BANANA DATE BARS
A scrumptious blend of banana, dates, almonds, lemon, and vanilla will tantalize your tastebuds and it's also very nutritious.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream margarine and sugar. Gradually mix in eggs and vanilla. Stir in bananas. Sift together the flour, baking powder, baking soda, and salt. Stir into the sugar mixture. Finally, fold in dates and chopped almonds.
- Spread batter evenly into prepared baking pan. Bake in preheated oven for 30 to 35 minutes.
- While the bars are baking, You can make the lemon icing. In a small bowl, Mix together salt and confectioners sugar. Stir in soft butter, lemon juice, and vanilla. Beat until smooth.
- When bars are cool, spread the lemon icing over the top and cut into squares. Mmmm Mmmmm!

GRAMMA'S DATE SQUARES
A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
- In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
- Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

- In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

- In a medium saucepan, combine the chopped dates and water. Over medium low heat, bring to a simmer and cook for 5 minutes. Add the sugar and lemon juice and stir until the sugar has dissolved. Bring back up to a boil and cook for 1 minute. Remove from the heat and allow to cool to room temperature.
- Thoroughly butter a 9 x 13 inch baking pan with 2 inch sides and line the base of it with parchment paper.
- Preheat the oven to 350 degrees. In a large mixing bowl, combine the oats, flour, brown sugar, cinnamon, baking soda, and salt. Mix together well with a wooden spoon, then drizzle in the melted butter and stir to moisten evenly. Spread 1/2 of this crumb mixture in the base of the pan, then cover with an even layer of the cooled date mixture. Top the date layer with another layer of the crumb mixture and bake for 30 to 35 minutes, or until the top is golden and bubbly, and the edges have begun to caramelize. Cool on a rack, to room temperature. Run a knife around the inside edge of the pan to release, and cut into 12 squares.

This is a delicious and unusual dessert using two of my favourite ingredients! The original recipe calls for 250ml sugar but I find that is too sweet for my tastes. Feel free to change the quantity back if you prefer something sweeter.

- Preheat oven to 180°C.
- Cream butter and sugar together until light and fluffy.
- Beat the eggs in one at a time.
- Add the flour, salt and baking powder and mix well.
- Place half the mixture onto a greased 9 x 13 baking dish.
- Cover the dough with banana slices and chopped date pieces.
- Place the remaining dough over as a topping.
- Bake for 30-35 minutes until golden brown.
- Remove from oven.
- Brush the melted butter over the top while still hot.
- Mix cinnamon and sugar and sprinkle over the top.
- Cut into squares and cool on wire rack.

- For filling, place all ingredients in a pot and bring up to a boil. Remove from heat and let dates sit and soak until room temperature. Purée until smooth and set aside.
- Preheat oven to 350° F, grease and 8-inch square pan and line bottom with parchment paper so that the paper hangs over the edge of the pan on 2 sides. Combine oats, flour, brown sugar, cinnamon and salt in a bowl. Stir in butter and blend until an even crumbly texture. Press half of the crumble into the bottom of prepared pan. Spread date filling over base and top with remaining crumble (not pressing). Bake for 40 to 45 minutes, until the top of crumble begins to brown. Allow to cool before cutting into squares.
- Yield: 1 8-inch square pan. Makes 16 servings.

- Preheat oven to 325ºF and place raw nuts on baking sheet. Toast nuts for 8-12 minutes, or until lightly golden brown. Allow toasted nuts to cool on pan for 10 minutes. Toasting is optional but it brings out more flavor.
- In a medium sized bowl, cover pitted dates and dried bananas with warm water. Let sit for 3 minutes to soften dates and bananas. Then drain. If dates are really moist, no need to soak. My dried bananas were fairly dried out, so those needed to be soaked for a few minutes.
- In the bowl of your food processor, add cooled toasted nuts. Process until they’re in tiny pieces, almost to meal texture. Next, add in drained pitted dates, dried bananas, and cinnamon, if using, process/pulse until broken down and mixture starts to come together. See photos in post for visual.
- Remove S blade from bowl of processor. Transfer mixture into lined 9×5 loaf pan or 8×8 baking pan and press mixture down flat. Transfer pan to freezer for 10 minutes, or fridge for 30 minutes, allowing the bars to set for easier cutting. Then gently life the parchment paper to remove the bars, placing on cutting board. Use large sharp knife to cut the bars into 12 even squares (or desired number of servings).
