EASY CHICKEN BACON RECIPE WITH CHEESE
You won't find a chicken recipe easier than this easy chicken bacon recipe with cheese.

- Preheat oven to 350. In a 2 quart dish, place thawed chicken breasts. Top with cheese and bacon. Sprinkle with garlic salt. Bake, uncovered, for approximately 40 minutes, depending on the thickness of your chicken breasts. The cook time will vary a large amount according to how thick the chicken breasts are and whether or not they are frozen. If you cook them from frozen, I would recommend allowing 1.5 - 2 hours of bake time. I would recommend using a Meat Thermometer to make sure the chicken is an internal temperature of 160-165.

- In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
- Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
- Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

- Rub seasoning mix on all sides of chicken.
- Let stand 15 minutes.
- Wrap 2 slices of bacon around each chicken breast.
- Fasten with toothpicks.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with olive oil, then sprinkle 3 pinches bread crumbs across the bottom.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 11 minutes. Drain bacon slices on paper towels.
- Filet chicken breasts 90% of the way through and open like a hot dog bun. Spread 2 tablespoons chopped Parmesan cheese on one side of each breast. Top each with a bacon slice and 1 1/2 tablespoons shredded Parmesan.
- Close the breasts. Dip in beaten egg, then in bread crumbs. Place in the prepared baking dish. Sprinkle remaining shredded Cheddar over top.
- Cook in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Steps:
- Fry bacon until crisp.
- Drain and crumble; set aside.
- Pound chicken breasts to flatten to 1/4-inch and season with salt and pepper.
- This will speed up the cooking process.
- In a large heavy non-stick skillet, (or non-stick spray, or olive oil) over medium-high heat, brown chicken breasts on both sides, approximately 4 minutes on each side.
- Remove chicken from the skillet and set aside.
- Into the pan, over medium heat, add the sour cream, cream cheese, curry and garlic powders.
- Stirring to loosen all the flavors and juices from the pan and incorporating them into the cream sauce.
- Cook for five minutes or until all the cream cheese has melted and sauce is smooth and thick.
- Return the chicken to pan.
- Cover and continue to cook for another 7- 10 minutes or until chicken is tender and cooked.
- Remove from heat; toss in crumbled bacon and chives.
