These decadent chocolate-coffee flavored cookies will remind you of rich fudgy brownies. Great Christmas cookies.

1 1/3 cups brown sugar, firmly packed
1/2 cup vegetable oil
1/4 cup sour cream
1 egg
1 teaspoon vanilla
1 3/4 cups flour
3/4 cup unsweetened cocoa powder
2 teaspoons instant espresso powder or 2 teaspoons instant coffee granules
1 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup powdered sugar

Steps:

  • Beat together brown sugar and oil; then mix in sour cream, egg, and vanilla.
  • Set aside.
  • In another bowl, mix together flour, cocoa, espresso, baking soda, salt, and pepper.
  • Add flour mixture to brown sugar mixture; mix well.
  • Refrigerate dough until firm (3-4 hours).
  • Preheat oven to 350°F.
  • Pour powdered sugar into shallow bowl; set aside.
  • Cut dough into 1" pieces; roll into balls. Roll balls in powdered sugar.
  • Bake on ungreased cookie sheets until tops of cookies are firm to touch (10-12 minutes; do not overbake).
  • Cool on wire racks.

1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate
1/4 cup oil
1/4 cup MAXWELL HOUSE Instant Coffee
2 Tbsp. warm water
1 pkg. (2-layer size) devil's food cake mix
2 eggs
1/3 cup sugar

Steps:

  • Heat oven to 375°F.
  • Microwave chocolate and oil in large microwaveable bowl on HIGH 1-1/2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted and mixture is well blended. Mix coffee and water; whisk into chocolate mixture. Add cake mix and eggs; stir until mixture forms soft dough.
  • Use lightly floured hands to roll dough into 48 (1-inch) balls. Roll in sugar until evenly coated. Place, 2 inches apart, on baking sheets.
  • Bake 10 min. or just until centers are set. Cool on baking sheets 1 min. Remove to wire racks; cool completely.

1 cup butter, at room temperature
¾ cup brown sugar
⅓ cup white sugar
¼ cup instant coffee powder
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
¾ cup cocoa powder
1 teaspoon baking soda
½ teaspoon salt
½ cup white sugar
24 dark chocolate wafers

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Combine butter, brown sugar, 1/3 cup sugar, and coffee powder in a large bowl; beat with an electric mixer until creamy. Blend in eggs and vanilla extract. Mix in flour, cocoa powder, baking soda, and salt together until dough is uniform.
  • Pour 1/2 cup sugar onto a shallow plate. Shape dough into 2-inch balls and roll in the sugar until coated. Arrange on the prepared baking sheets.
  • Bake in the preheated oven until edges are set, about 10 minutes. Immediately press a dark chocolate wafer into each cookie. Let cool on a wire rack.

3 chocolate graham crackers, chopped
1/3 cup butter, softened
1/4 cup Equal sugar substitute
1 teaspoon instant coffee, diluted in
3 teaspoons hot water
2 tablespoons powdered sugar

Steps:

  • COMBINE the crushed Grahams, chopped Grahams, softened butter, sugar, and coffee in a mixing bowl.
  • SHAPE mixture into one-inch balls. Roll the balls in powdered sugar. Flatten the balls. Chill before serving.

These are very dark, chocolately cookies with a bit more than a hint of coffee. If you prefer a stronger taste of coffee, increase the coffee crystals 1 1/2 tbsp.

1/4 cup margarine
1 tablespoon margarine
3/4 cup brown sugar
2 egg whites (or 1 whole egg)
1/3 cup low-fat vanilla yogurt (or plain yogurt plus 1 tsp vanilla extract)
1/2 cup unsweetened cocoa
1 1/4 tablespoons instant coffee crystals
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup whole wheat flour
1/2 cup all-purpose flour

Steps:

  • In a large bowl beat together margarine and brown sugar, add egg whites and yogurt, mix well.
  • Mix in the cocoa, coffee crystals, and baking soda.
  • Finally add in the cinnamon and flours; mix well.
  • Roll into teaspoon (or so) sized balls. If you feel it is needed, cover and chill dough 2 hours to firm it up (I have never had a problem with dough stickyness and therefore don't chill the dough).
  • Place dough balls about 2" apart on cookie sheets.
  • Bake at 350F for 8-10 minutes until edges are firm.
  • Yield 45 small cookies.

1 1/3 cups packed dark brown sugar
1/2 cup vegetable oil
1/4 cup sour cream
1 Tbl. chocolate syrup
1 large egg
1 tsp. vanilla
1 tsp. kahlua
1 3/4 cups flour
3/4 cup unsweetened baking cocoa
2 tsp. instant espresso, i use medaglia d'oro
1 tsp. baking soda
1/4 tsp. salt
1/8 tsp. ground black pepper
1/16 tsp. cayenne (40k heat)
*powdered sugar for rolling into

Steps:

  • 1. Beat dark brown sugar and oil in mixer bowl. Mix in sour cream, chocolate syrup, egg and vanilla. Set aside.
  • 2. In medium bowl, whisk to mix well the flour, cocoa, espresso, baking soda, salt, pepper and cayenne. Add four mixture to brown sugar mixture. Mix well. Scrape bottom and sides, mix again. Put dough onto plastic wrap, and wrap tightly. Refrigerate til firm. (3-4 hours.)
  • 3. Preheat oven to 350. Pour powdered sugar into shallow bowl, 1/2 cup to start, add more as needed. Cut or spoon off pieces of dough and roll into 1 1/2" balls. (Or walnut-sized.) Roll balls into powdered sugar. Coating fairly heavily.
  • 4. Bake on ungreased cookie sheets for at least 12 minutes, up to 15 minutes, or until tops of cookies are firm to touch. *DO NOT OVERBAKE*. Cool on wire racks.
