WORLD'S BEST GF, DAIRY-FREE GERMAN PANCAKES
This is not the German potato pancakes. This is a one pan meal. Using Worlds Best German Pancakes #258828, I tweaked it for our dietary needs and it worked wonderfully! One more kid-friendly keeper.

Steps:
- Preheat oven to 400°F.
- In a 9x13 pan, melt oil in oven.
- In a medium bowl mix milk, flour, salt and eggs.
- When oven is at 400°F, take out pan and pour in mixture.
- Cook for 20-25 minutes or until fluffy.
- Serve with desired toppings. We like syrup.

DAIRY-FREE PANCAKES
Skip regular milk and replace it with coconut or hemp milk in these light pancakes suitable for people with dairy or lactose intolerance

Steps:
- Put the flour in a bowl and make a well in the centre. Crack the egg in the middle and pour in a quarter of the milk. Use an electric or balloon whisk to thoroughly combine the mixture. Once you have a paste, mix in another quarter and once lump free, mix in the remaining milk. Leave to rest for 20 mins. Stir again before using.
- Heat a small, non-stick frying pan with a splash of oil. When hot, pour a small amount of the mixture into the pan and swirl around to coat the base - you want a thin layer. Cook for a few mins until golden brown on the bottom, then turn over and cook until golden on the other side. Repeat until you have used all the mixture, stirring the mixture in between pancakes and adding more oil for frying as necessary. Pile the pancakes up between sheets of baking parchment or cook to order. Serve with the pancake filling of choice.

This is a really easy recipe that can be put together at the last minute. My kids love this dish topped with pure maple syrup, but the toppings you can add are endless!

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Put coconut oil into a 9x13-inch baking dish.
- Place baking dish in the preheated oven to melt coconut oil, about 3 minutes.
- Whisk eggs and coconut milk together in a large bowl. Whisk in spelt flour and salt to make a smooth batter. Pour batter into the hot baking dish.
- Bake in the preheated oven until puffed and golden, rotating the baking dish once halfway through, about 18 minutes.

- In a medium bowl, sift together the spelt flour, baking powder, cane sugar, cinnamon and sea salt and aroowroot powder. Make a well in the center of the mixture.
- In a small bowl, whisk together the almond milk, oil and vanilla. Pour the mixture into the well of the flour mixture and stir just until moistened; be sure not to over mix. Let the batter sit for about 5 minutes.
- Meanwhile, heat a large non-stick pan over medium heat. Drop approx 1/3 cup of batter onto the hot pan and shape into a rough circle using the back of a spoon. Drop more batter as you pan size will allow.
- Cook over medium heat until the edges start to turn brown and the tops form bubbles. Flip and cook until golden brown (about 3-5 minutes a side). Serve warm with fresh fruit and maple syrup.
