- Preheat a grill to medium high and brush the grates with vegetable oil. Toss the scallops with the olive oil and curry powder in a large bowl; season with salt and pepper. Thread the scallops, cherry tomatoes and squash onto eight 10-inch skewers.
- Combine the melted butter and ginger in a small bowl. Grill the kebabs, covered, turning once, until marked and cooked through, 5 to 7 minutes. Remove from the grill and brush with the ginger butter. Sprinkle with the cilantro and serve with lime wedges.

- Heat the olive oil in a medium Dutch oven or heavy pot over medium heat. Add the leeks, carrots and potatoes. Season with 1 teaspoon salt. Cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes. Add the garlic, ginger, curry and cayenne. Cook, stirring, until the mixture is sizzling, about 1 minute. Stir in the coconut milk, vegetable broth and 4 cups water. Add the lime zest. Bring the soup to a rarpid simmer and cook until reduced slightly and the vegetables are almost tender, about 10 minutes.
- Add the cauliflower and chickpeas. Continue to simmer rapidly until the vegetables are very tender and the soup is thick and flavorful, about 20 minutes more. Remove the lime zest. Season with salt and additional cayenne as needed. Stir in the lime juice and cilantro and serve with lime wedges.

- In a large soup kettle or Dutch oven, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; reserve drippings. Saute onions in drippings until tender. SCALLOP CHOWDER

- Gather the ingredients.
- In a large stockpot, cook the bacon until crisp; remove from the pan, drain on paper towels, crumble, and set aside.
- In the drippings, place the scallops and cook for 3 to 4 minutes (8 to 9 minutes for sea scallops) until opaque. Remove the scallops from the pot and set aside.
- In the drippings in the pot, add the onion, potatoes, and celery and cook for 3 to 4 minutes. Add the fish stock and bring to a boil; reduce the heat, cover, and simmer for 8 to 10 minutes, until the potatoes are tender.
- In a medium bowl, combine the flour, marjoram, pepper, and milk and mix with wire whisk until blended. Add to the pot along with the drained corn and bring to a simmer. Cook over medium heat for 12 minutes, stirring often until the soup has thickened and the vegetables are tender.
- Add the cooked scallops and simmer for 3 to 4 minutes until the scallops are thoroughly heated.
- Ladle into bowls and sprinkle the cooked bacon on top. Serve and enjoy.

- Melt butter, add onion and cook gently until softened.
- Add flour and curry powder, mix well.
- Gradually add milk and mayonnaise, stirring continuously.

CURRY SEAFOOD CHOWDER

- In a large pot, melt butter and add the onion and celery. Cook until soft, stirring occasionally.
- Add sweet potatoes. Add enough of the chicken broth to cover the vegetables, and bring to a boil. Cook until the sweet potatoes are just barely soft, about 10 minutes.
- Add your curry powder and seafood. Add just enough chicken broth to cover everything again, and give 'er a quick stir. Cook until the fish starts to flake, about 10 minutes.
- Add the cream and milk, give a stir and bring to simmer. Cook until the sweet potatoes are completely soft, about another 10 minutes.
- Leave on simmer until immediately before serving, you want to serve this HOT! Serve with rolls or (my personal preference for curry) naan!

- One option for this recipe is to start with a sous vide your scallops. You can check this recipe on how to sous vide scallops.
- If you're not going to sous vide them, skip this step and just ensure that you fully cook your scallops when searing them later in the recipe.
- Add oil to a skillet and saute the onions and peppers for about 5 minutes or until the onions are translucent.
- Add in ginger paste, fish sauce, curry paste, chili garlic sauce, coconut milk, juice of 3 limes, and lime zest. Season with salt and pepper to taste.
- Simmer for about 7 minutes. In a separate pan, sear your sous vide scallop for 1-2 minutes until a nice golden sear emerges.
- In a bowl, spoon the curry over a bed of jasmine rice and top with the scallops.

- Melt butter in 3-quart saucepan over low heat.
- Saute' celery and onion until tender.
- Add cayenne pepper, thyme, marjoram and flour or baking mix and stir until smooth.
- Add milk and condensed soup and stir until piping hot.

- I usually halve the shrimp and then cut one half in half and leave the other half whole.
