8 or more ears fresh corn on the cob, or 4 1/2 cups frozen whole corn kernels
6 tablespoons unsalted butter
1/2 cup diced sweet yellow pepper
1/2 cup diced sweet red pepper
1/2 cup diced green pepper
2 teaspoons curry powder
Salt and freshly ground pepper to taste
1/2 cup heavy cream

Steps:

  • If using fresh corn, shuck the ears and discard the husks and corn silk. Bring enough water to a boil to cover the corn cobs when they are added. Drop the corn into the water. When the water returns to a boil, cover and remove from the heat. Let stand five minutes and no longer. Drain the corn and let cool.
  • Cut and scrape the corn from the cobs. There should be about four and one-half cups.
  • Heat four tablespoons of the butter in a skillet and add the yellow, red and green peppers. Cook, stirring, about one minute. Sprinkle with the curry powder and cook, stirring, about 30 seconds. Add the corn (if using frozen corn, it should also be added now) and the salt and pepper to taste. Stir in the remaining two tablespoons of butter and the cream. Bring to a simmer, stirring. Serve hot.

Traditionally used in Japanese and Korean cooking, shishitos are small, thin-skinned green peppers that have become increasingly popular in the United States. 6 ounces shishito peppers, stemmed and cut crosswise into 1/4-inch slices, or green bell peppers, stemmed and diced
1 large jalapeño, seeds and ribs removed, diced

Steps:

  • In a small bowl, whisk 2 tablespoons olive oil with the lime juice, cumin and 3/4 teaspoon salt. Stir in the red onion and garlic and set aside until ready to use. (Do this step first so the onions and garlic have time to mellow slightly in the dressing.)

1 tablespoon olive oil
1 tablespoon butter
2/3 cup finely chopped scallions

Freshly ground pepper to taste
1/4 teaspoon finely minced garlic

Steps:

  • Core and vein the peppers. Cut the flesh into very thin strips about 1 1/2 inches in length. There should be about 2 cups.
  • Set aside. Scrape the kernels from the corn. There should be about one cup.
  • Set aside.
  • Heat the oil and butter in a skillet and add the scallions, peppers and corn. Sprinkle with cumin, salt, pepper and garlic. Cook, shaking the skillet and stirring, about 1 1/2 minutes.

1/3 cup mayonnaise

  • Combine oil, curry powder and garlic in small skillet.
  • Stir over medium-low heat until fragrant, about 5 minutes.

  • Grill or bbq peppers until charred and blackened on all sides.

  • Grill or bbq until brown and tender, about 4 minutes per side.
  • Cool slightly.
  • Cut into ½ inch pieces.
  • Boil corn until tender, drain well.

  • Pour curry mixture over and toss to coat (can be prepared up to 6 hours ahead).

1 large onion , finely chopped
2 crushed garlic cloves
1 red or green chilli , chopped
1 carrot , peeled and finely chopped

11/2 tbsp mild or medium curry paste
1 chicken or vegetable stock cube
50g red lentils
400ml coconut milk
800ml boiling water
250g frozen sweetcorn
halved soft-boiled egg
coriander leaves
green chilli slices

Steps:

  • Heat the rapeseed oil in a large pan. Add the onion and cook for 8-10 mins until soft. Add the garlic cloves, red or green chilli, carrot and celery. Cook for 2 mins, then add the ground turmeric, mild or medium curry paste, chicken or vegetable stock cube and lentils. After 30 secs, pour in the coconut milk and 800ml boiling water. Cover and simmer for 15 mins. Add the sweetcorn, cover and cook for 3 mins. Leave the soup chunky or part-blend. Season to taste. It's an intense, rich side dish for roast chicken, pork or a full-flavored fish like salmon or mackerel. If it's not corn season, substitute frozen corn and shave a minute or two off the cooking time. In either case this dish comes together in a flash.

4 ounces/2 packed cups whole shishito peppers

1/2 cup dry white wine
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper

Steps:
