Arroz Cubano: Easy Cuban Rice image

Arroz Cubano, or Cuban rice, is a popular dish in the island nation. A bed of white rice, ladled with tomato sauce, is then topped with a fried egg.

1 cup sofrito
3​ tablespoons Spanish virgin olive oil
2 cups uncooked rice
3 to 4 cups water
Salt, to taste
4 large eggs

Steps:

  • Make the sofrito. While the sofrito is simmering, make the rice . Pour approximately 2 to 3 tablespoons of olive oil into a medium-size saucepan and place over medium-high heat. Add the rice into the pan and coat the rice with the oil. Pour enough water to cover the rice into the pan and bring to a boil. Add salt to taste. Then, reduce the heat, loosely cover and allow to simmer until rice is cooked, about 20 minutes.
  • Pour 1/4-inch olive oil into a small frying pan and place over medium heat. Fry the eggs one at a time in the olive oil, sprinkling with a dash of salt.
  • Place a scoop of rice on each plate and make a depression in the center. Ladle some of the sofrito into the depression. Carefully top with a fried egg. Serve immediately with a baguette.

Crema de vie is a Cuban eggnog recipe and great way to spice things up at Christmas.

Simple syrup
1 cup granulated white sugar
1 cup water
Crema de Vie
1 can sweetened condensed milk
1 can evaporated milk
6 egg yolks from pasteurized eggs
1 cup dark rum or less if you would like a lighter drink
1 tsp Pure vanilla extract not artificial
cinnamon, ground and/or sticks for garnish

Steps:

  • Simple syrup Over medium-low heat put equal parts of water and white sugar into a saucepan and stir.Once the sugar has dissolved into the water remove from the heat and let cool. Crema de Vie Cocktail In a blender, gently mix eggs.Add evaporated milk and condensed milk and gently blend until smooth. Add simple syrup, vanilla and rum and gently blend until mixed through. Garnish with ground cinnamon and/or a cinnamon stick. (optional)

8 hard-boiled eggs
1 cup shredded sharp cheddar cheese, divided (4 oz.)
3 tablespoons nonfat milk
1/2 teaspoon salt (optional)
1 dash pepper
1/2 cup chopped onion
1/2 cup chopped sweet green pepper
1 tablespoon butter
2 (8 ounce) cans no-salt-added tomato sauce
hot cooked rice (optional)
parsley sprig (optional)

Steps:

  • Preheat oven to 350°F.
  • Cut eggs in half lengthwise.
  • Remove yolks and set whites aside.
  • In small bowl, mash yolks with fork.
  • Stir in 1/2 cup of cheese, milk, salt, and pepper until well blended.
  • Fill each half egg with one heaping Tablespoon yolk mixture.
  • Place in 8x8x2-inch baking dish.
  • In medium saucepan over medium heat, cook onion and pepper in butter until crisp-tender, about 3 minutes.
  • Stir in tomato sauce and bring to boiling.
  • Pour over eggs.
  • Sprinkle with remaining cheese.
  • Bake until hot and bubbly and cheese is melted, about 15 minutes.
  • Serve over rice and garnish with parsley, if desired.

  • Add the sliced onions and the juice from the oranges and limes to a large plastic bag to marinate the pork in. Pierce the pork all over with a sharp knife and stuff the cloves of smashed garlic into the holes. Mix all the dry ingredients for the pork together and rub it all over the outside of the pork. Place to pork in the bag with the marinade and refrigerate. Marinate the pork for anywhere from 1 to 3 hours.
  • Remove the pork from the refrigerator. Don't throw the marinade out! Heat the olive oil in large dutch oven. When the oil is hot, sear the pork on all sides.
