GRILLED CUBE STEAK ROLLUPS

Grilled Cube Steak Rollups image

Provided by Amanda Formaro

Categories     Dinner

Number Of Ingredients 14

4-5 pieces cube steaks
marinade (recipe below)
2 oz cream cheese (softened)
4-5 pieces bacon (raw)
1 sprig fresh parsley (minced, (stem too))
1/2 cup olive oil
1/4 cup Worcestershire sauce
6 tablespoons soy sauce
1/4 cup minced garlic
1/2 medium onion (chopped)
1 tablespoon pepper
1 tablespoon crushed dried rosemary
3 tablespoons steak dust or your favorite steak seasoning
3 tablespoons A1 steak sauce

Steps:

  • Put all ingredients into a blender and puree. Pour over meat in a glass dish or gallon zipper bag and place in the refrigerator 2-24 hours. Can be marinated up to three days for tough cuts of meat. This made enough marinade for 8 cube steaks, so I put four in the freezer in marinade.
  • Marinate steaks in the refrigerator for a minimum of 2 hours, up to 24. Mine marinated for 24.
  • Preheat your grill on high with the lid closed. Remove the steaks from the refrigerator and take them out of the marinade. Place them on paper towels to drain.
  • Warm the softened cream cheese in the microwave for a few seconds. You want the cream cheese to be very soft, similar to a runny cake frosting. Combine the cream cheese with the minced parsley. Spread thin layer of cream cheese over one side of steak.
  • Beginning with short end roll up the steak.
  • Spirally wrap a piece of bacon around steak and secure with one or two toothpicks. I didn't have enough toothpicks so I used two long skewers. I definitely recommend the toothpicks so you can turn the steaks individually.
  • Turn the burners on your grill down to medium and grill roll ups on one side for several minutes to sear the meat. Turn and sear the other side. Turn the heat down to low and continue to grill with the lid closed and turn every five minutes until done. Mine took about 25 minutes total.

SLOW COOKER STUFFED BEEF ROLLS

Slow Cooker Stuffed Beef Rolls image

These beef rolls cook conveniently in your crock pot. Made with cube steak, they're an easy meal and an American version of rouladen.

Provided by Judith Hannemann

Categories     beef     Comfort Foods     Everyday Meals     Slow Cooker

Time 6h30m

Number Of Ingredients 12

6 large beef round cube steaks*
2 cups thickly sliced fresh mushrooms
2 cups soft bread crumbs
4 slices crisp-cooked bacon (diced)
1/4 cup finely chopped onion
1/4 cup finely chopped mushrooms
1/4 cup grated carrots
1 tsp salt
1/4 tsp pepper
1 tbs butter
2 pkgs brown gravy mix
1 1/4 cups water

Steps:

  • *Thin beef roundsteaks labeled for "bracciole" can be substituted
  • **Equivalent of ready-made gravy may be substituted, but leave out the 1 1/4 cups water.
  • Saute chopped onion, finely chopped mushrooms & carrots in the 1 tbs of butter in a skillet over medium-low heat.
  • Combine bread crumbs, bacon, salt & pepper in a medium bowl. Add the sauteed vegetables, including the butter from the pan. Mix well.
  • Place about 1/4 cup of stuffing on each cube steak and roll up from the narrow end, securing with a toothpick if desired. If there is stuffing left over, cover and set aside.
  • Place beef rolls in slow cooker, cover and cook on HI 3-4 hrs, LOW 6-8 hours.
  • If using the brown gravy mix, at the end of the cook time--or whenever beef rolls are done--remove rolls from slow cooker.
  • Mix the brown gravy mix with the water in a small bowl or measuring cup, making sure there's no lumps. Turn the slow cooker to HI and add the thickly-sliced mushrooms and gravy/water mixture. Stir until thickened and replace the beef rolls in the cooker, cover and cook for 15 more minutes.
  • If using ready-prepared gravy, simply pour it over the beef rolls, cover the crock pot, set it to HI and cook for 15 minutes or until gravy is heated.
  • If there is reserved stuffing, reheat in a microwave on HI and serve beef rolls over the stuffing.
  • Makes 6 beef rolls.

CUBE STEAK ROLL-UPS

Cube Steak Roll-Ups image

This is an easy, quick way to prepare cube steaks. Cube steak is an inexpensive cut of beef, which I've used in the past for salisbury steak. I wanted to cook these steaks but not in a heavy gravy, so this is how lightened them up. You could also substitute flank steak if you can't find cube steaks. DH raved over these and thought I had spent much more time preparing than I actually did. Note: If you cannot find Dale's Steak Seasoning, a good substitute is whisking together 1 tbs. soy sauce and 1 tbs. Worcestershire sauce.

Provided by MarthaStewartWanabe

Categories     Steak

Time 25m

Yield 2 serving(s)

Number Of Ingredients 7

2 cube steaks (approximately 4-inch x 4-inch sized pieces)
2 tablespoons Dale's Steak Seasoning, reduced sodium blend (or 1 tbs. soy sauce and 1 tbs. Worcestershire sauce)
1/4 teaspoon black pepper, freshly ground
1/2 cup Baby Spinach, whole leaves
1/4 cup basil, whole leaves
1/4 cup red bell pepper, sliced thin
1/4 cup goat cheese, crumbled

Steps:

  • Preheat broiler to medium heat or move oven rack to second position under the broiler (depending on what type of oven you have).
  • Pound cube steaks to 1/2-inch thickness (if they aren't already thin enough). Drizzle Dale's Steak Seasoning evenly over both sides of each steak (a little goes a long way) and season with black pepper.
  • Layer baby spinach leaves, basil leaves and sliced red bell pepper atop each steak. For easier rolling, make sure pepper slices are arranged parallel to the direction you plan to roll the steaks. Sprinkle with goat cheese atop these layers to 1/2-inch from outside edge of each steak.
  • Roll each steak up (like a jelly roll), being careful not to spill out the stuffing, and secure open ends with toothpicks.
  • With toothpick-secured sides up, broil steaks for five minutes. Turn over and broil for another five minutes or until desired doneness.
  • Carefully remove toothpicks. This may be served sliced cross-wise and arranged on each plate or whole for each person to slice his/her own.

GRILLED CUBE STEAK ROLL UPS

Easy and very yummy. Cook time totally depends on your grill so please don't skewer me (no pun intended) on how long this takes you to grill it to desired doneness on your grill! :)

Time 30m

Number Of Ingredients 4

4 to 6 medium beef cube steaks
8 oz cream cheese, room temperature
1/4 c moore's steak sauce marinade
4 to 6 slice bacon

Steps:

  • 1. Marinate steaks in Moore's just a few minutes as they will fall apart if you leave them more than a few minutes. I usually pour the sauce in a gallon zip lock add the steaks and lay flat on counter then flip the bag to finish.
  • 2. spread thin layer of cream cheese on one side of each steak.
  • 3. roll up jellyroll style and wrap with one peice of bacon and secure with toothpicks
  • 4. grill over medium heat doing quarter turns frequently to ensure even cooking
