These spicy burgers are full of flavor and smell amazing. They stand on their own, but onions or roasted peppers give them even more of a kick! Ground chicken also works great if you want to substitute the turkey.

TURKEY BURGERS WITH SALSA

Turkey Burgers With Salsa image

This is one of our family's favorites, and it's pretty healthy, too. I usually double the recipe because it reheats beautifully. I haven't tried to freeze the burgers, but I don't know why that wouldn't work.

Provided by Knitting Granny

Categories     Poultry

Time 25m

Yield 4 serving(s)

Number Of Ingredients 12

1 1/4 lbs ground turkey
2 tablespoons cornmeal
2 (3 ounce) cans chopped green chilies, divided
1 tablespoon lime juice, fresh is best but bottled will work
1 egg whites or 1 egg
3 teaspoons cumin, divided
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 tablespoon canola oil
1 cup frozen whole kernel corn or 1 (14 ounce) can whole kernel corn, well drained
1 (14 ounce) can crushed tomatoes or 14 ounces diced tomatoes

Steps:

  • In a large bowl and using your hands mix together the ground turkey, cornmeal, 1 can of the green chilis, lime juice, egg white (or egg), 2 teaspoons cumin, chili powder, salt and pepper.
  • Form turkey mixture into 4 or 5 patties.
  • Heat canola oil in a large fry pan, or if making a double recipe an electric griddle works great.
  • Fry patties about 3 to 5 minutes on each side or until no longer pink in the middle. If making a double batch, as patties are cooked, keep warm in a 150 degree oven on a heat-proof plate.
  • Meanwhile, in a small sauce pan, combine the crushed tomatoes, corn, 1 can chopped green chilis and 1 teaspoons cumin.
  • Heat the "salsa" until bubbly and thoroughly hot.
  • Serve patties with salsa spooned over the top.

JERK TURKEY BURGER

  • Mash half of 1 avocado with a fork in a medium bowl until smooth (reserve remaining half for topping burger). Add Worcestershire, garlic powder, cumin, 3 Tbsp. mayonnaise, 2 tsp. Sriracha, and 1½ tsp. salt. Grate half of the onion (as in, half of the half, or one-quarter of the whole) on the medium holes of a box grater into bowl. Mix with a fork to combine. Add turkey and mix thoroughly with clean hands until mixture is homogeneous (it will feel very wet and soft, which is okay).
  • Drizzle 1 Tbsp. oil on a large plate. Using oiled hands, form turkey mixture into 4 balls, place on plate, and press down into patties 4–4½" across (they’ll shrink as they cook). Chill, uncovered, at least 10 minutes and up to 2 hours (this step will help keep them firm). If chilling for more than 2 hours, cover with plastic and chill up to 2 days.
  • Meanwhile, stir remaining ½ cup mayonnaise and 2 tsp. Sriracha in a small bowl and season with a pinch of salt.
