DATE ENERGY BALLS
These 5-minute, nut-free date energy balls make an ideal lunch box treat or healthy anytime snack.

Steps:
- Place the oatmeal and coconut in the bowl of a food processor and pulse a few times until finely ground.
- Add the cocoa powder, dates, sunflower seeds, and maple syrup and pulse to combine until the mixture comes together in a sort of dough. Add a few more drops of maple syrup if it's not quite coming together, and pulse again.
- Roll mixture into 1 inch balls and roll in the chopped pretzels if desired.

COCONUT DATE BALLS
Coconut date balls are little balls of nutrition made with dates and nuts and then coated in shredded coconut - an easy-to-make sweet & healthy vegan snack!

Steps:
- Pit the medjool dates and soak them in warm water for 10 minutes until they soften
- Place the pitted dates and pecans in the bowl of a large food processor. Blend on high until a thick "dough" is formed and the mixture feels sticky.
- Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time you can let them set in the fridge for 5 minutes.
- Roll the energy bites into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 bites.

- Use a moist variety of dates such as the Tunisian Deglet Nour or the Californian varieties. You will need about 1 1/3 pounds once they have been pitted. Blend them in the food processor, adding a little water, if necessary, by the tablespoon, to achieve a soft paste.
