2/3 cup Extra Virgin Olive Oil
1/3 cup Lemon Juice
1 Tablespoon Water
1 Clove Garlic (Minced )
2 Teaspoons Fresh Basil (Minced)
1/4 Teaspoon Dried Dill
1/4 Teaspoon Salt
1/8 Teaspoon Black Pepper

Steps:

  • Combine all ingredients in a medium jar with lid, and shake until combined. Taste and season as needed.
  • Enjoy and store remaining dressing in an airtight container in the refrigerator for up to 1 month.

3 tablespoons olive oil
1/2 teaspoon whole cumin seeds, lightly crushed with the side of a knife
1 medium shallot, finely chopped
2 tablespoons lemon juice
Kosher salt
4 medium vine-ripe tomatoes, chopped
1 seedless cucumber, chopped
1/2 cup chopped fresh cilantro

Steps:

  • Heat the olive oil in a small skillet over medium heat. Add the cumin and cook, stirring, until fragrant, about 2 minutes. Pour the cumin oil into a large bowl and add the shallot, lemon juice and 1/2 teaspoon salt; cool slightly. Add the tomatoes, cucumber and cilantro and serve immediately.

My mom sent me this recipe a few weeks ago and just in time as I had a large quantity of fresh tomatoes to use, and I was running out of ideas. It is simple and delicious. The salad serves two, but could easily be doubled.

1 medium tomatoes, cut into 6 slices
1/2 cup chopped cucumber
1/8 teaspoon salt
1 1/2 teaspoons fresh basil or 1 1/2 teaspoons parsley, chopped fine
1 teaspoon grated lemon rind
1 teaspoon sugar
1 tablespoon balsamic vinegar (no other)

Steps:

  • Place tomato on two plates and put cucumber on top. Sprinkle with salt.
  • Mix remaining ingredients in a small bowl with a whisk.
  • Drizzle over tomato and cucumber.
  • Let stand 5 minutes before serving.
  • You might try other fresh herbs to see what else might work for your taste.

1/3 cup olive oil or 1/3 cup canola oil
2 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon basil
1/4 teaspoon pepper
3 medium tomatoes, chopped
1 cucumber, seeded and cubed
1 small green pepper, chopped
1/4 cup thinly sliced onion
4 ounces mozzarella cheese, cubed

Steps:

  • Combine first eight ingredients in jar with tight fitting lid and shake well.
  • In large bowl, combine tomatoes, cucumber, green pepper, onions.
  • Drizzle with dressing and toss.
  • Cover and refrigerate at least 15 mins but longer is better.
  • Stir in cheese before serving.

  • Make the vinaigrette. In the bowl of a food processor (or in a blender) add the garlic, Dijon mustard, honey, red wine vinegar and salt. Pulse until the garlic is finely minced and everything is well blended. Add the basil and pulse until combined. (If the basil isn’t cooperating, add some of the extra virgin olive oil to help things along.) With the motor running, drizzle in the olive oil, and blend until the mixture is emulsified. (If you’ve overdone it with the basil and the mixture looks too thick to dress a salad, add a little more olive oil to thin it out.) Set aside (can be stored in an airtight container in the refrigerator for 4 to 5 days).
  • Make the salad. In a medium mixing bowl, combine the sliced cucumbers and cherry tomatoes. Season with a pinch of salt. Add a few tablespoons of vinaigrette and toss until the tomatoes and cucumbers are well coated. Add more vinaigrette, a little at a time, until it’s dressed to your liking. Add the crumbled feta, and stir until well distributed. Taste to see if it needs more salt (this will depend on your feta). Serve immediately.
