- Top with vanilla ice cream, to "cut the sweetness," of course.
PEACH COBBLER
I found this peach cobbler recipe on the internet from the Salt Lick Restaurant in Austin, TX. Everyone loves this recipe so much I have to make a double batch! Feel free to cut back on the sugar. Everyone has and the peach cobbler still comes out perfect. :D Personally, I always use two bags of frozen peaches instead of canned.

- Preheat the oven to 350°F.
- Place the butter in the baking dish and then place the dish in the oven to melt the butter while the oven is preheating.
- Remove the melted butter from the oven after a few minutes and set it aside.
- Peel and slice the peaches into quarters, and then halve the quartered peach slices. (If using canned peaches, use a colander to drain the peach juice before slicing them).
- In a medium-sized bowl, mix the ingredients for the peach filling: peaches, brown sugar, cinnamon, nutmeg, and ginger. (I mixed the peach cobbler filling in my Instant Pot inner pot with the lid off and the 'keep warm' setting on.)
- Add the cornstarch to the cold water and stir until smooth.
- Pour the cornstarch mixture into the peach mixture.
- Stir the peach mixture to combine the ingredients and then set aside.
- In a second medium-sized bowl, whisk the ingredients for the cobbler batter: Bisquick, milk, sugar, and vanilla.
- Pour the Bisquick mixture over the melted butter in the baking pan.
- Then, pour the peaches into the Bisquick mixture (the dough will rise around the peaches as it bakes).
- Bake at 350 degrees F for 50-60 minutes in the conventional oven. Bake at 350 degrees F for 35-45 minutes if using the Instant Pot Omni Plus oven. Watch the cobbler while baking, and bake until the cobbler dough is golden brown.
- To test if the cobbler is done, insert a toothpick into the center of the cobbler dough. If it comes out clean, then it is done.

- For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.

- For the filling: Spray a 7-inch round cake pan with nonstick cooking spray.
- Toss together the peach slices, granulated sugar, brown sugar, cornstarch, cinnamon, salt and lemon juice in the insert of a 6- or 8-quart Instant Pot®. Set to sauté (see Cook's Note), bring mixture to a simmer and cook, stirring frequently, until thick and glossy, 2 to 3 minutes. Carefully remove the insert and spoon the filling into the prepared pan. Rinse out the insert and set back in the pot with the machine's trivet. Pour in 1 cup water.
- For the dough: Whisk together the flour, granulated sugar, baking powder, cinnamon and salt in a large bowl. Work the butter cubes into the dry mixture with your fingers until it resembles coarse meal. Add the milk and vanilla and stir just until moistened to make a lumpy dough. Drop pieces of dough on top of the filling.
- Cover the pan with aluminum foil. Tear off a second piece of foil, about 2 feet long, and fold 3 times lengthwise into a sling for the pan. Set the cobbler in the center of the sling, pick up both sides of the sling to lift the pan and lower onto the trivet in the pot. Fold over the sides of the sling so it fits in the pot. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 25 minutes.
- After the pressure cook cycle is complete, turn off the heat and let the steam release naturally for 10 minutes. After 10 minutes, follow the manufacturer's guide for steam release and allow any residual steam to air out. Be careful of any remaining steam and unlock and remove the lid and carefully use the foil sling to lift out the cobbler and set it on a cooling rack. Remove the foil and let the cobbler cool slightly before serving with ice cream.

- Heat the oven to 375ºF.
- In a large bowl add the peaches, bourbon, 1/4 cup sugar, cornstarch, and cinnamon and mix well to coat the peaches evenly; set aside.
- Prepare the dumplings: Into a bowl sift together the flour, 1/2 cup sugar, baking powder, and salt. Cut 12 tablespoons (1 1/2 sticks) butter into small pieces. Add it to the flour mixture and cut it in with a pastry blender or your hands until the mixture looks like coarse bread crumbs. Pour in the cream and mix just until the dough comes together. Drop the dough by tablespoonfuls over the warm peaches. There can be gaps, the dough will puff up and spread out as it bakes. Brush the top with some heavy cream and sprinkle with some sugar; put it into the oven on a baking sheet to catch any drips. Cook for 40 to 45 minutes until the top is browned and the fruit is bubbling.

- 2. Place butter into a pyrex baking dish (or similar). Place into oven while it preheats, and take out once melted.

- 1. Preheat over to 350* and lightly spray a 7.5 x 11 inch casserole pan or a 9x9 in. square pan.
- 2. In a medium pot add peaches and juice, 1/2 stick butter. Heat till it comes to a boil then remove from heat.
- 3. In a medium bowl add flour, sugar, salt and mix. Now add milk and vanilla and stir to combine. Pour into baking dish then pour hot peach mixture over that. Pour the 1/2 stick melted butter on top. Bake for 10 minutes then I like to sprinkle a couple pinches of sugar on top and return to oven. Bake another 10 minutes then start checking it. It takes 20-30 minutes total, depending on your oven.

- Combine peaches, 1 cup of the sugar and water in a saucepan and mix well.
