This Almond Date Smoothie is not only wonderfully sweet, but also nutritious. It's a uniquely flavored smoothie that's a great way to start the day.

2-3 pitted dates, (Medjool)
2 tablespoons almond butter
1 cup unsweetened almond milk
1 cup ice
1 ripe banana
2 tablespoons hemp seeds

Steps:

  • Cut each date into 4 or 5 pieces.
  • Place dates, almond butter and almond milk in a blender and blend until smooth.
  • Add ice, banana, and hemp seeds and blend until smooth.

Date Smoothie With Brown Rice and Almond Milk image

This is inspired by Bryant Terry's recipe for date-sweetened almond milk, which I came across in his wonderful cookbook "Afro-Vegan." You could use commercial almond milk, but it will taste much richer if you make your own. Blanch and skin almonds (it goes quickly), soak overnight, blend and strain. The smoothie is a simple one, subtly sweetened by the dates, and mildly nutty. If you want to introduce another flavor into the mix add a half banana. I liked it both ways but I think I prefer the simpler version, so I have made the banana optional.

Yield 1 large or 2 small servings

Number Of Ingredients 8

1/3 cup cooked brown rice
3 dates, pitted
1 cup pure almond milk, preferably homemade
1/4 cup freshly squeezed orange juice
1/4 teaspoon almond extract
A couple of shakes of cinnamon (about 1/8 teaspoon), plus additional for sprinkling if desired
2 to 3 ice cubes, to taste
1/2 banana (optional)

Steps:

  • Place all of the ingredients in the jar of a blender and blend at high speed until smooth. Serve right away. If desired dust the top of each serving with additional cinnamon.

1/2 cup frozen banana, sliced
4 dates, pitted and chopped
1 pinch ground cloves (optional)
1/16-1/8 teaspoon ground cardamom (optional)
1/8 teaspoon ground cinnamon
1/4 teaspoon pure vanilla extract

Steps:

  • Place all ingredients in the blender and puree until smooth.
  • If you don't use frozen banana, you may add a couple ice cubes to the blender.
  • Pour into a cup and serve!
