FAMILY FAVORITE OATMEAL PANCAKES
This recipe was from an old church cookbook and is a favorite breakfast treat in our family-kids and dad!

Steps:
- Pour milk over oats and let stand 2-5 minutes.
- Beat in eggs, oil, then remaining ingredients.
- Mixture will be thin.
- Fry on hot griddle.
- Serve with honey butter (equal parts of honey and butter beaten until smooth), or favorite topping.

Steps:
- Combine the oats and buttermilk in a bowl. Cover and refrigerate overnight.
- In the morning, add the egg and margarine.
- Stir just to blend.
- Sift dry ingredients together and add to wet mixture along with the extract.
- Stir to moisten.
- If too thick, add extra buttermilk.
- Cook on a sprayed griddle or skillet til bubbles appear, then flip and cook about the same amount of time.
- Serve with syrup.

Fannie Farmer's cookbook griddlecakes with 2 suggested changes. Oatmeal makes these pancakes hearty, while egg white makes them not so dense - perfectly balanced and great with real maple syrup. Recipe Note: it is best to have on hand extra flour & milk in case batter is too thin or thick. Add 1 tablespoon at a time to reach desired consistancy. note #2: updated recipe with corrections (a few typos originally)

Steps:
- Warm the milk in the microwave or on the stove.
- Pour milk over the oatmeal.
- Let sit 10 minutes or until cool. (If not cool enough after 10 minutes, put in fridge for a few minutes.).
- Once cooled, mix in flour, melted butter, honey, egg yolk, salt & baking powder. Don't overwork batter, just mix until there are no large chunks or clumps. Batter should be thick enough to slowly run off a lifted spoon. If it falls of spoon in clumps, add milk or water 1 tablespoon at a time. If it runs off quickly, add flour 1 tablespoon at a time.
- In a separate bowl, beat egg whites until light and frothy.
- Slowly fold the egg whites into the batter by hand, mixing only enough to get it mainly incorporated - the more you mix at this point, the denser your pancakes will be.
- Cook on a greased hot griddle. Serve immediately.
- Makes 16 silver dollar pancakes or 8 medium pancakes.

Steps:
- Beat all ingredients in a medium bowl with a hand beater until smooth. (For thinner pancakes, stir in 2 to 4 tablespoons additional milk).
- Grease a heated griddle, if necessary, with shortening, using a pastry brush. (To see if griddle is hot enough, sprinkle with a few drops of water. If bubbles skitter around, heat is just right).
- For each pancake, pour about 1/4 cup of batter onto the hot griddle.
- Cook until pancakes are puffed and dry around edges. Turn and cook other sides until golden brown. Serve with applesauce if desired.
- Makes 10 to 12 pancakes.
