CUCUMBER-MINT WATER
Little things can make a dinner party a success, like serving a refreshing flavored water. This cucumber-mint sipper is a breeze to make in the blender. Chill and then strain before serving (letting the liquid sit with the cucumber-mint mash for as long as possible helps build flavor). It's also a perfect base for a cocktail; let your guests add gin or vodka to taste.

Steps:
- Blend the cucumbers, sugar, lemon juice, mint, salt and 4 cups cold water in a blender until as smooth as possible (a fair amount of solids will remain). (If all the ingredients do not fit in your blender, use half the water to puree, transfer the puree to a larger container, then stir in the remaining water.) Refrigerate to chill, at least 1 hour.
- Before serving, strain the cucumber-mint water through a fine strainer. Use the bottom of a ladle or wooden spoon to help push the liquid through the mesh. Discard the solids. Serve over ice. Add gin or vodka to taste if using.
TOMATO CUCUMBER SALAD WITH MINT
This is a refreshing summer salad. Perfect for a picnic or barbeque. I usually serve it with a spicy flank steak and potatoes.

- In a large bowl, combine vinegar, sugar, and salt. Mix in cucumbers, and marinate 1 hour, stirring occasionally.
- Gently toss tomatoes, onion, mint, and olive oil with the marinated cucumbers. Season with salt and pepper.

- Puree sour cream, basil, mint, scallion, and water in a blender. Add cucumber. Pulse until just combined but still slightly chunky.
- Stir in lemon juice and hot sauce, and season with salt. Chill soup at least 3 hours (soup is best served the same day). Top each serving with thin cucumber slices if desired.

bon Appetite had this and several other summer soda recipes. I make most of my own fizzy drinks from fruit in my yard. I like this veggie alternative. I will be trying this with stevia instead.

Steps:
- Bring water and sugar to a boil to make simple syrup.
- Keep 1.5 cups in a small saucepan and remove pan from heat.
- Add cucumber slices (reserving 12 for garnish), 24 mint leaves, and basil.
- Cover and let steep for 30 minutes.
- Strain cucumber-herb syrup into a jar, pressing on solids in strainer.
- Fill a 12-oz. glass with ice cubes. Add 2 tablespoons syrup and top with soda water (about 1/2 cup). Stir to combine. Garnish with cucumber slice and sprig of mint. Repeat to make 11 more sodas.

- Make the syrup. Heat sugar and water in a small saucepan over medium heat, stirring occasionally, until sugar is dissolved and mixture is boiling. Remove pan from heat and add cucumber slices, mint leaves and basil leaves. Cover and let steep for 30 minutes. Strain syrup into a jar, pressing solids into strainer to release all of their flavor. Discard solids. Store syrup in the refrigerator for up to a month.
- Mix the drink. For each serving, mix 2 Tbsp. syrup with 1/2 cup soda water in a glass filled with ice, stirring to combine. Garnish with mint leaves and cucumber slices.
