIC MASHED POTATOES

- Preheat the oven to 375 degrees F.
- Slice the top third off the head of garlic. Place on a piece of aluminum foil and drizzle with the olive oil. Sprinkle with the thyme leaves and some kosher salt and pepper, then place the top back on the garlic. Wrap in the foil and roast until the garlic is brown and very soft, about 45 minutes.
- Meanwhile, cover the potatoes with cold water in a large pot. Add 1 tablespoon of kosher salt to the water and bring to a simmer over medium-high heat, about 15 minutes. Simmer until the potatoes are fork-tender, another 15 to 20 minutes.
- Drain the potatoes and return them to the pot. Add the hot chicken broth. Squeeze the roasted garlic out of its skin into a small bowl, drizzling in any olive oil from the foil. Mash the garlic smooth with a fork. Add the garlic to the potatoes and mash until smooth using an immersion blender fitted with the whisk attachment. Add more broth as needed. Once smooth, add three-quarters of the chives and some sea salt and black pepper, then mix through.
- Tip into a serving bowl and garnish with the remaining chives.
MASHED POTATOES WITH GARLIC AND BASIL

- Peel the potatoes and cut them into 3/4-inch cubes. Place the pieces in saucepan and cover with water. Add the garlic and salt.
- Bring to a boil and simmer for 15 minutes or until the potatoes are tender. Do not overcook.
- Drain. Discard garlic. Put the potatoes through a food mill or ricer, or mash them well with a potato masher.
- Add the olive oil, and beat to blend. Add the warm milk, basil and pepper. Blend well. Serve piping hot.
GARLIC MASHED POTATOES
Steps:
- In a small saucepan, bring the garlic and oil to a boil, then turn the heat to low and cook uncovered for 5 minutes, or until the garlic is lightly browned. Turn off the heat and set aside. The garlic will continue to cook in the oil.
- Meanwhile, place the potatoes in a large pot of salted water, bring to a boil, and cook for 15 to 20 minutes, until the potatoes are very tender. With a slotted spoon, remove the potatoes from the water, reserving the cooking water, and remove the garlic from the oil, reserving the oil.
- Process the potatoes and garlic through a food mill fitted with the medium disk. Add the reserved olive oil, 2 teaspoons of salt, the pepper, cream, and 3/4 cup of the cooking water to the potatoes and mix with a wooden spoon. Add more cooking water, if necessary, until the potatoes are creamy but still firm. Season, to taste, and serve hot.

BASIL, GARLIC PLUS MASHED POTATOES
These potatoes have wonderful flavor from the added ingredients that they are cooked and mashed with. A bonus for any dinner. For a low fat version substitute lowfat sour cream instead of the cottage cheese & Buttermilk. I use 2 cubes of frozen fresh basil.instead of fresh chopped. I had some left over potatoes so I mixed some bread crumbs and Parmesan cheese, made pattie from the potato, coated the patties with the cheese crumbs, fried with light spray of Olive oil MMMM very good

- Cover the potatoes with water add the celery, onion, garlic& salt.
- Cook until tender (apprx 15-20 minutes).
- Remove celery& discard.
- Drain well through a sieve so you don't lose the onion& garlic.
