GRAMMA'S DATE SQUARES



Gramma's Date Squares image

A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

1 ½ cups rolled oats
1 ½ cups sifted pastry flour
¼ teaspoon salt
¾ teaspoon baking soda
1 cup packed brown sugar
¾ cup butter, softened
¾ pound pitted dates, diced
1 cup water
⅓ cup packed brown sugar
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
  • In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
  • Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

My grandmother has made this recipe for years, and now that she can no longer do this herself, I have taken over the family tradition of preparing this great dessert. I hope you enjoy it as much as we do.

1 ½ cups quick-cooking oats
1 ¼ cups all-purpose flour
1 ¼ cups brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
¾ cup butter
½ pound dates, pitted and chopped
¾ cup water
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir oats, flour, brown sugar, baking soda, and baking powder together in a bowl; cut in butter using a pastry blender until mixture is mealy and butter pieces are uniformly small.
  • Press half of oat mixture evenly into the bottom of a 9x13-inch baking pan.
  • Cook dates with water in a small saucepan over medium heat until they fall apart and are easily mashed with a wooden spoon, about 10 minutes; remove from heat and stir in vanilla extract.
  • Spoon date mixture evenly over oat mixture in baking pan; sprinkle remaining oat mixture evenly over top and press into place.
  • Bake in the preheated oven until crust is golden at the edges, about 30 minutes; remove to cool completely on a wire rack. Cut into bars.

I will always remember how delicious these were and how everyone used to rave over them when Grandma would make them. I honestly dont remember how many these make but they are SO good, I just found the recipe and I am so excited!

1 3/4 cups Quaker oats
1 1/2 cups flour
1 teaspoon baking soda
3/4 cup melted shortening
1 cup brown sugar
1 package dates, chopped
1 cup hot water
1/2 cup brown sugar
1 teaspoon vanilla

Steps:

  • Mix oats, flour, and baking soda.
  • Add shortening.
  • Prepare filling by mixing chopped dates, hot water, brown sugar, and vanilla.
  • Put 1/2 dry mix in a baking pan.
  • Add filling.
  • Top with rest of dry mix.
  • Bake 20 minutes at 350, or until well browned.

  • Boil: dates, sugar and water until thick.
  • Bake 20-30 minutes in 375 F oven.
  • Cool before serving.

This is my Grandma B's version. She is diabetic and tends to cut the sugar way down in most of her baking. I don't like them super sweet so I make them as she does. They sell like hot cakes at a bake sale.

1 1/2 cups rolled oats
1 1/4 cups all-purpose flour
1/2 cup brown sugar, packed
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
2 cups dates, pitted and chopped
3/4-1 cup water

Steps:

  • Preheat oven to 350.
  • Crumb Layer.
  • Combine first 5 ingredients in a large bowl. Cut in butter until mixture turns to a course crumb. Press slightly more than 1/2 of this mixture into the bottom of a 9x9 pan. Set aside rest of crumbs.
  • Date mixture.
  • Combine dates and water in a medium pot. Bring to a boil on medium heat. Reduce to medium low heat and simmer uncovered for 10 minutes. Dates will become soft and form a thick filling. Let cool for a few minutes then spread on bottom layer of crumbs.
  • Sprinkle top layer over the filling to completely cover. Slightly press down on top crumbs. Bake at 350 degrees for 30 minutes or until top is golden brown. Let stand on wire rack till cool. Slice into squares.

As a child my grandmother's date squares were my favorite. She over cooked the main course and didn't use spices of any sort. But the woman could bake. Her recipe is long lost and I have searched for a recipe that is close. I think this one is. My American son in law, devoured these. Found this recipe in the Toront Sun. Make sure to use rolled oats, not instant. Prep time is a guess but includes sitting time before heating.

Number Of Ingredients 10

2 1/2 cups old fashioned oats
1 1/4 cups all-purpose flour
1 cup packed brown sugar
1 tablespoon ground cinnamon
1/4 teaspoon salt
1 cup butter, room temperature
2 -14 cups pitted dates (packaged dates)
3/4 cup granulated sugar
2 tablespoons fresh lemon juice
2 tablespoons orange juice

Steps:

  • Line bottom and sides of a 8 inch (2L) cake pan with parchment paper, leaving 1 inch extending over 2 edges for handles or grease and set aside.
  • Filling: In a heavy bottomed saucepan, stir together 2 cups (500ml) water, dates, sugar and lemon and orange juices; let stand for 30 minutes. Bring to boil; reduce heat to medium and boil gently, stirring often, until thick enough to mound on a spoon, about 10 minutes. Let cool.
  • In a large bowl, whisk together oats, flour, sugar, cinnamon and salt. With a pastry blender, or if you do not have one then use 2 knives, cut the butter into the dry ingredients until the mixture is crumbly. Press half evenly into the bottom of the prepared pan. Spread date mixture evenly over the base. Top with the remaining oat mixture, pressing it down lightly.
  • Bake in centre of 350 F oven until light golden on top, about 40 minutes. Let stand in pan on rack until thoroughly cooled and firm, about 6 hours. Cut into squares. Makes about 24 squares.

Steps:

  • In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

  • Preheat oven to 350F. Grease an 8x8-inch baking pan and line the bottom and two sides with parchment paper, allowing the paper to extend over the edges by an inch or so (to use as handles to lift out of the pan later on). *Alternately, you can double the ingredients and make in a 9x13-inch baking pan.
  • Make the date filling: Combine the dates, white sugar and water in a medium saucepan. Stir to combine. Heat over medium heat, stirring regularly. Bring mixture just to a full boil. Remove from heat. Stir in lemon juice. Allow to cool almost completely before proceeding. (If you put hot filling over your flour/butter crumb, the butter will melt and change the texture of the base. It will cool more quickly if you remove from the saucepan to a bowl and stir or you can even pop into the fridge for a few minutes).
  • In a large bowl, stir together the oats, flour and light brown sugar. Add the cold butter pieces to the flour mixture and cut in with a pastry cutter, until the butter pieces are evenly pea-sized. (Alternately, use your fingertips to rub it into the flour mixture). In a small bowl, stir together the baking soda and hot water until the soda is dissolved. Sprinkle over the flour/butter mixture and stir in.
  • Add about half of the flour mixture to your prepared baking pan. Pat into an even layer, adding a bit more of the flour mixture, as needed, to make a thin, even layer. *It doesn't need to be exact, but roughly 60% of the flour mixture on the bottom and 40% for the topping. Spoon the cooled date mixture over-top and spread out evenly. Scatter the remaining flour mixture evenly over-top.
