Time 55m

Number Of Ingredients 19

14-16 ounce block of tofu
2 tablespoons of olive oil
3 tablespoons of balsamic vinegar
2 tablespoons of water
2 tablespoons of maple syrup
2 cloves of garlic minced
1/4 teaspoon of salt
1/4 cup of lemon juice
1/4 cup olive oil
1 garlic clove, minced
1 teaspoon of dijon mustard
1 teaspoon of maple syrup or honey
2 tablespoons of fresh herbs 4-6 large basil leaves, very finely diced
Freshly ground salt and black pepper, to taste
2 large heads of romaine (about 8 loosely packed cups of lettuce) chopped
⅔ cup of diced cucumber
⅔ cup of cherry tomatoes, halved
1 avocado, diced or thinly sliced
¼ cup of sliced almonds

Steps:

  • Press your tofu (see my full guide HERE on pressing tofu) and cut into your desired shape. I like larger cubes when serving in a salad but really anything works well.
  • Make the marinade for the tofu by whisking together the lemon juice, olive oil, balsamic, water, maple syrup, garlic, and salt in a shallow dish. Put the tofu in and shake gently to coat the tofu in the marinade. Let sit for 15-30 minutes.
  • To cook the tofu, you can bake it in the oven at 400 degrees for 15 minutes, flipping halfway. OR you can pan fry it, which is my favorite, by removing it from the marinade and putting it in a large skillet over medium heat. Flip every few minutes and cook until it's lightly browned on all sides.
  • Whisk together all of the ingredients in a medium bowl and set aside until ready to use.
  • Make the salad by layering in a large bowl the lettuce, cucumber, tomatoes, avocado and almonds. Pour on the dressing and toss gently to combine. Top with the tofu and any additional toppings.
  • Serve and ENJOY!
  • If making for meal prep, I suggest leaving off the avocado and simply add it right before serving or it will go brown.

STIR-FRIED CUCUMBER WITH TOFU

Stir-Fried Cucumber With Tofu image

This vegan take on the cucumber and pork stir-fry offers the perfect level of acid to balance out the spice. Cooked quickly over high heat, cucumbers become juicy, with a lovely silky texture that is still crisp to the bite. Salting the cucumbers before stir-frying is essential, as it draws out moisture and allows for more of the garlicky umami flavors of the sauce to be soaked up. The tofu delivers heartiness, while the hint of Sichuan chile flakes takes this dish to another level.

Time 30m

Yield 4 servings

Number Of Ingredients 13

2 large cucumbers (about 1 1/2 pounds), peeled in alternating vertical stripes, seeded, then cut on the bias 1/4-inch thick
Kosher salt
3 tablespoons vegetable oil
1 (14-ounce) package extra-firm tofu, crumbled
1 garlic clove, finely chopped
Finely chopped scallions, toasted white sesame seeds and steamed rice, for serving (optional)
Freshly ground white pepper
2 tablespoons soy sauce or tamari
2 tablespoons rice vinegar
1 teaspoon sesame oil
1 teaspoon cornstarch
1/2 teaspoon red-pepper flakes
1/2 teaspoon Sichuan chile flakes

Steps:

  • Place cucumbers in a bowl, add 1 teaspoon salt, and gently massage the pieces. (This helps to release some of the water.) Let stand for 10 to 15 minutes until the cucumbers are slightly wet and pliable to the touch.
  • Prepare the sauce: In a small bowl, whisk together all the ingredients with 1 tablespoon water.
  • Prepare the stir-fry: Heat a wok or a large skillet over high. When smoking hot, add 2 tablespoons vegetable oil. Add the tofu, season generously with salt and pepper, and stir-fry for 3 to 4 minutes until the tofu is partly golden. Transfer to a bowl and set aside. Wipe the wok or skillet clean, and keep off the heat until the cucumbers are ready.
  • Drain the cucumbers and rinse under cold running water. Drain well, then pat dry with a clean kitchen towel.
  • Heat the wok or skillet back over high heat. When hot, add the remaining 1 tablespoon vegetable oil. Add the garlic and allow to sizzle for just 10 seconds, then toss in the cucumbers, stir-frying for 2 minutes. Return the tofu to the wok and toss well.
  • Add the sauce and cook, stirring, for 30 seconds to 1 minute, until the cucumbers look glossy. Taste and season well with salt and white pepper. Top with scallions and sesame seeds, and serve with rice, if using.

GLAZED TOFU WITH CUCUMBER SALAD

Glazed Tofu with Cucumber Salad image

Provided by Food Network

Categories     dessert

Time 2h40m

Yield 4 servings

Number Of Ingredients 13

3 cups high quality tamari
1 tablespoon raw cane sugar
1 package silken tofu, cut into 8 slices
1/4 cup miso sauce
1 large cucumber, julienned
2 tablespoons pickled ginger, julienned
1 teaspoon yuzu or lemon juice
2 teaspoons mirin
Miso sauce, recipe follows
1/4 cup light miso
1/3 cup high grade tamari
1 tablespoon mirin
1 tablespoon sake

Steps:

  • Place 2 1/2 cups of the tamari and the raw sugar in the insert of a non-reactive double boiler. Reserve the remaining 1/2-cup of tamari. Fill the bottom of the boiler with 3-inches of water. Assemble the boiler and place over a medium-low flame. Cook the tamari mixture until it reduces to make a light syrup. This should take 60 to 90 minutes and yield 1/4 cup of tamari syrup.
  • Meanwhile, trim the tofu slices to make each a perfect rectangle. Pour 1/4 cup of the reserved tamari onto a plate. Place the tofu slices over the tamari, then pour the remaining 1/4-cup of tamari over the tofu. Be careful to pour the tamari so each slice is completely covered with tamari. Marinate 1 hour.
  • Place the tofu slices onto a cookie sheet or baking pan and baste with a thin coating of the tamari syrup. Place under a preheated broiler 4-inches from the heat and broil 2 to 4 minutes, or until the tofu jiggles like hot custard. Use the leftover tamari marinade to baste the tofu as it cooks so the tofu doesn't dry out. Toss the cucumber and pickled ginger in a small mixing bowl with the yuzu and mirin. Arrange 2 tofu slices per plate and place the cucumber salad against the tofu slices. Sauce the tofu with the miso sauce and any remaining tamari syrup.
  • Combine ingredients in the cup of an immersion blender and blend until smooth. Thin with water if desired.

SPINACH AND TOFU SALAD

Spinach and Tofu Salad image

Here's a spinach salad that takes cues from Japan and is hearty enough to be a main course. Try to find crisp, medium curly-leaf spinach, which will hold up when dressed. (Baby spinach leaves will surely wilt.) Other sturdy greens - such as mizuna, curly endive or Napa cabbage - can stand in for spinach, or you can combine several kinds of greens.

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 24

1/2 pound firm tofu
1/4 cup soy sauce
1 tablespoon toasted sesame oil
1 tablespoon rice wine vinegar
1 tablespoon sake
1 tablespoon brown sugar
1 teaspoon grated ginger
Pinch of cayenne
8 ounces medium spinach leaves
2 tablespoons lime or lemon juice
2 teaspoons brown sugar
1 tablespoon toasted sesame oil
3 tablespoons vegetable oil
1 tablespoon soy sauce
2 tablespoons white or red miso
1/2 teaspoon grated garlic (from about 2 to 3 cloves)
1 teaspoon grated ginger (from a peeled 1-inch piece)
1 cup chopped cucumber
1 cup thinly sliced daikon radish
1 cup frozen edamame, thawed
1 teaspoon sesame seeds
2 tablespoons pumpkin seeds
2 tablespoons roasted peanuts
Pinch of kosher salt or flaky sea salt

Steps:

  • Heat oven to 375 degrees. Slice tofu into 1-inch-by-2-inch pieces about 1/4-inch thick and place in a deep bowl or on a platter.
  • Make the marinade: In a medium bowl, whisk together soy sauce, sesame oil, vinegar, sake, brown sugar, ginger and cayenne. Pour marinade over tofu slices to coat well. Leave in marinade for at least 15 minutes. (You may marinate the tofu up to 24 hours in advance.)
  • While the tofu marinates, pick over spinach leaves and remove any tough stems. Swish the spinach in a deep bowl of cold water. Lift leaves from water into a colander. If you see any sand in the water, repeat up to 3 times, using fresh water each time. Drain well and dry spinach, then wrap in a kitchen towel and refrigerate until ready to use. (You may wash the spinach up to 24 hours in advance.)
  • Make the dressing: In a small bowl, whisk together lime juice, brown sugar, sesame oil, vegetable oil, soy sauce, miso, garlic and ginger.
  • Line a baking sheet with parchment paper, and arrange the tofu pieces in a single layer. Spoon remaining marinade over tofu. Bake, uncovered, for 15 to 20 minutes, until slightly crisped. Remove and leave at room temperature.
  • To make the salad, arrange spinach in a low, wide salad bowl or on a deep platter. Scatter cucumber, daikon and edamame over spinach, then sprinkle with sesame seeds, pumpkin seeds and peanuts. Tuck slices of tofu here and there.
  • Sprinkle a pinch of salt over everything, then drizzle salad with dressing and serve.
