SMOKED SALMON CUCUMBER BITES



Smoked Salmon Cucumber Bites image

2 teaspoons toasted sesame seeds
2 teaspoons poppy seeds
1 teaspoon dried onion flakes
1 teaspoon garlic flakes
1/2 teaspoon coarsely ground black pepper
1 1/2 teaspoons flaked sea salt
1/4 cup sour cream
1 tablespoon minced fresh dill, plus whole sprigs, for garnish
1 lemon, zested
1 large English cucumber
One 4-ounce package sliced smoked salmon

Steps:

  • In a small bowl, mix together the sesame seeds, poppy seeds, onion flakes, garlic flakes, black pepper and 1/2 teaspoon sea salt; set aside.
  • In a separate bowl, mix together the sour cream, minced dill, lemon zest and remaining 1 teaspoon sea salt; set aside.
  • With a peeler, stripe the cucumber, running the peeler from one tip to the other, leaving a small strip of skin in between each peel. Using a mandoline or knife, slice the cucumber on the bias into 1/4-inch slices. Slice the salmon into 2-inch strips.
  • Lay out the cucumber slices on a platter. Place about 1/2 teaspoon of the sour cream mixture on each cucumber. Ripple or fold the strips of smoked salmon and place on top of the sour cream mixture. Garnish with dill sprigs and sprinkle with the seasoning mix before serving.

2 tsp. poppy seeds
2 tsp. toasted sesame seeds
1 tsp. dried minced garlic
1 tsp. dried onion flakes
1/2 tsp. flaky sea salt
1/2 tsp. black pepper
1/4 c. sour cream
1 tbsp. chopped fresh dill, plus small sprigs for topping
1/2 large English cucumber
1 4-ounce package sliced smoked salmon, cut into 2-inch strips

Steps:

  • Make the everything seasoning: Mix the poppy seeds, sesame seeds, dried minced garlic, onion flakes, salt and pepper in a small bowl.
  • Mix the sour cream and dill in a separate small bowl.
  • Peel the cucumber with a vegetable peeler, leaving a small strip of skin between each peel like a stripe. Slice the cucumber ¼ inch thick on the bias (you'll have about 16 slices).
  • Spread about ½ teaspoon of the sour cream mixture on each cucumber slice. Fold the smoked salmon pieces and place on top of the sour cream mixture. Sprinkle with the everything seasoning and garnish with dill sprigs.

Smoked Salmon with Creamy Cucumbers image

1 English cucumber
Kosher salt
2 tablespoons sour cream
2 tablespoons chopped fresh dill
8 ounces smoked Irish salmon
Toasted pumpernickel bread, for serving

Steps:

  • Thinly slice the cucumber on a mandoline and place in a colander over a bowl. Season with 1/2 teaspoon salt and allow the cucumbers to sit for 5 minutes. Squeeze out the excess water and place the cucumbers in a clean medium bowl. Add the sour cream, dill and 1/4 teaspoon salt and stir with a rubber spatula to combine.
  • Lay the smoked salmon on one half of a platter lightly, so there is movement to the plate, leaving open the other half of the platter. Pile the cucumber mixture on a quarter of the platter or spoon into a bowl that fits on the platter. Serve the toasted pumpernickel bread on the other quarter of the platter.

4 ounces cream cheese, softened
2 tablespoons chopped fresh dill
1 teaspoon lemon zest
½ teaspoon fresh lemon juice
¼ teaspoon ground black pepper
4 ounces smoked salmon, cut into 2-inch strips
24 small fresh dill sprigs

Steps:

  • Trim ends from cucumbers and cut crosswise into 24 (3/4-inch-thick) rounds. Scoop a 1/2-inch-deep depression from one side of each round with a small melon-baller, forming little cups. Drain cucumbers, cup sides down, on paper towels for 15 minutes.
  • Beat cream cheese, chopped dill, lemon zest, lemon juice, and black pepper together in a bowl. Spoon 1/2 teaspoon cheese mixture into each cucumber cup. Top each cup with 1 salmon strip and 1 dill sprig.

1 bunch fresh dill
1/2 cup cream cheese, at room temperature
1 tablespoon capers, drained of all brine
1 lemon, zested, then squeezed
1/2 teaspoon freshly ground black pepper
4 slices pumpernickel bread (The dense, thinly sliced type that comes in a block)
8 ounces smoked salmon

Steps:

  • Stem and mince 3 tablespoons of dill, then reserve the remaining stems for garnish
  • In a food processor, blend cream cheese, capers, lemon zest, lemon juice, black pepper, and minced dill, until smooth. If you don't have a processor, mince capers by hand, then use a fork to blend with the other ingredients.
  • Spread a 1/8-inch layer of cream cheese mixture over pumpernickel slices. Cover cream cheese mixture with a single layer of salmon. Double up where the salmon gets thin.
  • Using the longest, sharpest knife available, trim all 4 four edges, then slice into long triangles and round the top edges.
  • Select the best looking dill sprigs and bare the stems after 1 inch from dill top. Place canapes on a serving plate, then insert a 1-inch dill sprig "carrot top" in each canape between the salmon and the bread.
