DANISH PASTRY APPLE BARS

- Preheat oven to 375°F. For pastry, in a large bowl stir together flour and salt. Using a pastry blender, cut in shortening until mixture resembles coarse crumbs. In a glass measuring cup beat egg yolk lightly with a fork. Stir in enough milk to measure 2/3 cup total liquid. Add egg yolk mixture all at once to flour mixture. Stir lightly with fork until combined (pastry will be slightly sticky). Divide pastry in half.
- On a well-floured surface, roll half of the pastry into a 17x12-inch rectangle. Fold pastry crosswise into thirds. Transfer to a 15x10x1-inch baking pan and unfold pastry, pressing to fit into the bottom and sides of the pan. Sprinkle with cornflakes; top with apple slices. In a small bowl stir together granulated sugar and cinnamon; sprinkle over apples. Roll the remaining pastry into a 15x10-inch rectangle. Fold pastry crosswise into thirds. Place on top of apples and unfold pastry. Crimp edges or seal with the tines of a fork. Cut slits in top pastry; brush surface with beaten egg white.
- Bake about 50 minutes or until apples are tender and pastry is light brown, covering loosely with foil for the last 25 minutes of baking.
- For icing, in a small bowl combine powdered sugar and 3 to 4 teaspoons milk to reach drizzling consistency. Drizzle warm uncut bars with icing. Cool completely in pan on a wire rack. Cut into bars.

- Preheat oven to 400°F.
- Sift together flour and salt.
- Cut in shortening until crumbly.
- Add enough milk to the yolk to make 2/3 cup.
- Add to flour, mix to blend.
- Divide dough in two.
- Roll 1 batch to fit a 15x10-inch pan.
- Sprinkle with corn flakes.
- Combine apple slices, 2/3 cup sugar and cinnamon.
- Place evenly on crust.
- Roll out other batch and place on top.
- Pinch edges to seal.
- Beat egg white until stiff and brush over crust.
- Bake at 400°F for 50- 60 minutes.
- While baking, mix remaining ingredients.
- When done remove pie squares from oven--cool only slightly.
- Frost with glaze while still warm.

- In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Beat egg yolk in measuring cup and add enough milk to make 2/3 cup total liquid. Stir into flour mixture until all flour is damp. Divide the dough in half. On floured surface, roll half the dough into a rectangle and fit into a 9x13 inch pan.

- PASTRY: Sift together flour and salt. With a pastry blender or two knives cut in shortening.
- Separate egg, putting egg yolk in measuring cup. Add milk to measure 2/3 cup.
- Slowly mix in to the flour mixture, do not ovemix. Divide pastry in half.
- Put first half of pastry on a cookie sheet. Sprinkle 1 cup cornflakes over pastry, then spread apple mixture over first layer of pastry, leaving an inch around the edges. Put second layer over top, Press together around the edges.
- Beat egg white and spread over top of pastry.
- Cook in moderate oven (350F) until tender, about 15-20 minutes. Cool slightly.
- ICING: Add enough water to make a paste. Drizzle over top.

- Preheat the oven to 375 degrees F (190 degrees C).
- In a large bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. In a cup, beat egg yolk, stir the cold water into the yolk. Gradually stir the egg mixture into the flour mixture until dough can be packed into a ball. On a clean dry surface, roll out 1/2 of the dough large enough to cover the bottom and sides of a 9x13 inch pan. Lay the dough in the pan.
- Place the cornflakes over the dough in the pan. Arrange apple slices over the top of the corn flake layer. Sprinkle the sugar and cinnamon over the apples. Roll out the second half of the dough to cover the entire pan. Lay over the filling and pinch the edges of the two crusts together. Beat the egg white until foamy, and brush onto the top crust.
- Bake for 45 to 50 minutes in the preheated oven, until golden brown. Drizzle with glaze while still warm.
- To make the glaze: In a small bowl, beat the confectioners' sugar with the milk and almond extract until smooth.

- First make the filling: melt the butter and 3 tbsp of the sugar in a medium saucepan. Stir in the apples and spices and cook for 5 mins, until the fruit is slightly softened but not cooked. Remove from the heat and stir in the blueberries.
- Roll the pastry out on a lightly floured surface to £1 coin thickness. Cut out 8 x 11cm squares. Prick the squares all over with a fork and transfer to a baking tray.
- Divide the filling between the pastry squares, spooning it into the centre of each square. Bring the four corners into the centre of each square and pinch together edges using a little of the egg to help stick. Brush all over the danishes with the rest of the egg. They can be covered and chilled for a few hours now.
- Heat oven to 220C/200C fan/gas 7. Dust with the remaining demerara and cook for 20 mins until the pastry is golden. Don't worry if they pop open while cooking - they look even prettier.

I found this recipe in a newspaper a number of years ago, and I have been making it ever since. The apples go so well with the crumb and cream cheese layers. When fall comes around, this dessert is a real hit! Hint: Many reviewers have suggested doubling the amount of cream cheese!

- Combine flour, brown sugar and cinnamon.
- Cut in butter to resemble coarse crumbs.
- Add walnuts.
- Measure 2 cups crumb mixture and set aside.
- Press remaining mixture into a greased 9" x 13" pan.
- Beat cream cheese and milk until smooth.
- Mix in egg, sugar, and vanilla.
- Pour over crumb mixture, and top with apples.
- Sprinkle with the reserved crumbs and bake for 30 minutes at 350°F.

- Gather all the ingredients. Let's start by blooming the yeast. Add water and 1 tablespoon of sugar to yeast. Stir and set aside for 5 minutes.
- When the dough is resting, make apple filling. Wash, peel, core and dice apple. In a medium sauce pan, tip in sugar, water, cinnamon and cornstarch. Stir and bring to boil, then add in half of the apples. Stir and cook the apples on medium until soft, about 8-10 minutes. Add remaining apples pieces and cook for another 6-8 minutes. Stir often to make sure the apples are cooked. When ready, remove from heat, add butter (and lemon juice if using) and combine well. Set aside to cool.
- Tip the dough onto a lightly floured work space. Roll dough into a rectangle approx. 20" x 15" (50cm x 38"). Use about ⅓ cup (76g) of the softened butter and butter about ⅔ of the rectangle. Fold ⅓ of the sheet into the middle, starting with the unbuttered side and fold the buttered ⅓ into the middle. Repeat the rolling and buttering 2 more times. Remember to lightly dust your work surface and dough with flour to prevent sticking. If dough or butter is too sticky, pop into the freezer for 10 minutes to make it easier to handle.
- Carefully spoon the prepared apple filling into the center of each pastry. Bake in oven for 15 to 18 minutes, or until the top of pastry is golden brown.
