Date recipes are some of my favorite desserts to cook up. These date treats are very easy to bake, and one sheet of them will yield 48 good-sized bars. I sometimes add nuts, coconut or candied fruit. -Dorothy DeLeske, Scottsdale, Arizona

2-1/2 cups pitted dates, cut up
1/4 cup sugar
1-1/2 cups water
1/3 cup coarsely chopped walnuts, optional
1-1/4 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1-1/2 cups quick-cooking oats
1 cup packed brown sugar
1/2 cup butter, softened
1 tablespoon water

Steps:

  • In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

1 ½ cups chopped pitted dates
¼ cup packed light brown sugar
1 teaspoon orange zest
¼ teaspoon ground cloves
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
1 ½ tablespoons lemon juice
⅞ cup water
2 cups quick-cooking oats
½ cup packed light brown sugar
1 cup all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
¾ cup butter
2 tablespoons water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch square pan. In a small saucepan, combine the dates, 1/4 cup brown sugar, orange zest, cloves, 1/2 teaspoon cinnamon, allspice, lemon juice and water. Cook over medium-high heat, stirring constantly, until dates are soft and the mixture becomes a thick paste, about 10 minutes. Remove from heat and set aside to cool.
  • To make the crust and topping, stir together the oats, 1/2 cup brown sugar, flour, baking powder, baking soda, 1/2 teaspoon cinnamon and salt in a medium bowl. Cut in butter using a pastry cutter or your fingers. Mixture should be coarse and crumbly. Stir in 2 tablespoons water until evenly distributed. Press about 2/3 of the mixture into the bottom of the prepared pan. Spread the date mixture evenly over the crust all the way to the edges. Sprinkle the remaining crust mixture over the date layer. Press down lightly.
  • Bake for 20 to 25 minutes in the preheated oven, until the top is lightly toasted. Cool completely before cutting into bars.

3 cups chopped pitted dates (1 lb)
1 1/2 cups water
1/4 cup granulated sugar
1 cup packed brown sugar
1 cup butter or margarine, softened
1 3/4 cups all-purpose* or whole wheat flour
1 1/2 cups quick-cooking oats
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
  • Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.
  • In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
  • Bake 25 to 30 minutes or until light brown. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.

1/2 cup (1 stick) unsalted cold butter, cut into small pieces, plus more for pan
1 1/2 cups unbleached all-purpose flour
1/4 cup granulated sugar
1/4 teaspoon kosher salt
1 large egg, lightly beaten
2 cups dried dates, pitted and chopped
1/2 cup granulated sugar
1/2 cup apple cider
1 teaspoon grated lemon zest
2/3 cup rolled oats
1/2 cup unbleached all-purpose flour
1/4 cup packed light-brown sugar
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
4 tablespoons unsalted butter, room temperature

Steps:

  • Make the crust: Preheat oven to 375 degrees. Butter a 9-by-9-inch baking pan. Line with parchment paper, leaving a 2-inch overhang. Butter parchment; set aside.
  • In the bowl of a food processor, combine flour, sugar, salt, and butter. Pulse to combine. Add egg and pulse until evenly moistened. Transfer mixture to prepared pan; press into bottom (use the base of a dry measuring cup or a small offset spatula to help). Freeze for 10 minutes. Bake until lightly golden, 20 to 25 minutes.
  • Make the filling: In a saucepan, combine dates, sugar, and cider. Cook over medium heat until soft and the consistency of jam. Using a hand blender, puree mixture until smooth. Stir in lemon zest. Spread mixture evenly over baked crust.
  • Make the topping: In a medium bowl, whisk together oats, flour, brown sugar, salt, and cinnamon. Using your hands, work in butter to form crumbs. Evenly distribute crumbs over filling to cover. Bake until topping is golden brown and filling is set, 20 to 25 minutes. Run a paring knife around edges of pan to loosen; let cool completely in pan on wire rack. Using parchment overhang, remove from pan; cut into squares using a serrated knife.

1 (18 ounce) box yellow cake mix (or use white cake mix, yellow is better!)
2 1/2 cups quick-cooking oatmeal
1/3 cup brown sugar, packed
1 pinch cinnamon
1/4 cup melted butter
2 teaspoons lemon juice
1 egg, slightly beaten
1 teaspoon vanilla
2 (600 g) packages pitted dates, chopped (about 2-1/4 pounds)
3/4 cup white sugar (you can use half white and light brown sugar)
1 cup water
1 cup orange juice
2 tablespoons butter
1 teaspoon vanilla
1 teaspoon maple extract

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • For the date filling; in a saucepan combine chopped dates, sugar, water and orange juice, bring to a boil and cook, stirring with wooden spoon over medium-low heat until mixture is thickened, pushing down with a fork or a potato masher to remove the large chunks and make the mixture semi-smooth, cooking time should take about 15-20 minutes)set aside.
  • For the crust; in a large bowl combine the cake mix with oatmeal, cinnamon and brown sugar.
  • In a small bowl whisk together melted butter with egg and vanilla; add to the flour mixture; using clean hands mix with fingers until the mixture barely holds together.
  • Measure out two-thirds of the mixture and pat into the bottom of prepared baking dish, pressing down with hands to cover evenly.
  • Carefully spread the prepared date mixture over the bottom crust, spreading out to cover the pan.
  • Cover the top with remaining oat mixture and gently pat the mixture down slightly with hands (do not pat down to much!).
  • Bake for about 20 minutes (the top should be very light brown).
  • Cool completely or semi-freeze before cutting (this will make slicing the bars easier).

Steps:

  • In a medium saucepan, combine the chopped dates and water. Over medium low heat, bring to a simmer and cook for 5 minutes. Add the sugar and lemon juice and stir until the sugar has dissolved. Bring back up to a boil and cook for 1 minute. Remove from the heat and allow to cool to room temperature.
  • Thoroughly butter a 9 x 13 inch baking pan with 2 inch sides and line the base of it with parchment paper.
  • Preheat the oven to 350 degrees. In a large mixing bowl, combine the oats, flour, brown sugar, cinnamon, baking soda, and salt. Mix together well with a wooden spoon, then drizzle in the melted butter and stir to moisten evenly. Spread 1/2 of this crumb mixture in the base of the pan, then cover with an even layer of the cooled date mixture. Top the date layer with another layer of the crumb mixture and bake for 30 to 35 minutes, or until the top is golden and bubbly, and the edges have begun to caramelize. Cool on a rack, to room temperature. Run a knife around the inside edge of the pan to release, and cut into 12 squares.

I call them that because as far back as I can remember, my Grandmother made these on special occasions, or just because. And my mother always made them, too. They are just so good and really "datey" , just the way I like them.

1 3/4 cups oatmeal
1 1/2 cups flour
1/2 teaspoon baking powder
1 teaspoon baking soda
3/4 cup butter, melted

1 lb chopped dates
3/4 cup sugar
1 cup water
1 tablespoon butter
1 teaspoon vanilla
1 cup chopped walnuts

Steps:

  • Make the filling: Boil dates, sugar, and water until thick, about 5-10 minutes.
  • Add 1 TBSP butter, the vanilla, and the walnuts.
  • Set aside to cool a bit.
  • Prepare the crust: Combine all dry ingredients with the melted butter.
  • Press half of the mixture into a lightly greased 13 x 9 pan.
  • Cover with filling mixture and top with remaining half of crust mixture.
  • Press lightly.
  • Bake at 350 degrees for 25 minutes.
  • NO LONGER THAN THAT!
  • Cut into squares when cool.

  • Combine flour, sugar, oats, cinnamon, baking soda, and salt in large bowl; stir to blend. Add butter. Using fingertips, rub in until moist clumps form. Press half of oat mixture evenly over bottom of prepared pan. Spread date mixture over. Sprinkle with remaining oat mixture; press gently to adhere.
