1 pound dates (I used 21 medjool dates) pitted
1/2 cup walnuts
1 cup shredded unsweetened coconut

Steps:

  • 1. Place pitted dates and walnuts in a food processor and puree until smooth.
  • 2. Place the coconut on a plate.3. Take 1 teaspoon of the date/walnut mixture and roll into balls.4. Roll the balls in the coconut to coat completely.

Coconut date balls are little balls of nutrition made with dates and nuts and then coated in shredded coconut - an easy-to-make sweet & healthy vegan snack!

10-12 medjool dates
2 cups pecans
Pinch sea salt
¼ cup desiccated coconut

Steps:

  • Pit the medjool dates and soak them in warm water for 10 minutes until they soften
  • Place the pitted dates and pecans in the bowl of a large food processor. Blend on high until a thick "dough" is formed and the mixture feels sticky.
  • Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time you can let them set in the fridge for 5 minutes.
  • Roll the energy bites into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 bites.

Almond, Coconut and Date Bites image

Who says healthy snacks can't be indulgent? These bites are packed with fiber and heart-healthy fats, but they're also sweet, crunchy and delicious. Whip up a batch and pop them in the fridge so you'll be ready the next time you're in need of a snack-time boost.

Yield 15 servings (about 30 bites)

Number Of Ingredients 8

2 cups Medjool dates, pitted
1 1/2 cups old fashioned rolled oats
1/2 cup unsalted roasted whole almonds
1/3 cup whole golden flax seeds
Kosher salt
3/4 cup unsweetened coconut flakes
1/4 cup almond butter (or your preferred nut butter)
1/3 cup cacao nibs

Steps:

  • Place the dates in a medium bowl and cover with warm water (about 100 degrees F). Let sit for 2 minutes. Drain well and place in a food processor with the oats, almonds, flax seeds and 1 teaspoon salt. Process until the oats and almonds are minced, about 2 minutes. Add 1/2 cup coconut flakes, the almond butter and cacao nibs and blend until fully incorporated, scraping the sides of the food processor down as needed, 1 to 2 minutes.
  • Shape the mixture into 2 tablespoon-sized balls (a 1-ounce scoop works well here). Once all of the mixture has been shaped, place the remaining 1/4 cup of coconut flakes in a small bowl and roll each ball in the coconut flakes to fully coat. Store in an air-tight container for up to 2 weeks in the refrigerator.

1 cup about 10 Medjool dates, pitted
1/2 cup raw nuts (cashews, walnuts, almonds, pecans, etc.)
pinch of sea salt

Steps:

  • Process: Add dates, nuts and salt in a food processor fitted with the S-shaped blade. Process until mixture is well combined and sticking together.
  • Form balls: Scoop dough from food processor with your hands (or a cookie scoop) and form into small balls using your hands. Enjoy right away or store for later.
  • To store: Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for up to 3 months.

2 cups dried dates, pitted
1/4 cup raw walnuts
1 teaspoon vanilla extract
1/2 cup unsweetened shredded coconut

Steps:

  • In a food processor, pulse the dates to create a thick paste. Add the walnuts, vanilla and 1/4 cup of the coconut and pulse until incorporated and a thick paste forms again. Using a spatula, transfer the date mixture to a medium bowl.
  • Pour the remaining 1/4 cup coconut into a separate small, shallow bowl.
  • Using a spoon, scoop out about 2 tablespoons of the date mixture and, with clean hands, work into a small rectangular bar 2 to 2 1/2 inches by 1 inch (or roll into balls). Coat the date bar with the coconut in the bowl, delicately pressing the coconut onto the bar. Continue with the remaining date mixture and coconut.
  • Serve in mini paper cupcake liners. Store in an airtight container for up to 1 week.

2 teaspoons baking powder
3/4 pound dates, pitted and roughly chopped
2 cups pecans, roughly chopped
1/2 cup dark raisins
1/2 cup golden raisins
3 large eggs
1/2 cup plus 2 tablespoons sugar
2/3 cup vegetable oil
2 tablespoons fresh lemon juice
2 teaspoons pure vanilla extract
1/2 teaspoon coarse salt
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees, with racks in upper third and middle. In a medium bowl, whisk together flour and baking powder. Add dates, pecans, and raisins, and stir with a wooden spoon until fruit and nuts are coated. In a small bowl, whisk together eggs, 1/2 cup sugar, oil, lemon juice, vanilla, and salt. Add to flour mixture and stir until combined.
  • In another small bowl, stir together 2 tablespoons sugar and cinnamon. Drop dough by rounded tablespoons, 1 inch apart, onto parchment-lined baking sheets. Sprinkle with cinnamon sugar. Bake until cookies are golden at edges, about 15 minutes, rotating sheets halfway through. Transfer cookies to wire racks and let cool completely.

  • In a large food processor fitted with an "S" blade, process the walnuts and coconut until crumbly.
  • Add in the dates, vanilla and sea salt and process again until a sticky, uniform batter is formed. (You can add a tablespoon of coconut oil, only if needed to help the mixture come together.) You don't want to over process, or the batter will become oily, so process until crumbly, but sticky when pressed between your fingers.
  • Scoop the dough by heaping tablespoons, then roll between your hands to form balls. Arrange them on a baking sheet lined with parchment paper, then place in the fridge or freezer to set for at least 30 minutes before serving. Store the balls in a sealed container in the fridge for up to a week, or in the freezer for an even longer shelf life. (I prefer them frozen, myself!)
