Sweet, tart, and fresh flavours collide in this refreshing healthy smoothie recipe. Pineapple, cucumber, and mint (plus more) blend together to make a quick breakfast or snack with no added sugar.

2 heaping cups (10 oz) pineapple, frozen or fresh
1 heaping cup (7 oz) English cucumber, sliced
1 cup (packed) fresh baby spinach
1 small sweet apple (like Gala), cored and chopped
10-15 mint leaves (and stems), depending on leaf size and preferred mintiness *(see first note)
1 cup cold water
4-6 ice cubes, if using fresh pineapple

Steps:

  • Place all the ingredients in a high-powered blender and blend until smooth.
  • Once blended, taste and adjust according to preferences such as adding more mint for a stronger mint flavour or pineapple and/or apple for additional sweetness.
  • Best served immediately.

Give a warm welcome to this cool smoothie. Mint has traditionally had a role in welcoming guests throughout history, and by many different cultures. The ancient Greeks rubbed mint leaves on the dining tables to greet guests, mint tea is offered to guests in the Middle East and many cultures boil the leaves to freshen the air. This is also the recipe to say goodbye - to stomach problems - mint has a soothing effect on the digestive tract, relieving symptoms of indigestion, cucumber too is high in fibre, also good for digestive health and pineapple contains a digesting enzyme that is unique to pineapples, Bromelain. Bromelain is know to be good for brain health, also, when you are cooking one of our delicious meat recipes, the meat can be tenderized with pineapple because the Bromelain breaks down the meat proteins. Cucumbers are cool too, they are mainly water, 95% in fact, making them ideal for hydration. Cucumbers contain polyphenols called lignans which are considered helpful in lowering the risk of breast, ovarian and prostate cancers. Be prepared to be bowled over by this smoothie!

100 g cucumbers, roughly chopped
1 tablespoon chia seeds
15 ml maple syrup
50 g pineapple, cut into chunks
1 cup mint leaf
62 1/2 ml yoghurt

Steps:

  • Puree cucumber, yoghurt, mint leaves, and maple syrup in a blender. Cut the fresh Pineapple in half, cut the pineapple into chunks and use the halves as bowls.
  • Transfer to the pineapple bowl, add chia seeds, and chill for about an hour.
  • Top with fresh pineapple chunks.

  • Place the cucumber, mint, apple, honey, and avocado in a blender or food processor and blend until just combined.
  • Add in the ice and continue to blend until the mixture is smooth.
  • Serve immediately.
