DARK CHOCOLATE PROTEIN BALLS (NO BAKE, LOW CARB)
Healthy dark chocolate protein balls made with pea protein and dipped in dark chocolate. Paleo, vegan and nut free.

Steps:
- In a small mixing bowl, combine all dry filling ingredients. This includes the protein powder, cocoa powder and salt.
- Mix in the sunflower seed butter and vanilla extract. Add water as needed. Mix first with a spatula, then use your hands to knead the dough. It will have a playdough-like texture.
- Roll the dough into balls about 1 tablespoon in size. Place the balls on a small baking sheet or large plate.
- Freeze the balls for 30 minutes.
- In a small sauce pan, melt the dark chocolate and coconut oil over low heat, stirring frequently.
- Dip the balls into the dark chocolate and place on a sheet of parchment paper.
- Drizzle any remaining chocolate over the balls and top with flaked sea salt.
- Store in fridge or freezer.
NO-BAKE LOW-CARB PROTEIN BARS
I have been looking for a protein bar that is not full of carbs. The following is a my own interpretation of a recipe I found online. You could experiment with other ingredients (i.e., other types of protein powder, coco powder, nuts and seeds, etc...). If you come up with other variations, let me know! :)

Steps:
- 1. Mix all dry ingredients well.
- 2. Mix together almond butter and coconut oil in a small cup (if the oven is warm (not hot!) I place it in there for a minute to soften it before stiring.
- 3. Add almond butter and oil to dry ingredients and mix WELL (I actually use my hands to do this). The mixture will be rather dry and crumbly.
- 4. Add vanilla extract and water (I'd recommend adding water gradually, starting with 1/4 cup, so you don't overdo it) and mix well.
- 5. Grease a 9x9 pan (or similar size) and press dough into pan. I press for a few minutes with my hand to create a consistent thickness.
- 6. Chill in the fridge for several hours to set, then cut into approximately 6 pieces. Wrap each one individually for a quick snack, or store them with wax paper in-between.

- First, soak your dates in purified water for 20 minutes. This just helps to soften before you blend. That way you don’t have to use a syrup or nut butter to bind.
- Place soaked dates and sunflower seeds in a food processor. Blend until batter is mixed and combined. This usually takes around 2 minutes or so. Scrape sides between blending.
- Place date and sunflower seed mix into a larger bowl. Mix in your protein powder, vanilla, coconut milk and chocolate chips. If you are making the chocolate chunk chocolate protein balls, add in your extra cocoa powder (if desired) as well.
