SWISS PORK STEAK
I always have pork in the freezer. One day I was hungry for swiss steak and was out of beef, I fixed it with pork instead of beef. True comfort food served over mashed potatoes or rice yummmmm. We really like it..hope you do too!!

Steps:
- Wash pork to remove bone crumbs. Pat and partially dry steaks with paper towel,but leave moist enough for flour mixture to adhere to meat.
- Combine salt,pepper and garlic powder with flour.
- Push steak into flour mixture with hands making sure to coat both sides well. Let sit while oil is heating in pan.
- Add oil to pan and brown steak on both sides,remove from pan when golden and let drain on paper towel.
- Add green pepper,onion and celery to pan and lightly brown.
- Add tomatoes,beef stock,worcestershire (and drained mushrooms if using) to skilet and boil for about three minutes.
- Reduce heat to a simmer and return pork steak to pan.
- Cook slow until meat is tender and broth has thickened. May be thickened with cornstarch and water if you like.
- Serve over mashed potatoes or rice.
- I also have made this for my picky eater by adding a can of cream of mushroom soup.

EASY SWISS STEAK
This cube steak recipe is a hearty dinner just right for a cool evening.

Steps:
- Heat oil over medium-high heat in a deep 10" or 12" skillet. Add onions and carrots, and sauté until onions are tender. Stir in garlic, and cook 1-2 minutes longer.
- Lightly sprinkle both sides of cube steaks with salt and pepper or seasoned salt. Place meat on top of onions and carrots. Pour tomatoes over the meat.
- Stir tomato paste, beef broth, and oregano together in a small bowl with a fork. Pour over meat.
- Reduce heat to medium and simmer for 1 1/2 to 2 hours. Cover skillet mostly with a lid, making it a little offset so steam can escape and the sauce can reduce but tomato sauce doesn't splatter all over your stovetop.
- Serve over rice, potatoes, or noodles.
SWISS CUBED STEAK CROCKPOT
I was skeptical on this one since I was going to be gone so long the day I made it but it was fantastic, even cooking 10 hours. I served with egg noodles and green beans.

- 1. Oooh this is so easy. Just lay your sliced onions at the bottom of the crock pot. Lay cube steaks on top of the onions.
- 2. Pour both cans of tomatoes on top. Then sprinkle your fresh garlic or garlic powder, pepper and Lipton Onion soup mix on top of that. Cook 8 to 10 hours on low. When you are ready to dish up, you may want to drain the meat and take the juice with 1 tsp. of cornstarch and heat up in a pan to make a thicker gravy, then add meat back to the pan.
- 3. Serve over noodles, rice or potatoes. No salt needed to this dish.

- In a large nonstick skillet, brown cube steaks on both sides in oil over medium-high heat; remove and set aside. In the same skillet, saute the onion, celery and garlic for 3-4 minutes or until tender. Add the tomatoes, tomato sauce and bouillon. Return steaks to the pan. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 to 1-3/4 hours or until meat is tender. , Combine cornstarch and water until smooth; stir into tomato mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.

MUSHROOM CUBED STEAKS
Once a year my dh buys cubed steaks at the "West Side Market" with an Entertainment coupon just before it expires. I usually make a swiss steak type dish with them, but this looked good to me, since I like mushrooms. I put it here for safe keeping. It did turn out tasty, though the broth needs to be thickened in the end I thought.

- In a medium skillet, over low heat, cook onion in butter. Add mushrooms, saute 5 minutes over medium heat. Add juice and beef broth over high heat.

- Combine flour and pepper and coat steaks in a large skillet. Melt butter and cook steaks 3-4 minutes until browned. Pour mushroom sauce over steaks and simmer until sauce thickens slightly for 3-4 minutes.
