Gatorbek's Cuban Pork, Black Beans, and Yellow Rice image

The cumin, lime, and cilantro combined with the kick of red pepper makes this a great, Cuban-style dish. Serve with some crusty bread, and you're good to go!

Categories     Pork

Time 30m

Yield 4 serving(s)

Number Of Ingredients 16

2 (15 1/2 ounce) cans black beans, NOT drained
1/4 cup white onion, finely diced
2 teaspoons cumin
2 tablespoons fresh oregano, chopped (or sub 1 tsp dried if needed)
3 tablespoons fresh cilantro, chopped (only fresh or frozen, not dried!)
2 fresh garlic cloves, minced
1 tablespoon fresh lime juice
1 lb pork, cut into 1 inch pieces (I buy pre-cut stew pork)
3 tablespoons olive oil
1/4 cup flour
2 teaspoons cumin
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper (to taste)
1 teaspoon onion powder
1 teaspoon garlic powder
1 (16 ounce) package yellow rice (I prefer Vigo)

Steps:

  • Prepare yellow rice according to package directions.
  • To prepare the black beans, combine the first seven ingredients in a medium saucepan.
  • Bring just to a boil, then reduce heat to simmer on a back burner, stirring occasionally.
  • Meanwhile, heat olive oil in a heavy skillet over medium-high heat.
  • Combine remaining dry ingredients (flour, cumin, oregano, cayenne, onion powder, and garlic powder) in a 1 gallon zipper bag.
  • Add pork to bag and shake vigorously to coat.
  • Remove pork from bag and add to hot oil.
  • Brown on all sides, stirring until done.
  • Remove pork to a plate and turn off heat to skillet.
  • Pour black bean mixture into skillet to absorb pork drippings, stir gently until combined.
  • To serve, put a scoop of yellow rice on each plate, topped with a generous ladle of black beans.
  • Top with pork and garnish with lime wedge and sprig of cilantro.
  • Serve with crusty bread.

CUBAN BEEF STEW

The traditional dish uses a good amount of olive oil and meat with a lot of marbling. This version is lower in fat, but is true to the spirit of the recipe. Although it does take a fair amount of time, it is not difficult to make.

POTAJE DE GARBANZOS (CUBAN GARBANZO BEAN STEW)

Potaje de Garbanzos (Cuban Garbanzo Bean Stew) image

This is my take on a super-comforting Cuban meal my dad has made for years. It is a great way to use pantry ingredients and can be served with white rice for an even heartier option. Don't be afraid to make a big batch -- the sweet and smoky flavors get better the next day!

Provided by Gabriela Rodiles

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 12

2 tablespoons olive oil
1 medium yellow onion, medium diced
1 green pepper, medium diced
1 packet (1 1/2 teaspoons) Sazón seasoning mix with saffron
Kosher salt and freshly ground black pepper
3 cloves garlic, minced
2 tablespoons tomato paste
2 tablespoons vino seco (see Cook's Note) or sherry cooking wine
Two 15-ounce cans garbanzo beans, drained and rinsed
2 large russet potatoes, peeled and large diced
6 ounces Spanish chorizo, casing removed and chorizo cut into small chunks
White rice, for serving, optional

Steps:

  • Heat the oil in a medium heavy pot or Dutch oven over medium-high heat. Add the onion, green pepper, Sazón seasoning, 1 1/2 teaspoons salt and a few cracks of freshly ground black pepper. Cook, stirring and scraping the bottom of the pot occasionally, until the onions are soft, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Add the tomato paste and cook, stirring occasionally, until slightly darker in color and thickened, about 1 minute. Add the vino seco to deglaze the pan, scraping any browned bits with a wooden spoon.
  • Add the garbanzo beans, potatoes, chorizo and 5 cups of water. Turn the heat up to high and bring to a boil. Reduce the heat to low, then cover the pot and simmer until the potatoes are tender and the chickpeas are very soft, about 20 minutes. Once the potatoes have softened, use the back of a wooden spoon to crush some of them against the side of the pot to thicken the stew. Serve the stew over hot rice, if desired.

CUBAN BLACK BEANS AND RICE

Cuban Black Beans and Rice image

Cuban black beans and rice is a simple vegan recipe that's full of flavor and cheap to make. A hearty and delicious plant-based meal!

Provided by Melissa

Categories     Main dish

Time 1h35m

Number Of Ingredients 14

½ pound (225 grams) dried black beans, soaked overnight or all day
1 litre (4 ¼ cups) water
½ green pepper, finely diced, divided
½ medium onion, finely diced, divided
4 cloves of garlic, minced
1 bay leaf
2 tablespoons olive oil
½ teaspoon cumin
1 teaspoon dried oregano
¾ teaspoon smoked paprika
½ teaspoons salt, plus more to taste
1 tablespoon sherry vinegar (or red wine vinegar or apple cider vinegar)
½ tablespoon sugar
Long-grain rice, to serve

Steps:

  • Drain and rinse the soaked beans and put them in a pot along with the water, half the diced green pepper, ¼ of the diced onion, 2 cloves of the minced garlic and the bay leaf.
  • Bring to a boil then reduce the heat to the lowest setting and cover the pot with the lid. Simmer for 45 minutes.
  • After about 35 minutes start preparing the sofrito. In a pan heat the oil over medium heat and add the remaining onion. Sautee until tender then add the remaining green pepper. When the green pepper is tender add the remaining garlic and sautee for about a minute more or until the garlic is cooked. Add the cumin, oregano and paprika and fry, stirring continuously, for 30 seconds or until the spices are fragrant.
  • Add this sofrito to the beans along with the salt, cover and simmer for 30 more minutes.
  • You can start boiling water to cook the rice at this point.
  • Finally, add the vinegar and sugar to the beans and simmer for 15 more minutes. If the beans seem to have a lot of water you can simmer them uncovered this time, otherwise cover them again. You can optionally transfer a portion of the beans to a blender and stir the blended beans back into the pot (I didn't).
  • Taste and add salt as necessary (I added an additional ½ teaspoon). Serve the rice into bowls with the black beans on top.

1 whole flank steak, about 2 1/2 pounds
2 medium carrots, cut into chunks
2 medium celery stalks, cut into chunks
2 medium onions, one peeled and quartered, divided
5 medium cloves garlic, minced (about 5 teaspoons), divided
1 teaspoon dried oregano, divided
2 bay leaves
2 1/2 teaspoons ground cumin, divided
Kosher salt
2 tablespoons olive oil
1 red bell pepper, cut into 1/4-inch strips
1 green bell pepper, cut into 1/4-inch strips
2 cups reserved braising liquid, plus additional as needed
1 (14.5-ounce) can whole tomatoes with juice, crushed by hand
2 1/2 tablespoons tomato paste
1 cup frozen peas, thawed
1/3 cup pimiento-stuffed Spanish olives, drained and sliced
For the Rice:
2 tablespoons vegetable oil
1/2 teaspoon whole cumin seeds
1 cup uncooked rice
2 cups chicken broth
For the Black Beans And "Crust":
1 (14.5-ounce) can black beans, drained and rinsed
1 tablespoon juice from 1 lime
6 (8-inch) flour tortillas
1 cup pepper jack cheese

Steps:

  • Place flank steak, carrots, celery, quartered onion, 2 cloves garlic,1/2 teaspoon oregano, bay leaves, 1 teaspoon cumin and 1/2 teaspoon salt in a large stock pot. Cover with water, stir and bring to a boil. Reduce heat and simmer, covered, until the meat is tender, 1 1/2 to 2 hours. Remove the meat from the stock and allow to cool. Strain stock, discard vegetables and bay leaves and reserve broth for later use. Cut meat into 2-inch cubes. Shred it by hand or use two forks to pull meat into strings and reserve.
  • Adjust oven rack to lower-middle position and preheat oven to 375°F.
  • Slice remaining onion into 1/4-inch strips. Heat olive oil in a large skillet over medium heat. When oil is shimmering, add red and green peppers, sliced onion and a 1/2 teaspoon salt and cook until nearly softened, about 8 minutes. Add remaining garlic and continue cooking until tender, another 2 to 3 minutes. Stir in 2 cups of reserved broth, along with tomatoes, tomato paste, remaining 1/2 teaspoon oregano, 1 teaspoon of cumin, peas and olives. Simmer for 10 minutes. Add beef to pan, taste and adjust seasonings if necessary. Return to a simmer. Remove from heat, and cover to keep warm.
  • While sauce is cooking, heat the vegetable oil in a medium saucepan over a medium-high heat. Add cumin seeds and cook until they're fragrant (about a minute). Add the rice and cook, stirring to coat for a minute before adding chicken broth. Bring to a boil and reduce heat to low. Cover and simmer for 15 to 20 minutes. Allow to rest for 5 minutes, season with salt and fluff with a fork.
  • Place beans in a medium bowl. Add lime juice and remaining 1/2 teaspoon cumin. Season with salt, and mash lightly with a fork or muddler.
  • Spray an 8- by 8-inch baking dish with cooking spray. Line the bottom with 3 overlapping tortillas to form a bottom crust. Spread with black beans, followed by layers of beef mixture and rice. Top with another overlapping layer of 3 tortillas. Scatter with cheese and transfer to the oven to cook until casserole is warmed through and cheese is bubbly and browned, 30 to 35 minutes. Remove from oven and let rest 5 minutes before serving.
