DAD'S AWESOME MEATLOAF
My Dad made this meatloaf at least once a month and it was always my favorite dish. Even my meatloaf hating husband loves it! Sure to be a hit with both the meatloaf lovers and haters alike!

Steps:
- Mix hamburger, bread and juice together until well blended.
- Add eggs, pepper, salt and onion and mix together until well blended.
- Cook in loaf pan for 1 hour at 350°.
- Mix together brown sugar, ketchup and dry mustard.
- Place on top of meatloaf after 1 hour and cook for another 30 minutes.

- In a small bowl, combine the milk, oats, onion and salt. Crumble beef over mixture and mix well. Shape into 2 loaves. , In a small nonstick skillet, brown loaves on all sides; drain. - For the Sauce: Whisk all of the sauce ingredients together; set aside.
- For the Meatloaf: Position rack in center of oven. Preheat oven to 350°F/180°C. Have a roasting pan ready.
- Grind the bread slices in a food processor fitted with a metal blade until finely ground. Measure out 3/4 cup (84 g) of soft breadcrumbs and combine the measured breadcrumbs with milk in a large mixing bowl; allow the breadcrumbs to absorb the milk for 5 minutes. (Any extra breadcrumbs can be frozen in a zip top bag and saved for another use). Add eggs, carrot, red bell pepper, parsley, scallions, Worcestershire sauce, olive oil, salt, thyme and a generous amount of black pepper to the same bowl and use your hands to mix well. Scrape meatloaf mixture into center of roasting pan and use your hands to form an oval loaf shape about 9-inches long, 6-inches wide and 2-inches thick (23 cm by 15 cm by 5 cm). Spread about half of the sauce on top of the loaf, coating the top and sides. Reserve any remaining sauce to serve alongside cooked meatloaf. Use your fingers to lay bacon over the meatloaf on a slight diagonal, tucking the ends underneath the loaf. The sauce will help the pieces stick and stay in place.
- Cook for about 55 minutes to 1 hour or until meat is cooked through and the bacon is crisp. An instant read thermometer inserted in the center of the loaf should read 160°F/72°C. You can crisp up the bacon further, if you like, by placing meatloaf under the broiler for 30 seconds to 1 minute, taking care not to burn. Meatloaf is ready to cut into slices and serve with the reserved sauce alongside. We like it hot, room temperature or the next day in a sandwich. Any leftovers can be wrapped well with plastic wrap and refrigerated for up to 3 days.

CLASSIC MEATLOAF RECIPE
This Classic Meatloaf recipe was my dad's claim to fame, at least in our house! It's tender and juicy and has a uniquely delicious flavor. The brown sugar and ketchup glaze just puts this meatloaf over the top!

- Preheat oven to 350 degrees F. Spray a 9"x5" loaf pan with nonstick cooking spray.
- Combine meatloaf ingredients in a large bowl using your hands, just until combined. Do not overmix - The less you mess with it, the better it will be!
- Shape into a loaf and place into a loaf pan.
- In a small bowl combine 1/2 cup ketchup, brown sugar and mustard. Brush about 1/3 of the mixture over the top of the meatloaf.
- Bake in the preheated oven for 45 minutes, then pour remaining sauce over the meatloaf. Return to the oven and bake for an additional 15-25 minutes or until meatloaf is completely cooked through. Meat should register between 155 and 160 degrees F.
- Let stand for 5-10 minutes before slicing and serving. Garnish with parsley if desired.

NINJA FOODI MEATLOAF AND POTATOES
This meal is a one pot Ninja Foodi Meatloaf and Potatoes, plus you can add corn too! It can all be made in an hour, plus gluten-free too!

- In a large bowl, combine all ingredients for the meatloaf.
- Spray a sheet of foil with non-stick cooking spray, shape the meatloaf and place on the foil.
- Set aside and wash hands, then cut the potatoes into quarters.
- Place the potatoes in the bottom of the Ninja Foodi with 1 Cup of water.
- Place the rack inside the foodi where it extends up to the top of the pot.
- Place the meatloaf on the rack.
- Set to pressure cook on high for 25 minutes.
- While this is cooking, prepare the sauce by combining all ingredients in a small saucepan on medium heat.
- Whisk it until the sugar has dissolved and set aside.
- Quick-release the pressure.
- Carefully remove the rack with the meatloaf on it and set aside.
- Carefully remove the pot and pour the potatoes into a large bowl.
- Add the rack back into the foodi; however, this time place the rack where it's low in the pot.
- This can be done by simply changing the handles on the side, flip them the other way.
- Pour the corn onto a sheet of foil with the sides up.
- Add the butter on top of the corn.
- Place the meatloaf and corn on the rack in the foodi. (Note - this fits if you do 2 pounds or less of ground beef. I have found if I do any more than this it will not fit as well next to it. If that happens, I go ahead and microwave the corn or put the corn in at the end when I take the meatloaf out.)
- Coat the meatloaf with the sauce.
- Place the foodi on broil for 5 minutes at 450 degrees.
- Open and stir up the corn.
- Broil an additional 5 minutes.
- While this is broiling, mash the potatoes with a hand masher and stir in the remaining ingredients.
- Add additional salt to taste if needed.
- Remove the meatloaf and corn.
- Serve!

DAD'S MEATLOAF WITH TOMATO RELISH

- Preheat the oven to 350 degrees F.
- Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
- Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
- This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
- Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
- Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!
DAD'S MEATLOAF

- Meatloaf:
- In a large mixing bowl combine beef, pork, eggs, bread crumbs, garlic and tomato relish. Finish with olive oil, and then pack into a 9-inch loaf pan and place in the middle of a preheated 350 degree oven. Bake for 35 to 40 minutes or until the center of the meat loaf reaches 170 degrees.
- Finish the meat loaf with remaining tomato relish and broil at 500 degrees until tomato relish begins to crust. Allow meatloaf to cool before slicing.
- Chop tomatoes, peppers, and onions into a medium dice. Saute over high heat. Finish with ketchup. Lower heat. Reduce to a simmer.
DADS FAVORITE MEATLOAF
Making this for Dinner tonight. Its not the Traditional meatloaf. You know the one I'm talking about, the all beef, lightly seasoned with the ketchup top? Naaaah, Its better. Its MUCH Better! It has all my dads favorite ingredients. A gooey Mozzarella center with Buttery sweet Caramelized onions. Its delicious! and a good twist...

- 1. Julienne the Spanish onion. and Sautee' in 1T of Butter and 2t Sugar until Golden brown and Caramelized. Set aside to cool
- 2. In a Large Mixing bowl, Combine Beef, Pork, Egg & Egg white, Garlic, bread crumbs, Worcestershire sauce, Garlic Powder, Oregano, and Parmesan. Mix to combine thoroughly. But do not Compact (Leaves for a denser, Brick like meatloaf)
- 3. Take 1/2 of the Meatloaf Mixture and lightly pack into your meatloaf pan (or Freeform on a sheet Tray)
- 4. On top of that, Place your Cooled Caramelized onions in a line, Running Horizontal down your meatloaf. Top with Cheese to Cover.
- 5. Place the remaining Meatloaf mixture on top (Making sure not to compact the filling down too much)
- 6. Place in a 400 degree oven for 45 Minutes, or untill Internal Temperature is 160 degrees. Allow to cool for at least 10 Minutes and Serve
