This is a recipe to serve your mother-in-law; we call it a 'bride basic'. It differs from some Chicken Divan recipes because of the curry. Men love this. Wonderful! The ingredients can be 'assembled' and frozen, then baked when you're ready. Serve with rice and a fruit salad, if desired.

2 ½ cups cooked chopped broccoli
2 cups shredded, cooked chicken meat
2 (4.5 ounce) cans mushrooms, drained
1 (8 ounce) can water chestnuts, drained
2 (10.75 ounce) cans condensed cream of chicken soup
1 cup mayonnaise
1 teaspoon lemon juice
¼ teaspoon curry powder
1 tablespoon melted butter
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 3-quart casserole dish.
  • Arrange cooked broccoli in prepared baking dish. Arrange chicken over broccoli. Add mushrooms and water chestnuts (see Cook's Note).
  • In a medium bowl, combine the soup, mayonnaise, lemon juice, curry powder, and melted butter. Mix together and pour sauce mixture over chicken and vegetables. Sprinkle cheese on top and bake in the preheated oven until the casserole is bubbly and the cheese is golden brown, 30 to 45 minutes.

2 boneless skinless chicken breasts, cooked and broken into thin strips (or leftover turkey)
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup mayonnaise
2 tablespoons lemon juice
1/2-1 teaspoon curry powder, to taste (we like a mix of mild and madras curry)
1 (10 ounce) package frozen broccoli florets, cooked al dente
1/4 cup torn breadcrumbs
2 tablespoons melted butter
1/2 cup shredded cheddar cheese (or more!)
freshly cooked rice, to serve

Steps:

  • Preheat oven to 350 degrees F.
  • Butter a 1 1/2-quart baking dish.
  • Combine cream of chicken soup, mayonnaise, lemon juice, and curry powder in a small bowl.
  • Arrange broccoli in a single layer in the buttered dish, reserving a few florets for the top.
  • Cover with chicken strips.
  • Pour soup mixture evenly over chicken and broccoli.
  • Sprinkle with bread crumbs and melted butter, dot with a few broccoli florets, and sprinkle cheese over the top.

Steps:

  • Preheat oven to 350F. Gather all your ingredients. Pull meat from chicken and rough-chop or shred. Steam the broccoli in the microwave per the package directions, till tender-crisp (drain excess liquid). With a whisk, mix the soup, sour cream, and lemon juice in a bowl.
  • Spray a casserole dish with non-stick spray. Lay the broccoli and chicken at bottom of dish.
  • Pour the soup and sour cream mixture on top.
  • Sprinkle the seasonings on top. Blend well.

My mother grew up with a mother who was a Cordon Bleu chef. Her mom (my Granny) loved elevated casseroles and elegance-infused one-pot meals. My mother took this passion with her into her own military family kitchen. My mom is a natural wizard of good flavor and she made this classic recipe her own. What makes this truly a family tradition is the topping of crushed graham crackers instead of standard crackers. The sweetness with the curry is everything! This is my favorite recipe of hers and it always felt like home when she made it, no matter where we were in the world. She made it famous when my dad was a TAC (Training, Advising, Counseling) officer at West Point military academy. She would make a mountain of her chicken divan and the cadets would come over, eat a wheelbarrow of it and fall asleep on the floor. That's why this recipe is now known amongst our family and friends as "Cadet Dinner." Proud to say, our son who is now an active F-16 pilot, calls this one of his favorite dishes, too-so the tradition continues!

2 tablespoons plus 1/2 teaspoon olive oil, plus more for greasing or nonstick cooking spray
4 large or 6 small skinless, boneless chicken breasts (about 3 pounds total), thawed if frozen and patted dry
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter, plus 3 more tablespoons melted
8 ounces cremini mushrooms, stemmed and diced
One 20-ounce bag frozen broccoli florets, thawed, drained and chopped into bite-size pieces
Two 10.75-ounce cans cream of chicken soup
1 cup mayonnaise
3/4 cup cooking sherry
1/4 cup lemon juice
3 tablespoons curry powder
1 1/2 cups shredded Cheddar
1 cup graham cracker crumbs
1 tablespoon dried parsley
3 cups your favorite cooked rice, for serving

Steps:

  • Preheat the oven to 375 degrees F. Using a little olive oil or cooking spray, coat a 9-by-13-inch baking dish for easy release after baking.
  • Heat the 2 tablespoons olive oil in a large skillet (at least 12 inches in diameter, with a lid) over medium-high heat. Season both sides of each breast with salt and pepper. Once the oil shimmers, place the chicken breasts into the hot skillet all tucked in next to each other (like socks in a drawer!). Brown the first side for about 6 minutes. Flip each chicken breast to the other side for additional browning, another 6 minutes. Add the 1 tablespoon butter to the skillet, pop on the lid and turn the heat down to medium low. Leave it alone for 3 minutes. Make sure the internal temperature of each chicken breast is 165 degrees F, then remove to a plate and let them rest for a minimum of 5 minutes. Set aside.
  • Heat the remaining 1/2 teaspoon olive oil in a small skillet over medium heat. Cook the mushrooms, stirring continuously, until they are a light brown, 3 to 5 minutes. Remove to a plate and set aside.
  • Cut the chicken into bite-size pieces and transfer to a large bowl (at least 6 quarts in size). Add the mushrooms, broccoli, both cans of soup, mayonnaise, sherry, lemon juice and curry powder. Mix together thoroughly, then transfer to your prepared baking dish. Evenly sprinkle the cheese on top and set aside.
  • Combine the graham crackers with the parsley and melted butter in a small bowl. Sprinkle the crumbs evenly over the cheese.
  • Place the casserole on a sheet pan and bake in the oven until the top is browned and the casserole is bubbly, 35 to 40 minutes. Serve over your favorite cooked rice.

My Scratch Made Chicken Divan is not your mother's Chicken Divan. Nope, this is an updated, slimmed down version that still packs in the flavor. No canned soups, sour cream and half the butter of others. Dinner's ready in 30 minutes!

2 lbs chicken breast (chopped)
1/2 tsp salt
1/2 tsp black pepper
4 tbsp all purpose flour (separated)
2 tbsp olive oil (separated)
1 lb broccoli florets
2 1/2 cups chicken stock
2 tbsp butter
1 shallot (diced)
2 tsp Worcestershire sauce
1/2 cup dry sherry
3/4 cup half and half
1/4 cup Parmesan cheese (plus 2 tbsp)
1/4 cup Panko breadcrumbs
1 lemon (zest only (optional))

Steps:

  • Slice chicken breast meat into bite size pieces. Season with salt and pepper. Dust with 2 tablespoons flour and set aside.
  • Over medium high heat in a large skillet add 1 tablespoon of olive oil and brown the broccoli slightly, cooking for 3 minutes. Add 1/2 cup chicken broth and cover. Cook for 2 minutes. Remove from pan and set aside.
  • Add the other tablespoon of oil to the skillet and brown the chicken pieces over medium high heat. Cook for 5 minutes.
  • Place chicken in a 13x9" baking dish seasoned with cooking spray. Sprinkle broccoli on top of chicken.
  • In same skillet add the butter and over medium heat sauté the shallot for a minute. Sprinkle remaining 2 tablespoons of flour in pan and stir to cook. Add the Worcestershire sauce, sherry, chicken stock and half and half. Stir and reduce for several minutes until thickened. Stir in Parmesan cheese and pour over chicken and broccoli.
  • Sprinkle Panko breadcrumbs and more cheese (optional) if you like on top. Broil for 3-5 minutes until top is golden brown and bubbly. Serve with grated lemon zest over top (optional).

2 (10 ounce) packages of chopped frozen broccoli
10 1/2 ounces cream of chicken soup (do not add water)
2/3 cup mayonnaise (or Miracle Whip)
1/3 cup evaporated milk
1/2 cup shredded cheddar cheese
1 teaspoon lemon juice
1/2 teaspoon curry powder
1 lb egg noodles

Steps:

  • Preheat oven to 350 degrees.
  • Cut the chicken into small pieces and cook however you'd like. I usually just cook it stove-top in a cast iron skillet.
  • Place broccoli and chicken into a greased 2-quart baking dish.
  • Mix soup (do not add water), mayo, milk, cheese, lemon juice, and curry power in a small bowl and pour over the chicken and broccoli.
  • Cover the baking dish and place in the oven.
  • Bake at 350 degrees for 45 minutes or until thoroughly heated. If you prefer to pre-cook the broccoli (microwave or stove-top), the casserole should only take about 30 minutes to bake.
  • While the casserole bakes, cook egg noodles according to package directions.

2 cups fresh broccoli florets (, steamed)

2 teaspoons lemon juice
1 teaspoon curry powder (, or more, to taste)

Steps:

  • Cook rice according to package instructions.
  • Meanwhile, season the chicken on both sides with salt and pepper and cook in a hot skillet until no longer pink, flipping once. Allow the chicken to rest for 5 minutes before chopping into pieces.
  • Spoon the cooked rice into a 9x13'' pan or similar size casserole dish. Layer cook chicken and steamed broccoli on top of the rice, followed by steamed broccoli pieces.
