4 medium tomatoes
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground red pepper
6 tablespoons butter, melted
1 cup soft, fresh breadcrumbs
1 cup freshly grated Parmesan cheese

Steps:

  • Preheat broiler with oven rack 5 1/2 inches from heat. Cut tomatoes in half. Spread cut sides with mustard; sprinkle with salt, black pepper, and red pepper.
  • Place tomato halves on baking sheet. Combine butter, breadcrumbs, and cheese. Spoon crumb mixture on top of each tomato half.
  • Broil 2 minutes or until crumbs are golden brown and tomatoes are thoroughly heated.

  • Toss 2 pounds tomatoes (cut into large chunks) with 3/4 teaspoon kosher salt in a colander set over a bowl; drain 15 minutes. Whisk 2 tablespoons olive oil and 1 tablespoon red wine vinegar into the juices. Toss with the tomatoes and 1/4 cup chopped chives. Rub crusty bread with halved garlic cloves; toast. Serve with the tomatoes.

4 beefsteak tomatoes (or any large)
2 tablespoons extra virgin olive oil
1/2 cup seasoned bread crumbs or 1/2 cup plain breadcrumbs
1/2 cup mixed Italian herbs (such as basil, oregano, thyme, parsley)
8 1/4 teaspoons unsalted butter
salt & freshly ground black pepper

Steps:

  • Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
  • Remove the cores of the tomatoes then cut them in half (horizontally).
  • Place cut side up: then rub Olive oil over cut side (use fingertip).
  • Sprinkle bread crumbs on next.
  • Sprinkle Herb seasonings on and salt/pepper.
  • Then place 1/4 teaspoon of unsalted butter on each half.
  • Broil until tomato is hot completely.
  • ^May add cheese or mushrooms when nearly done, but don't get them to close to burners in oven.

1 tablespoon olive oil
½ teaspoon dried basil leaves

1 clove garlic, minced
salt and ground black pepper to taste
⅓ cup soft bread crumbs
⅓ cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
1 dash balsamic vinegar

Steps:

  • Place an oven rack 6 inches from the top of the oven, preheat the broiler, and and arrange tomato slices on a foil-lined baking sheet.
  • Combine olive oil, basil, oregano, garlic, salt, and pepper in a bowl and brush onto the tops of the tomatoes.
  • Combine bread crumbs, mozzarella cheese, and Parmesan cheese in a small bowl and sprinkle the mixture over the tomatoes.
  • Place under the broiler until topping starts to brown, 3 to 4 minutes, checking frequently to avoid burning.
  • Transfer tomatoes to a plate, drizzle with balsamic vinegar, and serve.

3/4 teaspoon kosher salt
fresh ground black pepper
1 tablespoon extra virgin olive oil
3 tablespoons chopped fresh herbs, such as thyme, rosemary, oregano or 3 tablespoons marjoram
1 tablespoon freshly grated parmesan cheese

Steps:

  • Season tomatoes with the salt and place seed-side down on a rack or paper towel to drain for about 30 minutes. Blot dry with a paper towel.
  • Position an oven rack in the upper part of the oven and preheat the broiler.
  • Line a broiler pan with foil.

1 cup white flour
1 tablespoon onion powder
2 teaspoons garlic granules
1 teaspoon salt
1/2 teaspoon black pepper, ground
1 cup parmesan cheese, grated
1 cup panko breadcrumbs (Japanese breadcrumbs)
12 slices tomatoes, sliced 1/2 inch thick (3 tomatoes)
2 eggs
2 tablespoons Dijon mustard
3 tablespoons olive oil

Steps:

  • Combine flour, onion powder, granulated garlic, salt and pepper.
  • Mix well.
  • In separate bowl combine panko and Parmesan.
  • In third bowl combine eggs and mustard.
  • Take slices of tomato and dip in flour, dust off excess.
  • Then dip in egg mixture, letting excess drip off.
  • Finally dip in parmesan/panko mixture, pressing parmesan mixture onto slices for good coverage.
  • Repeat until all slices are breaded.
  • These should be stored in a single layer dusted lightly with extra crumbs.
  • Heat olive oil in non-stick frying pan, over medium-high heat.
  • Place 3 slices (1 order) in pan, and let cook about 1 1/2- 2 minutes on each side, until just golden brown.
  • Don't flip too soon or parmesan mix will fall off.
  • Serve.

4 large ripe tomatoes
2 cloves garlic, minced
1/4 cup olive oil
1 tablespoon chopped parsley
sea salt
black pepper
12 -20 drops balsamic vinegar, a few per tomato (or more if you like it!)

Steps:

  • Cut the tomatoes in half horizontally.
  • Place them on a baking sheet, skin side up, and broil them for 2 minutes, then turn.
  • You may prefer to line the baking sheet with parchment paper, because the tomatoes will drip some juice.
  • Mix together the garlic, olive oil and parsley and drizzle over the tomatoes.
  • Season with salt and pepper.
  • Place the tomatoes back under the broiler and cook for 6 minutes or until cooked.

3/4 stick unsalted butter, divided
2 medium onions, chopped
2 garlic cloves, finely chopped

1/8 teaspoon ground cloves
1 teaspoon dried thyme
1 tablespoon packed light brown sugar, or to taste
8 (1/4-inch-thick) slices good-quality white sandwich bread such as a pullman loaf

Steps:

  • Preheat oven to 425°F with rack in middle. Butter a 3-quart baking dish (about 13 by 9 by 2 inches).
  • Drain tomatoes, reserving 1 cup juice, then chop.
  • Heat 2 tablespoons butter in a 5- to 6-quart heavy pot over medium-high heat until foam subsides, then cook onions with 1/2 teaspoon salt, stirring occasionally, until golden-brown, about 10 minutes. Add garlic, allspice, and cloves and cook, stirring, 1 minute.
