CRUNCHY POTATOES WITH DILL & ONIONS
Roasties packed with flavour, and they're good for you too... try them with slow-roast lamb

Steps:
- Bring a large pan of salted water to the boil. Add spuds, bring back to the boil, then cook for 3 mins. Drain really well, leave in the colander for 10 mins to steam dry. Toss with the oil, onion and seasoning in a large roasting tin.
- Heat oven to 220C/200C fan/gas 7 and put in the potatoes. Roast for 30 mins, stirring halfway, until golden and crunchy. Stir in the dill and put back in the oven for 5 mins, then serve.

Steps:
- Place the potatoes in a steamer basket, and set in a pan over an inch of boiling water. Cover, and steam for about 10 minutes, until potatoes are tender but not mushy.
- In a small bowl, stir together the butter, dill, garlic, and salt. Transfer the potatoes to a serving bowl, and pour the seasoned butter over them. Toss gently until they are well-coated.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.
- Roast in the preheated oven for 25 minutes. Remove foil and continue to roast until potatoes and onion are browned and edges are crispy, 15 to 30 minutes.

CRISP ONION-ROASTED POTATOES
You may omit the thyme or marjoram and substitute other herbs like oregano. Make them to your liking. This is a high fat recipe you can cut it back by only spraying the potatoes with Pam or other such spray and then sprinkle the herbs over the pottoes coating them. They will still be tasty and much healthier

- Heat milk, water and butter to boiling; stir in contents of both pouches of potatoes; let stand one minute.

This potato dish has always received raves from my guests. The crunch of the onions is wonderful. The blend of seasonings is just right.

- Heat oven to 450F degrees and lightly grease a 13"x9" ovenproof dish.
- Arrange potatoes, overlapping slightly and brush with butter (margarine).
- Sprinkle potatoes with garlic, salt, pepper and thyme.
- In a bowl whisk together the eggs and milk; mix well.
- Mix bread crumbs and Italian seasoning.
- Dip onion rings into the milk and then in the crumbs.
- Pat the crumbs onto the onion rings so they fully cover and adhere to the rings.
- Arrange onion rings in a single layer on top of the potatoes.
- Bake the casserole, turning the onion rings once during baking for about 30-35 minutes, or until the potatoes are cooked and the onion rings are crisp and brown.
